SPICED BANANA BREAD
This delicious, moist and fluffy banana bread is so easy to make and even easier to eat! With the addition of my favorite fall spices, it's the perfect breakfast treat to warm you up on a chilly morning!

Steps:
- Preheat oven to 350°F and grease or line with parchment paper a 9x5-inch loaf pan.
- In a large bowl, combine all of the dry ingredients (flour, sugar, salt, baking powder, and spices). Whisk together until well combined.
- In a separate bowl, peel and mash the bananas. Then add the eggs, oil or melted butter, and vanilla extract is using. Whisk until well combined.
- Pour the wet ingredients into the dry ingredients and use a rubber spatula or a spoon to stir the wet and dry together. Do not over-mix the batter!
- Pour the batter into the prepared loaf pan. Top with one banana, sliced in half, if desired (optional). Bake at 350°F for 55-65 minutes, until a tester comes out with moist crumbs.
- Remove baked loaf from the pan and transfer to a cooling rack.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x3 inch loaf pans. Whisk together the flour, baking powder, and baking soda; set aside.
- Mash the bananas, eggs, sugar, cinnamon, salt, nutmeg, and cloves together in a large bowl with a fork until well combined. Stir in the melted butter and vanilla extract, then fold in the flour mixture until a batter forms and no dry lumps remain. Pour into the prepared loaf pans.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes, then remove from the pan, and allow to cool completely on a wire rack.

- Preheat oven to 350 degrees F (175 degrees C). Generously grease a 9x5-inch loaf pan with 2 teaspoons butter. Mix 1 tablespoon of sugar with 1 teaspoon of cinnamon in a small bowl, and pour the mixture into the buttered pan. Swirl and tap the pan to distribute cinnamon-sugar all over the inside of the pan, up to the rim.
- In a bowl, whisk together flour, baking powder, salt, 1 teaspoon of cinnamon, and the nutmeg. In a large mixing bowl, beat 1/2 cup of butter with 1 cup of sugar until creamy; beat in eggs, one at a time, until thoroughly incorporated. Stir in the mashed bananas and milk. Mix in the flour mixture just until thoroughly moistened (a few lumps are fine), and scrape the batter into the prepared loaf pan. Sprinkle the top of the batter with 1 more teaspoon of sugar.
- Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, about 1 hour. Let cool in the pan for 10 minutes before removing to finish cooling on a wire rack.

- Preheat oven to 350°F.
- Grease 9 x 5 inch loaf pan.
- Sift flour,baking powder, baking soda, salt, ginger, allspice and nutmeg together in bowl.
- Add lemon zest and almonds.
- Stir until combined.
- Set aside. Beat butter in large mixing bowl until soft and creamy.
- Beat in sugar until light and fluffy.
- Add eggs and beat until thoroughly blended.
- Beat in flour mixture alternately with bananas until mixture is well blended.
- Pour into prepared pan.
- Bake in center of oven 1 hour to 1 hour 5 minutes, or until toothpick inserted in center comes out clean.
- Cool in pan on wire rack 10 minutes.
- Invert from pan and cool completely on rack.
- Variation: Banana-walnut or -pecan bread: Omit almonds.
- Add 3/4 cup coarsely chopped walnuts or pecans with bananas.

- Preheat oven to 350 degrees. Spray a rimmed 18" x 13" baking sheet with nonstick baking spray. Line with parchment paper and spray again. Set aside.
- In a large bowl, whisk to combine flour, cinnamon, cardamom, cloves, baking soda, and salt.
- Place butter and brown sugar in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed until lightened, about 3-4 minutes, scraping down the side of the bowl as necessary with a spatula. Reduce speed to low and add eggs, one at a time. Add vanilla and oil. Beat until combined, again scraping down the bowl.
- In three additions, add flour mixture, alternating with two additions of sour cream, beginning and ending with the dry ingredients. Mix only until no dry ingredients remain. Do not overmix. Remove bowl from stand mixer.
- Add mashed bananas, walnuts, and chocolate and fold to combine. Transfer batter to prepared baking sheet and spread into an even layer. Top with sliced bananas.
- Transfer to oven and bake, rotating halfway through, until a toothpick inserted into the center comes out clean, about 35 minutes. Remove from oven and brush tops of bananas with honey. Let cool on a rack. Cut into pieces and serve.
