3-4 lbs pork shoulder
1 tsp kosher salt per lb
1 bag broccoli slaw mix
1 jalapeño (julienned)
1/2 apple (julienned (use a sweet apple like gala))
1/2 tbsp mayo
1 tbsp BBQ sauce
1 tsp kosher salt
1/2 tsp black pepper
2 large sweet potatoes (sliced)
1 tbsp avocado oil
2 tsp kosher salt
1 tsp black pepper
Pulled pork
Sweet potato "buns"
Sweet and spicy broccoli coleslaw
BBQ sauce
Jalapeno slices

Steps:

  • Season pork shoulder with salt.
  • Place pork shoulder in slow cooker.
  • Cook on low for 12-14 hours depending on size and slow cooker.
  • Shred pork shoulder with two forks.
  • Mix all ingredients in a bowl.
  • Season to taste with salt and pepper.
  • Refrigerate for at least an hour or until ready to use.
  • Pre-heat oven to 400F.
  • Toss sweet potato slices with avocado oil, salt and pepper
  • Place on baking sheet in one layer.
  • Roast for 35-40 minutes flipping half way through.
  • Note: this can also be done on a grill if you're BBQ-ing
  • Smear BBQ sauce on sweet potato "buns"
  • Top buns with pulled pork, broccoli coleslaw and jalapeno slices (optional).

1/4 cup orange marmalade
1 large fresh jalapeño pepper, finely chopped

8 Texas toast white sandwich bread slices, toasted

Steps:

  • Heat large heavy nonstick skillet on medium heat. Add meat; cook 1 to 2 min. on each side or until evenly browned on both sides. Mix marmalade and peppers until blended; spoon over meat. Simmer on medium-low heat 3 to 4 min. or until meat is done. Spoon meat mixture into bowl; cover to keep warm.
  • Add pineapple to skillet; cook on medium heat 1 min. on each side. Meanwhile, cook gravy in saucepan on medium-low heat until heated through, stirring occasionally.
  • Top toast slices with pineapple and meat mixture just before serving; drizzle with gravy.

2 medium onions, sliced (about 2 cups)
2 tablespoons brown sugar
1 tablespoon smoked paprika
1-1/2 teaspoons salt

1 boneless pork shoulder roast (4 to 5 pounds)
1/2 cup chicken or vegetable broth
1/4 cup cider vinegar
3 tablespoons reduced-sodium soy sauce
3 tablespoons Worcestershire sauce

4 lb Pork Shoulder, bone in skin on.
4 tsp kosher salt
1 tbs black pepper
1 tbs smoked paprika
1 tbs chilli powder
1 tsp cumin
1 tbs garlic powder
1 tbs dried oregano
2 canned chipotle peppers
1 tbs Sauce from canned chipotle peppers
1 tbs maple syrup
1/4 cup apple cider vinegar
4 cloves garlic, sliced
1 can coca cola
1 cup beef stock
1 cup water
1 cup thinly sliced red cabbage
1/2 cup thinly sliced leeks
1/4 cup freshly chopped cilantro (basil or parsley work too. )
1/4 cup mayo
1/2 tsp salt
1 squeeze fresh lemon

Steps:

  • Preheat oven to 350f
  • Place pork shoulder on baking sheet or cutting board and sprinkle on dry rub. Massage into meat and make sure all parts of the pork is covered.
  • Place a lightly oiled dutch oven over medium high heat. Once temperature has been reached, lay in pork and sear on all sides. You are looking for a nice crush here so don't be shy. About 4 minutes per side.
  • Once all sides of the meat is seared, add in the braising liquid ingredients and place it back on stove top over high heat. Once a simmer has been reached, place on the cover and place in the preheated oven for 90 minutes.
  • After 90 minutes, remove the dutch oven from the oven, remove lid, and flip the pork shoulder over. Be careful not to splash yourself with hot braising liquid. Cover the pork and place back in the oven for an additional 90 minutes.
  • Let's kick on with the slaw. Nothing fancy here. Add the cabbage, leek, cilantro, salt, mayo, and lemon juice in a bowl. Stir and then let chill in the fridge until ready to serve.
  • After the pork is done cooking, remove from oven and let rest on stove top with lid on for 10 minutes. After the 10 minutes, shred the pork with two forks. I like to shred directly in the braising liquid but maybe give it a taste test to make sure it's not too spicy for you.
  • Now build the sandwich. I like to toast my buns and suggest you do the same. Enjoy with a cold beer.. if that is your thing!!

1/2 cup light brown sugar
4 cloves garlic, minced
1 tablespoon ground cumin
1 tablespoon salt
1 1/2 teaspoons cayenne pepper
2 onions, coarsely chopped
2 cups low-sodium broth or water
1 cup cola

Steps:

  • Preheat the oven to 350 degrees F. Rinse and dry the pork shoulder.
  • Mix together the brown sugar, garlic, cumin, salt, and cayenne. Rub the mixture generously and evenly over the pork shoulder.
  • In a large roasting pan or Dutch oven, add the chopped onions, broth, and cola. Place the seasoned pork in the Dutch oven and roast for 4 to 6 hours, checking the pork every hour for tenderness and liquid level.
  • When the pork is tender enough that it is falling apart, shred it with a fork. Reserve the juices and pour them over the shredded pork before serving.

3 pounds pork butt, rinsed and patted dry
Salt and pepper
1 cup barbeque sauce
1/2 cup yellow mustard
3 tablespoons tomato paste
1 cup chicken broth
1 lime, juiced
White hamburger buns, for serving
1/4 cup sour cream
1/4 cup mayonnaise
1 lime, juiced
1 tablespoon hot sauce
1 (16-ounce) package coleslaw mix (recommended: Dole)
Salt and freshly ground black pepper

Steps:

  • Place onions in the bottom of a 5-quart slow cooker. Season pork butt with salt and pepper. Place in slow cooker on top of onions, fat side up.
  • In a medium bowl, stir together barbeque sauce, mustard, tomato paste, chicken broth and lime juice. Pour over pork. Cover and cook on LOW setting for 6 to 8 hours.
  • Remove pork and let rest for 5 to 10 minutes.
  • In a large bowl whisk together sour cream, mayonnaise, lime juice, and hot sauce. Add coleslaw blend and toss to coat. Season with salt and pepper. Place in refrigerator for 1 hour before serving. Serve on top of pork sandwich.
  • Slice pork and serve on buns with spicy coleslaw.

2 tablespoons chopped fresh cilantro

Steps:

  • Mix soy sauce, ginger, and garlic in a small bowl.
  • Heat oil in a large nonstick skillet over medium-high heat. Arrange pork slices in a single layer in the skillet. Spoon soy sauce mixture over the pork. We owe enormous thanks to our slow cooker for making it possible to turn our absolute favorite weekend treat, barbecued pork, into a four-ingredient recipe we can throw together for a weeknight. We love to make sandwiches with the soft, flavorful shredded pork on hamburger buns, and serve them with some Lemony Coleslaw with Raisins (page 116), on top or alongside.

One 3- to 4-pound bone-in Boston pork butt
One 1-ounce envelope Lipton onion soup and dip mix
1 medium onion, quartered
One 12-ounce bottle barbecue sauce or 1 1/2 cups Easy BBQ Sauce (page 91)

Steps:

  • Score the pork butt in several areas, making cuts 1 inch deep. Rub the soup mix into the meat.
  • Scatter the quartered onion in the bottom of the crockpot and place the meat on top.
  • Cover and cook on high for 4 hours or low for 8 hours.
  • Carefully transfer the meat to a plate and allow it to cool slightly. Strain the liquid remaining in the crockpot through a colander or sieve. Save the meat pieces and onion bits, and discard the liquid and any excess fat. When the pork butt has cooled, remove any excess fat and discard the bone. Using a fork, break up the meat.
  • Place the meat, along with the bits and pieces from the strained liquid, back in the crockpot. Pour the barbecue sauce over the meat and stir to coat well. Heat on the warm setting until ready to serve.
