This is a very simple, easy to prepare meal that you will most likely be asked to prepare again. The taste, if carefully prepared and not overcooked, is incredible. ENJOY!

1 (16 ounce) package angel hair pasta
¼ cup butter
2 cloves garlic, minced
2 pounds sea scallops, rinsed and patted dry
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons fresh lemon juice
salt and freshly ground black pepper to taste
½ cup heavy cream
1 tablespoon grated Parmesan cheese to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Melt butter in a skillet over medium heat. Stir in the garlic and cook just until fragrant and softened, about 1 minute. Slice any scallops over 3/4-inch thick in half so they'll cook evenly; stir scallops, basil, and parsley into the skillet. Cook and gently stir just until scallops feel slightly firm when pressed with a finger, 2 to 3 minutes. Scallops will become tough and chewy if overcooked. Stir in lemon juice, and season with salt and black pepper. Pour in cream if you like a thicker sauce. Bring the mixture just to a bare simmer.
  • Serve over hot angel hair pasta; sprinkle to taste with Parmesan cheese.

Easy, healthy, and FAST. This is a great weeknight dinner adapted from Woman's Day magazine, although its elegant enough for a dinner party. Just make sure to do your prep work ahead of time, since this comes together quickly. Great served with peas/onions side dish.

1/2 lb angel hair pasta
2 tablespoons extra virgin olive oil
1 lb medium shrimp, peeled and deveined (can be cooked or uncooked, see steps for instructions for each)
2 teaspoons garlic, chopped
1 teaspoon salt
1 teaspoon pepper
1 cup chicken broth (can substitute half with white wine to increase flavor)
1/8 teaspoon crushed red pepper flakes
1 tablespoon lemon peel, grated fresh
1/4 cup lemon juice, squeezed fresh
1/2 cup Italian parsley, chopped
1/3 cup parmesan cheese, grated

Steps:

  • Cook pasta according to package instructions and drain.
  • While pasta cooks, heat one tablespoon of the olive oil in a large skillet over medium-high heat. Add the garlic, shrimp (if using uncooked shrimp), and 1/2 tsp each of salt and pepper. Saute two minutes or until shrimp are barely pink and/or garlic is soft.
  • Add broth and crushed red pepper. Increase heat to high.
  • Add cooked shrimp (if not using uncooked shrimp in step 2).
  • Cook on high heat for 2-3 minutes (just one minute if you used uncooked shrimp earlier), until shrimp are warmed through.
  • Stir in lemon peel and juice.
  • Put the pasta in a serving bowl, add the remaining tablespoon olive oil and 1/2 teaspoon each salt and pepper. Toss to coat.
  • Add the shrimp mixture, parsley, and cheese (gradually so as not to clump up the cheese). Toss to mix and serve immediately.

1 pint cherry tomatoes, halved
Kosher salt
8 ounces angel-hair pasta
8 cups chopped escarole, kale and/or Swiss chard
1 pound medium shrimp, peeled and deveined
1/2 teaspoon red pepper flakes
Freshly ground pepper
1/2 cup fresh basil, chopped
Grated zest and juice of 1/2 lemon

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the greens to the water. Drain and rinse under cold water; transfer to a large bowl.
  • Combine the shrimp, red pepper flakes, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook until golden, about 1 minute. Add the shrimp and cook until pink, about 3 minutes per side. Add the tomatoes and cook, stirring often, until slightly softened, about 2 minutes.
  • Add the shrimp mixture to the bowl with the pasta along with the basil and lemon zest and juice; toss to combine.

1 pound cooked angel hair

shallots
extra virgin olive oil
crushed hot red peppers
1/4 cup vodka
1/2 cup heavy or 1/2 & 1/2
cream
2 Tablespoons butter or oil
for finishing
2 or 3 tablespoons chopped
parsley
freshly ground parmigiano- reggiano cheese

Steps:

  • Pour the tomatos and their liquid into the work bowl of a food processor. Using quick on/off pulses, process the tomatoes just until they are finely chopped (longer will aerate the tomatoes turning them pink) cook pasta, use penne if you prefer. mean while heat olive oil in large skillet over medium heat. Cook shrimp or scallops to just before done. Remove from pan and set side. Cook shallots until tender and transparent. Lower the work bowl with the tomatoes close to the skillet and carefully-they will splatter- slide the tomatoes into the pan. Bring to boil, season lightly with salt and crushed red peppers, and boil 2 minutes. Pour in the vodka, lower the heat so the sauce is at a lively simmer, and simmer until the pasta is ready, and liquid is reduced. Just before the pasta is done, pour in the cream. Add the 2 tablespoons butter, and swirl the skillet to incorporate into sauce. Add shrimp/scallops to sauce to finish cooking. Be sure not to over cook them. If your skillet is large enough to accommodate the sauce and pasta, fish the pasta out of boiling water with a large wire skimmer and drop directly into sauce. If not, drain the pasta, return it to the pot, and pour sauce over. Bring the sauce and pasta to a boil, stirring to coat with sauce. Check the seasoning, add salt and red pepper if needed. Sprinkel with parsley and cheese if desired.

2 tablespoons olive oil
3/4 lb shrimp, peeled and deveined
2 cloves garlic
1/4 cup heavy cream
1 (14 1/2 ounce) can Italian-style diced tomatoes
1/2 cup white wine
1 cup fresh mushrooms, sliced
3 tablespoons fresh parsley
1/2 cup grated parmesan cheese, divided
1 teaspoon dried basil
1/4 teaspoon red pepper flakes
1 (8 ounce) package angel hair pasta

Steps:

  • In a medium skillet over medium high heat, melt butter with the oil, then add the shrimp and garlic.
