Meaty chicken wing drummettes in a spicy barbecue sauce

Steps:
- Preheat oven to 425°F. Place rack inside rimmed baking sheet; spray with cooking spray.
- Stir together paprika, chili powder, salt, onion powder, garlic powder, black pepper and cayenne pepper in small bowl.
- Pat chicken wings dry with paper towel and place in large bowl. Add 1 tablespoon spice mixture and toss to coat. Place skin-side up on baking rack and spray chicken lightly with cooking spray. Bake 35 minutes, until crispy and cooked through (180°F).
- Meanwhile, stir together ketchup, honey, mustard, vinegar and remaining spice mixture in small pot. Bring to a simmer over low heat; cook 10 minutes. Toss cooked wings with sauce and serve or continue baking 5 minutes for glazed wings.

- Sprinkle chicken wings with a dash of salt and pepper. Broil 4-6 inches from the heat for 5-10 minutes on each side or until golden brown. Transfer to a greased 5-qt. slow cooker.
- Combine the ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, garlic, Liquid Smoke if desired and remaining salt; pour over wings. Toss to coat. Cover and cook on low for 3-1/4 to 3-3/4 hours or until chicken juices run clear. Sprinkle with sesame seeds if desired. Yield: about 2-1/2 dozen.

SWEET AND STICKY CHICKEN WINGS
Steps:
- Put the chicken in a large resealable bag. Combine the soy sauce, lime juice, canola oil, honey, ginger, pepper flakes, garlic and onions in a large bowl and whisk to blend. Pour the marinade into the resealable bag and massage it into the chicken. Place in the refrigerator to marinate for at least 1 hour but not more than 2 hours total.
- Heat a grill to medium heat.
- Remove the chicken from the marinade, place on a baking sheet lined with paper towels and pat the chicken dry. Pour the marinade into a small pot and reduce by half over medium-low heat, about 10 minutes. Set aside to brush on the chicken when grilling.
- Grill the chicken until the skin gets crispy, about 6 minutes. Flip, brush the cooked side with the reduced marinade and cook for another 6 minutes. Flip and brush again with the reduced marinade. Cook each side until nicely browned and slightly sticky, an additional 2 to 3 minutes per side. Transfer to a serving platter and serve.

- Using a sharp knife, cut through the 2 wing joints; discard wingtips. Sprinkle chicken with a dash of salt and pepper. Broil 4-6 in. from the heat until golden brown, 6-8 minutes on each side. Transfer to a greased 5-qt. slow cooker. , Combine the ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, garlic, liquid smoke if desired, and remaining salt; pour over wings. SWEET SPICY WINGS
Sweet and spicy wings! You can make two batches of the sauce, use one as a marinade before grilling the chicken, and pour the second batch over the chicken after it is grilled. It is not mandatory to do it this way, just better!

- Preheat an outdoor grill for high heat.
- Lightly oil the grill grate. Grill the chicken 8 to 12 minutes on each side, or until juices run clear. (You can deep fry or bake the chicken instead if you want to, but it is best when grilled.) Remove chicken to a large roasting pan.
- In a saucepan over medium heat, mix the hot sauce, butter, honey, garlic salt, black pepper, and cayenne pepper. Simmer about 10 minutes, until blended and heated through. Pour the sauce over the grilled chicken wings and stir to coat.

- In a 9x13 inch casserole, combine soy sauce, brown sugar, oil, ginger, and garlic powder. Mix until brown sugar completely dissolves into the mixture. Place the chicken wings in the dish and turn them over until they are all well coated. Cover the dish and refrigerate for at least 4 hours. Turn the chicken again, after 2 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake chicken at 350 degrees F (175 degrees C), covered, for 45 minutes. Turn the chicken wings, and spoon sauce from the bottom of the pan over the tops of the wings. Cook an additional 50 minutes, uncovered.

SWEET N' SPICY CHICKEN WINGS
We love to snack on chicken wings and this fruity version - using dried mango - is really good! Prep time does not include marinating time.

- Rehydrate dried mango by placing the pieces in a small bowl with the hot tea and leave until tea has cooled completely.
- Combine all marinade ingredients (including mango and tea) in a mini-processor and blend to make a fairly-smooth puree (it will not be completely smooth).
- Put chicken wings in a large ziploc bag and add marinade. Seal bag and massage marinade into chiciken wings. Refrigerate wings 8 hours or overnight. Remove from refrigerator 20 minutes before baking.
- Preheat oven to 375°F Empty chicken wings into a 9 X 13 inch baking dish. Bake for 1 1/2 hours, turning over after 1 hour and basting with marinade.
