¼ cup white vinegar or apple cider vinegar
1 cup white sugar
½ cup ketchup
2 medium carrots, chopped

Steps:

  • Stir reserved pineapple juice, vinegar, sugar, and ketchup in a saucepan over medium heat until blended, 2 to 3 minutes.
  • Whisk cornstarch and water in a bowl until cornstarch is dissolved; stir into pineapple juice mixture.
  • Stir pineapple and carrots into the sauce; bring to a boil, reduce heat to medium-low, and cook at a simmer until the sauce thickens, about 5 minutes.

2 tablespoons white wine vinegar
2 egg whites
1 teaspoon vanilla extract

Steps:

  • In a saucepan, combine the brown sugar, white sugar, water, cream of tarter and vinegar. Bring to a boil and cook to soft ball stage, 236 degrees F (113 degrees C).
  • In a large, deep mixing bowl, beat egg whites until stiff peaks form.
  • Slowly pour the sugar mixture into the egg whites while beating constantly. Add vanilla and beat until thick and creamy.

1-1/2 teaspoons chili powder
1-1/2 teaspoons dried oregano
1-1/2 teaspoons salt
Pepper to taste
3 cups cooked long grain rice
1 can (7 ounces) mushroom stems and pieces, drained
1 medium green pepper, sliced
SAUCE:
1 cup plus 2 tablespoons sugar
1/3 cup cornstarch
2-1/2 cups cold water
1/3 cup white vinegar
1/3 cup ketchup
1-1/2 teaspoons salt
Pepper to taste

Steps:

  • In a large skillet, cook beef over medium heat until meat is no longer pink; drain. Stir in the chili powder, oregano, salt and pepper. , In a greased 3-qt. baking dish, layer the rice, beef mixture, mushrooms and green pepper; set aside. In a large saucepan, combine sugar and cornstarch; stir in the remaining sauce ingredients until smooth.
