Jalapeno Honey Glazed Ham image

1 fully cooked bone-in ham, shank end (about 10 pounds), at room temperature 1 to 2 hours
1/2 cup honey
1/4 cup apricot jam
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
4 cloves garlic, smashed
2 jalapenos, seeded and diced small
Zest and juice of 1 orange
Freshly ground black pepper
Cheeses (such as Swiss and Cheddar), deli-sliced and cut into triangles
Hawaiian sweet rolls, split
Mustards (such as whole-grain mustard, Dijon, yellow mustard)
Mayonnaise
Sliced cornichons
Pickled Red Onions, recipe follows
3/4 cup red wine vinegar
2 tablespoons sugar
1/2 teaspoon kosher salt
1 bay leaf
Red pepper flakes
1 large red onion, halved and sliced into 1/4-inch-thick half-moons

Steps:

  • For the ham: Preheat the oven to 325 degrees F and adjust the oven rack to the lowest level.
  • Using a sharp paring knife or box cutter, score the entire fat layer of the ham with deep cuts (being careful to not cut into the meat) in a 1/2-inch-wide diamond pattern.
  • Place the ham cut side-down in a roasting pan fitted with a rack and add water to the bottom of the roasting pan about 1/2 inch deep. Cover loosely with foil and bake for 45 minutes.
  • Meanwhile, make the glaze: In a small saucepan over medium heat, stir together the honey, jam, mustard, vinegar, garlic, jalapeno, orange zest and juice and pepper to taste until combined. Bring to a gentle simmer over medium heat. Cook, stirring often, until the glaze is slightly thickened, 3 to 5 minutes. Remove from the heat and set aside.
  • Remove the foil from the ham and spoon the pan drippings over the top; then generously brush the glaze all over. Continue baking the ham, uncovered, and repeat the basting with juices and brushing with glaze every 20 minutes until the glaze is deep golden brown and caramelized or until the internal temperature reaches 130 degrees F, 10 to 12 minutes per pound, about 1 hour more.
  • Loosely cover the ham with foil and let rest 15 minutes before slicing. Serve warm or at room temperature as a main course, or prepare a sandwich bar.
  • For the ham sandwich bar: Arrange all the ingredients on the table or counter. I like to assemble my sandwich like this: Put cheese and then a couple of slices of ham on a bun bottom. On the bun top, dollop mustard and mayo, then top with cornichons and Pickled Red Onions. Close up the sandwich.
  • To a saucepan, add the vinegar, sugar, salt, bay leaf, red pepper flakes to taste and 1/2 cup water and bring to a boil. Put the onions in a heatproof container and pour the boiling pickling liquid over them. Let the onions sit for 30 minutes to let cool. Cover and refrigerate until ready to use.

2 fresh jalapeno peppers
12 ounces frozen blackberries
1 cup water
½ cup brown sugar
¼ cup honey
¼ cup orange juice
¼ cup orange-flavored liqueur
1 tablespoon minced fresh garlic
2 teaspoons orange zest
1 (12 pound) spiral-sliced, fully-cooked smoked ham

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler to high. Place jalapeno peppers on a baking sheet.
  • Broil in the preheated oven, turning every 2 to 3 minutes, until skin on the jalapenos is blackened and bubbling, 8 to 10 minutes.
  • Remove jalapeno peppers from oven and place in a resealable plastic bag; set aside for 5 to 10 minutes. Carefully open the bag and remove jalapeno peppers; let sit until easily handled. Peel blackened skin from jalapeno peppers, slice open, remove the seeds, and mince the pepper.
  • Combine jalapeno peppers, blackberries, water, brown sugar, honey, orange juice, orange-flavored liqueur, garlic, and orange zest in a saucepan over medium heat; simmer for 5 to 10 minutes. Reduce heat to low and continue simmering until glaze has reduced in size and is thickened, 5 to 10 minutes more. Mash the glaze with a potato masher until blackberries are broken down. Remove saucepan from heat.
  • Reduce oven temperature to 325 degrees F (165 degrees C). Place the ham in a roasting pan and brush some of the glaze over the ham; cover loosely with aluminum foil.
  • Bake in the preheated oven, basting with glaze every 20 minutes, until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), about 3 hours. Remove ham from oven and brush with more glaze. Let stand for 10 minutes before slicing.

GLAZE:
1/2 cup orange juice, divided
1 teaspoon Chinese five-spice powder
1/3 cup packed brown sugar
1 tablespoon honey
4 teaspoons cornstarch
2 medium oranges, peeled and sectioned
1 can (20 ounces) unsweetened pineapple tidbits, drained

Steps:

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Cover and bake until a thermometer reads 130°, 2-1/2 to 3 hours., Meanwhile, in a small saucepan, combine 1/4 cup orange juice and Chinese five-spice powder; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 1-2 minutes. Stir in brown sugar and honey. In a small bowl, mix cornstarch and remaining orange juice until smooth; stir into brown sugar mixture. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. , Remove ham from oven. Brush with half of the glaze. 1 boneless fully cooked ham (3 to 4 pounds)
1/2 cup packed dark brown sugar
1 can (12 ounces) lemon-lime soda, divided
1 medium navel orange, thinly sliced
1 medium lemon, thinly sliced
1 medium lime, thinly sliced
1 tablespoon chopped crystallized ginger

Steps:

  • Cut ham in half; place in a 5-qt. slow cooker. In a small bowl, combine brown sugar and 1/4 cup soda; rub over ham. Top with orange, lemon and lime slices. Add candied ginger and remaining soda to the slow cooker., Cover and cook on low for 4-5 hours or until a thermometer reads 140°, basting occasionally with cooking juices. Let stand for 10 minutes before slicing.

This recipe is such a wonderful change from ribs with thick BBQ sauce. This is perfect for a hot summer day with a side of pineapple coleslaw and homemade baked beans.

4 lbs pork ribs
1 -2 tablespoon celery salt
1 teaspoon pepper
2 tablespoons cornstarch
2 tablespoons brown sugar
1/2 teaspoon salt
2 cups orange juice
2 tablespoons lime juice
1 teaspoon lime peel, finely shredded
1 teaspoon lemon peel, finely shredded
1 tablespoon of fresh mint, snipped

Steps:

  • Place ribs in a large roasting pan (DO NOT cut into smaller pieces; I use a large jelly roll pan with a large metal cooling rack on top).
  • Sprinkle with celery salt and freshly ground pepper.
  • Cover tightly with aluminum foil and bake for approximately 3 hours at 275 degrees until tender. Try against all temptation not to peek!
  • Meanwhile, for the sauce, combine the cornstarch, brown sugar and salt. Stir in the lime juice and orange juice, cook and stir over medium heat until thick.
  • Remove from heat and stir in the mint and lemon and lime peel.
  • Remove ribs from oven and brush with some of the sauce.
  • Finally move ribs to the grill to finish cooking and give them that wonderful "I've been grilled all day long" color. Cook for about 10 minutes on each side over an open grill at medium heat.
  • Baste several times with the citrus sauce while grilling.
