Bowtie pasta is a classic for a reason! In this 30-minute recipe, pasta is flavored with Italian sausage, broccoli, a creamy sauce, and parmesan cheese.

2 tbsp. olive oil
1 lb. mild Italian pork sausage, casing removed
3 cloves garlic, chopped
1 lb. bowtie pasta
3 c. chicken broth
1 tsp. dried oregano
1 tsp. salt
1/2 tsp. ground black pepper
4 c. small broccoli florets (from 1 8-oz. piece of broccoli)
1/2 c. julienned sun-dried tomatoes, drained of oil
1/3 c. heavy cream
1/2 c. grated parmesan cheese, plus more for serving
2 tbsp. fresh lemon juice (from 1 lemon)
Red chili flakes, for serving (optional)

Steps:

  • Heat a large pot over medium-high heat. Add the olive oil, then the sausage. Cook, breaking the sausage into small pieces with a wooden spoon, until it is golden brown and no longer pink, about 6 minutes. With a slotted spoon, remove the sausage to a plate and set aside.
  • Reduce the heat to medium and add the garlic cloves. Cook for 1 minute.
  • Add the pasta, broth, 2 cups of water, oregano, salt, and pepper to the pot and bring to a simmer. Reduce heat to medium or medium low to keep it simmering for 5 minutes, stirring occasionally to prevent sticking.
  • Stir in the broccoli. Cover the pot and let cook until the pasta and broccoli are just tender, about 5 minutes, stirring half-way through.
  • Uncover the pot. Add the sun-dried tomatoes, heavy cream, and reserved sausage. Cook until heated through, about 1 minute.
  • Remove from the heat and stir in the parmesan cheese and lemon juice. Serve topped with more parmesan cheese and red chili flakes, if you like.

6 rashers smoked streaky bacon, chopped
8 skinless, boneless chicken thighs
2 garlic cloves, thinly sliced
1 bunch spring onions, roughly chopped
300ml hot chicken stock
250g frozen peas
1 Little Gem lettuce, roughly shredded
2 tbsp crème fraîche

Steps:

  • In a large frying pan, dry-fry the bacon over a medium heat for 3 mins until the fat is released and the bacon is golden. Transfer the bacon to a small bowl, leaving the fat in the pan. Add the chicken and brown for 4 mins each side.
  • Push the chicken to one side of the pan and tip in the garlic and spring onions, cooking for about 30 secs, just until the spring onion stalks are bright green. Pour in the chicken stock, return the bacon to the pan, cover and simmer for 15 mins.
  • Increase heat under the pan. Tip the peas and lettuce into the sauce and cook for 4 mins, covered, until the peas are tender and the lettuce has just wilted. Check chicken is cooked through. Stir in the crème fraîche just before serving.

8 ounces bow tie pasta
2 cups cooked chicken, coarsely chopped or 2 cups precooked diced chicken
10 ounces frozen peas, defrosted
10 1/2 ounces cream of chicken soup
1/2 cup low-fat milk
1/2 teaspoon dried rosemary or 1/2 teaspoon thyme
1/4 teaspoon pepper
1/2 cup parmesan cheese, grated

Steps:

  • Heat oven to 425 degrees.
  • Cook pasta in a large pot according to package directions.
  • Drain.
  • Put pasta into a casserole dish.
  • Add chicken, peas, soup, milk, rosemary, and pepper.
  • Mix thoroughly but gently.
  • Sprinkle with parmesan.
  • Bake for 10 minutes, or until heated through and cheese is lightly browned.

  • Cook the pasta in a large pot of salted boiling water until al dente, according to package instructions. Reserve 1 cup of the pasta cooking liquid, then drain and set aside.
  • Meanwhile, in a large pan with high sides or a Dutch oven, cook the bacon over medium low heat, stirring occasionally, until browned and crispy, about 8 minutes. With a slotted spoon, carefully remove the bacon to a plate and with a paper towel and lightly pat dry. Discard all but 1 tablespoon bacon grease from the pan and return to heat.
  • Increase the heat to medium high, add the chicken pieces, then sprinkle with the Italian seasoning, salt, and pepper. Sauté the chicken until cooked through, about 6 minutes, then add the minced garlic and cook until fragrant, about 30 seconds. Remove the chicken to the plate with the bacon, then return the pan to the heat.
  • Add the half and half to the pan and bring it to a gentle boil over medium high, stirring often. Watch the pan carefully. As soon as the half and half barely begins to boil, reduce the heat to low and add the Mozzarella and 1/2 cup Parmesan cheese. Cook and stir the sauce until it thickens and the cheese melts, about 1-2 minutes. Stir in the pasta, bacon, chicken, peas, and parsley. Cook 30 additional seconds to warm through. If the sauce seems too thick, add a bit of the reserved pasta water to loosen it. Enjoy warm, topped with additional Parmesan cheese and parsley.
