I prepare sweet potatoes every week for my family, mostly as a side dish. But I've found this vegetable also makes desserts even more delightful. These moist, rich square have a great pecan crunch.-Betty Janway, Ruston, Louisiana

1 package yellow cake mix (regular size), divided
1/2 cup butter, melted
1 large egg, lightly beaten
FILLING:
3 cups cold mashed sweet potatoes (without added milk or butter)
2/3 cup whole milk
1/2 cup packed brown sugar
2 large eggs, lightly beaten
1 tablespoon pumpkin pie spice
TOPPING:
6 tablespoons cold butter
1 cup chopped pecans
1/4 cup sugar
1 teaspoon ground cinnamon
Whipped cream and pecan halves, optional

Steps:

  • Set aside 3/4 cup of the cake mix. Combine the remaining mix with butter and egg until crumbly; spread into a greased 13x9-in. baking pan. Whisk filling ingredients until smooth; pour over crust. , For topping, cut butter into reserved cake mix until crumbly. Stir in the pecans, sugar and cinnamon; sprinkle over the filling. , Bake at 350° for 60-65 minutes or until a knife inserted in the center comes out clean. Cool. Garnish with whipped cream and pecan halves if desired.

1 (18.25-ounce) box yellow cake mix (recommended: Betty Crocker)
8 tablespoons butter, room temperature
1 egg
2 cups leftover sweet potatoes (or 1 (15-ounce) can) (recommended: Princella)
1 (8-ounce) package cream cheese, softened
1 egg
1/2 cup sugar
1 1/2 teaspoons pumpkin pie spice
1 cup oats
1/4 cup all-purpose flour
2 tablespoons honey
1/2 cup white chocolate chips
1/4 teaspoon pumpkin pie spice
1/2 cup crushed mixed nuts
3 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 by 13-inch baking pan with cooking spray; set aside.
  • Beat cake mix, butter, and egg in a large bowl with an electric mixer on low speed. Beat into well combined crumbs. Press cake mixture evenly into prepared pan, set aside.
  • Blend all potato filling ingredients in food processor until smooth. Spread evenly over crust layer.
  • Combine all topping ingredients in small bowl. Sprinkle over and press into sweet potato filling. Bake in preheated oven for 30 to 35 minutes, until just set and tester inserted comes out clean.

A date filled bar with a chewy oatmeal crust. This is my grandmother's recipe, which my whole family loves.

1 ½ cups rolled oats
1 ½ cups sifted pastry flour
¼ teaspoon salt
¾ teaspoon baking soda
1 cup packed brown sugar
¾ cup butter, softened
¾ pound pitted dates, diced
1 cup water
⅓ cup packed brown sugar
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
  • In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
  • Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

1 cup unsalted butter, softened
2 cups brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1/4 cup milk

Steps:

  • Preheat oven to 350 degrees F & spray a 9"x13" baking pan with nonstick vegetable spray.
  • Place the mashed sweet potatoes in a large bowl & set aside.
  • In another bowl & using an electric mixer, cream together the butter & sugar before adding the eggs & vanilla, mixing to combine.
  • Add this egg mixture & the 1/4 cup of milk to the mashed sweet potatoes & beat well to combine.
  • In another bowl, whisk together the flour, baking powder, salt, cloves, nutmeg & cinnamon.
  • Place the dates & nuts in another bowl, tossing them with 1/4 cup of the flour mixture.
  • Add the remaining flour mixture to the sweet potato mixture & blend, then fold in the dates & nuts.
  • Pour the batter into the prepared baking dish & bake for 60 minutes or until a toothpick stuck in the center comes out clean.
  • Cool on a wire rack before cutting into 24 small squares.

⅓ cup boiling water
2 cups dates, pitted and chopped
½ cup shortening
1 cup white sugar
⅛ teaspoon ground cinnamon
¾ teaspoon salt
⅛ teaspoon ground nutmeg
2 eggs
1 cup all-purpose flour
¼ teaspoon baking soda
½ cup chopped walnuts
¼ cup confectioners' sugar

Steps:

  • In a small bowl, pour boiling water over dates, and set aside to cool. Preheat oven to 325 degrees F (165 degrees C). Grease a 10x10 inch baking pan.
  • In a medium bowl, cream together the shortening and white sugar. Add eggs, one at a time, beating after each addition. Add the dates, including any water; mix well. Sift together the flour, cinnamon, salt, nutmeg, and baking soda; stir into the date mixture. Then stir in the nuts.

For a sweeter taste you may increase the sugar amount in the potato mixture by a few tablespoons or to taste, the sweet potatoes may be baked and the pulp removed up to a day in advance if desired --- two 29-ounce cans sweet potatoes, drained and mashed may be used for this recipe, prep time does not include baking the sweet potatoes.

5 medium sweet potatoes
1/3 cup white sugar (use white or brown)
1/2 cup melted butter
2 large eggs, lightly beaten
1 pinch salt
2 teaspoons vanilla
1/3 cup evaporated milk (or use half and half cream or milk)
1/3 cup melted butter
1 cup brown sugar
1/2 cup all-purpose flour
1 1/2 cups coarsley chopped pecans or 1 1/2 cups walnuts

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • Line a baking sheet with foil, then spray with cooking spray.
  • Prick each sweet potato with a few holes.
  • Place on the baking sheet and bake for about 1 hour or until fork-tender all the way through to the middle (baking time will vary slightly).
  • Cool the potatoes slightly then scoop out the pulp.
  • Place the pulp in a large bowl.
  • Add in 1/3 cup sugar (start with 1/3 cup and add in more to taste after if desired) melted butter, eggs, pinch salt, vanilla and evaporated milk or milk; mix with a wooden spoon to combine.

  • Bake for about 25 minutes or until completely heated through.

I got this recipe from the mother of one of my bosses. I didn't think I would like dates, but she made me try a bar and I was hooked. I think her bars are perfect because they don't have oatmeal (I don't really like oatmeal in my baked goods), the filling wasn't too overly sweet, and the crust was crumbly and buttery. These are now a part of my Christmas goodie containers. This recipe can easily be halved, and baked in a 9x9" pan for about 10-12 minutes for the crust and 20-25 minutes for the filling.

1/2 cup granulated sugar
1 cup unsalted butter, cold
4 large eggs

1/4 cup lemon juice
