2 teaspoons cornstarch
1/4 cup lemon juice
2 tablespoons butter
2 cans (15 ounces each) sliced beets, drained
1 can (11 ounces) mandarin oranges, drained

Steps:

  • In a large saucepan, combine the sugar and cornstarch. Add lemon juice and butter. Bring to a boil; cook and stir for 2 minutes or until thickened. , Stir in beats; heat through. Gently stir in oranges; heat through.

Sliced beets are cooked with apple pie spice and mandarin oranges in this easy side dish.

¼ cup white sugar
¼ cup apple cider vinegar
½ teaspoon apple pie spice
2 tablespoons cornstarch
1 (15 ounce) can sliced beets, drained
1 (15 ounce) can mandarin orange segments, drained

Steps:

  • Whisk together sugar, vinegar, apple pie spice, and cornstarch in a large, microwave safe bowl until combined.
  • Cook in microwave on High until the mixture is boiling and has thickened, stirring occasionally, about 2 minutes. Stir the drained beets and mandarin orange segments into the thickened sauce. Allow the beets to reheat in the sauce, do not microwave further, or the mandarin oranges will come apart. Serve either warm or cold.

1 can (16 ounces) sliced or diced beets
2 tablespoons sugar
1 tablespoon cornstarch
1/4 teaspoon salt
3 to 4 tablespoons white vinegar
2 tablespoons butter

Steps:

  • Drain beets, reserving 1/3 cup juice. In a saucepan, combine the sugar, cornstarch and salt. Stir in beet juice and vinegar; cook and stir over medium-high heat until thickened and bubbly. Cook and stir 2 minutes more. Add beets and butter; heat through.
