8 NO-BAKE OATMEAL ENERGY BALLS
8 simple variations to my favorite no bake oatmeal energy ball recipes that you will love to make and snack on! Full of healthy whole food ingredients and so easy to make.

Steps:
- Add the nut butter and honey and stir to combine well. Add the all of the other ingredients and stir to combine well.
- Refrigerate the mixture for about 30 minutes.
- Use a spoon to scoop about a tablespoon of the cookie ball mixture into your hand. Roll into a ball. Repeat with remaining mixture. This should make about 12 oatmeal energy balls.
- Store the balls covered in the fridge for up to a week, or in the freezer for much longer.
- In a medium bowl, add the peeled banana and mash thoroughly with a fork.
- Add the dry oats and chocolate chips and stir to combine.
- Refrigerate until the mixture holds together, about 30 minutes.
- Use a spoon to scoop about a tablespoon of the cookie ball mixture into your hand. Roll into a ball. Repeat with remaining mixture. This should make about 12 oatmeal energy balls.
- Store the balls covered in the fridge for up to a week, or in the freezer for much longer.

This is a healthy take on the traditional no bake cookies. So good and good for you! I am always asked for this recipe every time I make them. They are a hit with the kids and the adults, and always go quick! I store them in the freezer because I think they taste best frozen, but not necessary.

- Freeze chocolate chips and peanut butter cups until partially frozen, about 15 minutes. Meanwhile, in a 6-qt. stockpot, combine peanut butter, sugar, corn syrup and salt. - Combine toasted oats, toasted almonds, ground flax, chocolate and salt in a medium bowl. Add maple syrup and vanilla. Stir to combine. Add peanut butter and mix, using a spoon to start and then using your hands to work the ingredients together well. Don’t worry if the mixture feels sticky. Let it sit for a few minutes to allow the wet ingredients to soak into the dry ingredients. Peanut butters differ widely in texture so If you find that even after a few minutes, the mixture sticks to the spoon when you try to shape the bites, add a bit more oats. If the mixture is still too sticky, chill it for 10 to 15 minutes in the fridge and try again.
- Shape the bites: You can roll up a tablespoon full of the mix into a ball or, my favorite method is to use the tablespoon of my measuring spoons to shape the bites into little domes. Scoop a generous tablespoon full of mixture and press it firmly against the side or bottom of the bowl get it packed in tight. Then, gently push your finger in on one edge of the oat-peanut mixture to nudge it out of the spoon. It should slide out easily. Set the bites onto the prepared tray.
- Eat and enjoy! Peanut butter energy bites can be stored in a plastic bag or airtight container in the fridge for up to a week.
