Steps:
- Heat a large pot over medium-high heat. Add the olive oil, then the sausage. Cook, breaking the sausage into small pieces with a wooden spoon, until it is golden brown and no longer pink, about 6 minutes. With a slotted spoon, remove the sausage to a plate and set aside.
- Reduce the heat to medium and add the garlic cloves. Cook for 1 minute.
- Add the pasta, broth, 2 cups of water, oregano, salt, and pepper to the pot and bring to a simmer. Reduce heat to medium or medium low to keep it simmering for 5 minutes, stirring occasionally to prevent sticking.
- Stir in the broccoli. Cover the pot and let cook until the pasta and broccoli are just tender, about 5 minutes, stirring half-way through.
- Uncover the pot. Add the sun-dried tomatoes, heavy cream, and reserved sausage. Cook until heated through, about 1 minute.
- Remove from the heat and stir in the parmesan cheese and lemon juice. Serve topped with more parmesan cheese and red chili flakes, if you like.

Steps:
- In a large frying pan, dry-fry the bacon over a medium heat for 3 mins until the fat is released and the bacon is golden. Transfer the bacon to a small bowl, leaving the fat in the pan. Add the chicken and brown for 4 mins each side.
- Push the chicken to one side of the pan and tip in the garlic and spring onions, cooking for about 30 secs, just until the spring onion stalks are bright green. Pour in the chicken stock, return the bacon to the pan, cover and simmer for 15 mins.
- Increase heat under the pan. Tip the peas and lettuce into the sauce and cook for 4 mins, covered, until the peas are tender and the lettuce has just wilted. Check chicken is cooked through. Stir in the crème fraîche just before serving.

- Cook the pasta in a large pot of salted boiling water until al dente, according to package instructions. Reserve 1 cup of the pasta cooking liquid, then drain and set aside.
- Meanwhile, in a large pan with high sides or a Dutch oven, cook the bacon over medium low heat, stirring occasionally, until browned and crispy, about 8 minutes. With a slotted spoon, carefully remove the bacon to a plate and with a paper towel and lightly pat dry. Discard all but 1 tablespoon bacon grease from the pan and return to heat.
- Increase the heat to medium high, add the chicken pieces, then sprinkle with the Italian seasoning, salt, and pepper. Sauté the chicken until cooked through, about 6 minutes, then add the minced garlic and cook until fragrant, about 30 seconds. Remove the chicken to the plate with the bacon, then return the pan to the heat.
- Add the half and half to the pan and bring it to a gentle boil over medium high, stirring often. Watch the pan carefully. As soon as the half and half barely begins to boil, reduce the heat to low and add the Mozzarella and 1/2 cup Parmesan cheese. Cook and stir the sauce until it thickens and the cheese melts, about 1-2 minutes. Stir in the pasta, bacon, chicken, peas, and parsley. Cook 30 additional seconds to warm through. If the sauce seems too thick, add a bit of the reserved pasta water to loosen it. Enjoy warm, topped with additional Parmesan cheese and parsley.

- Cook the pasta in a large pot of salted boiling water just until barely al dente according to package instructions (the pasta will finish cooking in the sauce). Reserve ½ cup of the cooking water to thin the sauce later, if necessary. Drain.
- Meanwhile, cook the bacon in a large skillet over medium-high heat until crispy, about 7-8 minutes. Transfer the bacon to a paper towel-lined plate to drain, reserving the drippings in the pan.
- Season the chicken with salt and pepper on both sides. Cook the chicken in the bacon drippings over medium-high heat until browned on both sides and juices run clear, about 5-7 minutes per side. Remove the chicken to a cutting board, let rest for 5 minutes, and then slice into thin strips.
- Wipe the skillet clean to make the sauce. In the skillet, whisk together heavy cream and sour cream. Season with ½ teaspoon of salt and ¼ teaspoon pepper. Simmer the cream mixture over medium heat, whisking, until it thickens, about 5 minutes. Add the lemon zest, lemon juice and Worcestershire sauce. With the sauce at a gentle simmer over medium heat, add the cooked pasta, the chicken, the bacon, and the peas. Toss to coat in the sauce and cook just until warmed through, about 2 minutes. Stir in reserved pasta water, as necessary, to thin the sauce. Taste and season with additional salt and black pepper, if desired. Garnish with the chives and Parmesan; serve immediately.
