SUPER SEEDY GRANOLA BARS

Super Seedy Granola Bars image

9-ingredient vegan and gluten-free granola bars loaded with 4 kinds of seeds: hemp, sunflower, flax, and chia! So healthy, naturally sweetened, and perfect as an on-the-go snack.

Provided by Minimalist Baker

Categories     Breakfast     Snack

Time 30m

Number Of Ingredients 10

1 1/2 cups rolled oats ((gluten-free for GF eaters))
1/2 cup raw almonds, walnuts, or pecans ((roughly chopped))
1 heaping (seriously) packed cup dates ((pitted // deglet noor or medjool)*)
2 Tbsp chia seeds* ((see note))
2 Tbsp sunflower seeds ((roasted or raw))
2 Tbsp flax seeds ((ground or whole))
2 Tbsp hemp seeds
1/4 cup agave nectar or maple syrup ((or honey if not vegan))
1/4 cup creamy salted natural peanut butter or almond butter
Chocolate chips, dried fruit, other nuts, banana chips, etc.

Steps:

  • Toast your oats and almonds in a 350-degree F (176 C) oven for 13-15 minutes or until slightly golden brown.
  • Process dates in a food processor until small bits remain (about 1 minute). It should form a "dough" like consistency (mine rolled into a ball).
  • Place oats, almonds and dates in a large mixing bowl. Add seeds and set aside.
  • Warm agave and peanut or almond butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix, breaking up the dates to disperse throughout. Use a spoon or your hands to thoroughly mix.
  • Transfer to an 8×8 dish or other small pan lined with plastic wrap or parchment paper so they lift out easily. (Or use 2/3 of a 9×13 // as original recipe is written // adjust if altering batch size)
  • Cover with parchment or plastic wrap and press down with something flat, such as a book, to get them really packed tight. This will help them from being crumbly. Chill in the fridge or freezer for 15-20 minutes to harden.
  • Remove bars from dish and chop into 10 even bars (as original recipe is written // adjust if altering batch size). Store in an airtight container for up to a few days. I kept mine in the freezer to keep them extra fresh, but it isn't necessary.

NO BAKE SUPER SEED GRANOLA BARS

No Bake Super Seed Granola Bars image

Time 4h20m

Yield 12 bars

Number Of Ingredients 8

12 medjool dates (see Note)
1/4 cup smooth peanut butter or almond butter (see Note)
1/4 cup unsweetened apple juice or orange juice
2 Tbsp. honey
1/4 tsp. ground cinnamon
2 1/3 cups Cloud 9 Super Seed Granola Bar Mix (divided)
1/4 cup unsweetened coconut flakes
1/4 cup dried cranberries, coarsely chopped

Steps:

  • Line the bottom and sides of an 8" square pan with plastic wrap and set aside. Place pitted dates, peanut butter (or almond butter), juice, honey and cinnamon in a food processor and pulse until puréed and paste-like. Place date mixture in a medium to large bowl. Add 2 cups of the granola bar mix, coconut and cranberries and mix well to combine. Spoon granola bar mixture into your prepared pan and very tightly pack it in. Pull the plastic wrap over the granola bar mixture to cover then refrigerate at least four hours to firm up. Unwrap the granola bar, lift out of pan and set on a cutting board. Use a sharp knife to cut the granola mixture in half. Now cut each half, widthwise, into 6 bars. Spread the remaining granola mix on a plate. Lightly coat each bar with a little bit of the mix. Individually wrap each bar in plastic wrap and keep refrigerated until ready to enjoy. Refrigerated bars will keep up to a month. Note: Medjool dates are available in our Produce Department. If using almond butter in this recipe and it is overly thick, you may need to add a little more to help these bars hold together. Recipe options: Instead of cranberries, try another dried fruit in these bars, such as blueberries or cherries.

SUPER SEED GRANOLA BAR

Super Seed Granola Bar image

High Protein, all natural ingredients. These are not super sweet. The chia buckwheat groats can be found at Trader Joes or other stores carrying health foods and whole foods. I used a product called Super Seeds Ancient Grains for this recipe. Feel free to play around with it. Also, the almond butter can be swapped for any other kind of nut butter and the honey can be swapped for maple syrup or agave syrup. If you like sweeter bars, consider adding chocolate chips or drizzling melted chocolate on top prior to slicing. It's all about experimenting! Keep these in the fridge, stored in an airtight container.

Categories     Bar Cookie

Time 25m

Yield 12 bars, 12 serving(s)

Number Of Ingredients 10

1 1/2 cups quick cook steel cut oats
3 tablespoons chia buckwheat groats, mixed
1/2 cup almonds, sliced
1/2 cup sunflower seeds
1 scoop eas whey protein powder vanilla
1/4 teaspoon sea salt
3 ounces dates
1/2 cup almond butter
1/3 cup honey
1 1/2 teaspoons vanilla

Steps:

  • Place one oven rack at the topmost oven position and preheat oven to 350*.
  • On a cookie sheet, mix together and spread out the oats, chia buckwheat groats (or super seed ancient grains from Trader Joes), sunflower seeds and sliced almonds. Roast in the preheated oven, on the top rack, for 15 minutes. Check every 5 minutes during this process and stir the mixture around to get even roasting and prevent burning.
  • While the grain mixture is roasting, slice open the dates, discard the pits. Place cleaned dates in a small food processor and process until they form a thick ball.
  • Combine the dates, honey, and almond butter in a large saucepan. Heat on medium to medium high, stirring constantly until a thick sauce is formed. Remove from heat.
  • When the oats are finished, and while they are still warm, pour them into the saucepan with the almond butter/date/honey sauce. The warmth of the oats will help mix them with the sauce more easily. Add the protein powder and the vanilla.
  • Mix all ingredients until all ingredients thoroughly combined. This is a very dry looking mix. Do not add more liquid or it will not bind together in the next step.
  • Spray a square pan 8x8 with nonstick spray. Press the mixture into the pan evenly. Place in Freezer to firm up for 15 minutes.
  • Remove from freezer and slice into 12 even pieces. Enjoy!

SUPERFOOD GRANOLA BARS

Superfood Granola Bars image

These granola bars should be wearing a cape thanks to all of the superfoods they're packed with.

Provided by Food Network Kitchen

Time 3h45m

Yield 20 bars

Number Of Ingredients 15

3 cups old-fashioned rolled oats
2 tablespoons unsalted butter, melted
1/3 cup salted roasted almonds, chopped
1/3 cup roasted pepitas
1/3 cup walnuts, chopped
Nonstick cooking spray, for the pan
1/2 cup packed light brown sugar
6 tablespoons unsalted butter
1/4 cup honey
1 teaspoon vanilla extract
1 teaspoon kosher salt
1/3 cup dried blueberries
1/3 cup dried goji berries
1/3 cup toasted quinoa
2 tablespoons chia seeds

Steps:

  • For the base: Preheat the oven to 350 degrees F.
  • Toss the oats with the butter on a rimmed baking sheet and spread in an even layer. Bake until toasted, 18 to 20 minutes. Let cool completely, then transfer to a large bowl. Stir in the almonds, pepitas and walnuts.
  • For the bars: Line a 9-by-13-inch baking pan with foil, leaving an overhang. Coat the foil with cooking spray.
  • Combine the sugar, butter, honey, vanilla and salt in a medium saucepan. Bring to a boil over medium heat, stirring occasionally; the mixture will bubble and foam. Boil for 30 seconds, then pour over the oat mixture and stir. Let cool slightly, then stir in the blueberries, goji berries, quinoa and chia seeds. Pour the mixture into the prepared pan and press firmly with a rubber spatula to spread in an even layer.
  • Let the bars stand at room temperature until completely cool and firm enough to slice, 1 to 3 hours. Lift out of the pan using the foil overhang and cut into 20 bars. Store in an airtight container at room temperature for up to 5 days.

THE BEST GRANOLA BAR

The Best Granola Bar image

I am always looking for a good granola bar recipe. I have tried so many other recipes, but none of them even come close to being as good as this one. These are so easy to make, and they are great for lunches or just for a snack. One word of caution.....the more you add to the recipe (ex more nuts), the more likely it is to crumble. These bars freeze really well. Hope you enjoy!
