CLASSIC CHRISTMAS SUGAR COOKIE CUTOUTS
If your Christmas season gets so hectic that you only have time to bake one batch of cookies, we suggest that this be the one you make. This is the kind of sugar cookie that generations of bakers have relied on, with a buttery texture and just-right tenderness. The accompanying glaze requires just three ingredients and is a standby that you can just as easily rely on when you need a glaze on other cookie varieties. It sets up nicely and is ideal for decorating, tinting well and spreading easily. The process of making sugar cookie cutouts is as essential to the holidays as opening gifts and singing Christmas songs, and if you can clear some time out on your schedule, it's a relaxing activity, too. Pull out all your favorite cookie cutters, whether they're classic hearts and stars or cute winter characters like reindeer and penguins, and bake up a batch-this recipe yields 60 cookies. When it's time to decorate, you have a blank canvas to indulge your style and creativity. Some bakers like to go all in on color and whimsy, while others prefer more simple and elegant finishing flourishes-it's all up to you. Steps:
- In large bowl, mix 1 1/2 cups powdered sugar, the butter, 1 teaspoon vanilla, almond extract and egg until well blended. Stir in flour, baking soda and cream of tartar. Cover and refrigerate at least 3 hours.
- Heat oven to 375°F. Divide dough in half. On lightly floured surface, roll each half of dough 3/16 inch thick. Cut into assorted shapes with cookie cutters, or cut around patterns traced from storybook illustrations. If cookies are to be hung as decorations, make a hole in each 1/4 inch from top with end of plastic straw. Place on ungreased cookie sheet.
- Bake 7 to 8 minutes or until light brown. Remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
- In medium bowl, beat all frosting ingredients until smooth and spreadable. Tint with food color if desired. Frost and decorate cookies as desired with frosting and colored sugars.

BUSIA'S CUTOUT COOKIES
These cookies are great everyday cookies, not too sweet or buttery. They are usually in special shapes and decorated for different holidays.

Steps:
- Cream butter and sugar. Beat in eggs.
- Dissolve the baking soda in the milk, then add to mixture. Add the vanilla and mix well
- Place salt in with flour and slowly stir into mixture. The dough should not be too sticky and should pull away from the sides of the bowl easily. If the dough is sticky, add a little more flour.
- Form the dough into a roll about a foot long and 2-3 inches in diameter. Roll up in wax paper and put in the refrigerator for 1 hour.
- Remove from refrigerator and let dough come to room temperature. Roll out dough a chunk at a time (one dough log makes about 4 chunks).
- Preheat oven to 350 degrees F (180 degrees C).
- Cut your cookies and decorate or bake plain for 8-10 minutes. Enjoy!

BUNNY CUT-OUT COOKIE BOUQUET
Steps:
- To make the cookies: In a large mixing bowl, combine the sugar cookie dough, bubblegum extract, and 1 1/2 cups flour. Divide the dough in half, form into balls, and cover with plastic wrap. Refrigerate for 1 hour.
- Remove the dough balls from the refrigerator and unwrap. On a lightly floured board, roll the dough out to 1/2-inch thickness. Cut out bunny-shaped cookies with the cookie cutter.
- Place the cookies on an ungreased cookie sheet. Carefully insert the wooden cookie sticks into the cookies, far enough to hold the cookie, but not so far as it comes out the other end. Place the cookie sheet in the refrigerator and chill for 1 hour.
- Preheat the oven to 375 degrees F.
- Bake the chilled cookies for 15 to 18 minutes, or until golden brown. Remove from the oven and cool on the cookie sheet for 5 minutes. Transfer to cooling racks. Allow cookies to cool completely before decorating.
- To decorate: Create the border icing by combining 1/2 pound confectioners¿ sugar with a drop of food coloring, then gradually adding enough water until the mixture is thick but still squeezable. With a piping bag, create a thin border around the perimeter of each cookie. Create the center icing by combining 1 pound confectioners¿ sugar with at least 1/2 cup of water, adding enough to create a thinner consistency. After the border icing has hardened, pipe the center icing onto the middle of the cookie to fill the surface within each cookie. Complete each cookie with a star-shaped dragee for the "eye" and 4 chocolate sprinkles for the "whiskers." Sprinkle generously with sanding sugar.
EASY HOLIDAY CUTOUT COOKIES

- Heat oven to 375°F. In medium bowl, stir cookie mix, flour, softened butter and egg until soft dough forms. Roll dough on floured surface to about 1/4 inch thick. Cut with cookie cutters. Place 1 inch apart on ungreased cookie sheet.
- Bake 7 to 9 minutes or until light golden brown around edges. Cool 1 minute before removing from cookie sheet; cool completely.
- Spread frosting on cooled cookies. Decorate as desired with remaining ingredients.

BEST BUTTER COOKIES (CUTOUTS)
These cookies are one of my many usual cutout cookie recipes for Christmas cookies. Prep time includes chill time for dough. From Land O Lakes.

Steps:
- In a large mixing bowl, beat together butter and sugar. Add in egg and beat well. Beat in orange juice and vanilla.
- Combine flour and baking powder and gradually beat inches.
- Chill dough for about 1 hour.
- After dough has chilled, preheat oven to 400.
- Roll dough on to lightly floured surface to about 1/8-1/4" thick. Cut into desired shapes with cookie cutters. Sprinkle w/ colored sugars, if desired.
- Bake at 400 for 6-9 minutes (depending on cookie size) or until edges just slightly golden.
