Roasted Sweet Potato Rounds image

Roasted Sweet Potato Rounds, a simple baked crispy sweet potato slices recipe with just four ingredients and ready in only 45 minutes. Perfect as a simple side dish or salad topping and great for meal prep!

3 medium sweet potatoes
2 tablespoons olive oil
1 pinch salt and pepper
Optional spices: paprika, cumin, cayenne, cinnamon, garlic, etc.

Steps:

  • Preheat oven: Preheat oven to 425 degrees F (230 degrees C).
  • Prep potatoes: Wash sweet potatoes and remove any growths or blemishes, but do not peel. Cut potatoes into 1/3 inch (10 mm) round slices.
  • Season potatoes: Drizzle olive oil onto large sheet pan and spread until even on baking sheet. Add potato rounds to pan with one side facing down to cover with oil, then flip all potato medallions to make sure each side is lightly oiled. Sprinkle with salt, pepper, and any additional desired spices.
  • Bake until golden brown: Bake in oven for a total of 40-45 minutes, flipping once about halfway through and until both sides are lightly browned and crispy on the edges.

This is a really good way to do sweet potatoes without all the brown sugar and sweetness that normally accompanies them.

1 large sweet potato
4 tablespoons butter (melted)
4 tablespoons honey
1 teaspoon cinnamon
2 tablespoons fresh lime juice

Steps:

  • Preheat oven to 400°F.
  • Slice sweet potato into 1/4 inch discs.
  • spray baking dish with Pam or baking spray.
  • melt butter.
  • whisk together butter, honey, cinnamon and lime juice in a large bowl.
  • Toss potato slices with mixture reserving any left over mixture.
  • Bake potato discs for 20-25 depending on how thick the discs.
  • Top baked discs with a little excess sauce mixture and serve.

Here's what you need: large sweet potatoes, salted butter, coconut oil, parmesan cheese, ground cumin, ground cinnamon, red pepper flakes, marshmallows

4 large sweet potatoes
2 tablespoons salted butter, melted
2 tablespoons coconut oil
½ cup parmesan cheese
¾ teaspoon ground cumin
½ teaspoon ground cinnamon
½ teaspoon red pepper flakes
12 marshmallows

Steps:

  • Preheat oven to 375°F (190°C).
  • Carefully slice sweet potatoes into ⅛ inch (3 mm) slices. Add to a large mixing bowl.
  • Add melted butter, coconut oil, cumin, cinnamon, and red pepper flakes. Toss to coat potato slices.
  • Mix in the Parmesan cheese.
  • In a greased cupcake tin, stack the sweet potato chips to fill each cup.
  • Bake in preheated oven for 50-55 minutes until tops and edges nicely brown.
  • Remove from oven and top each stack with a marshmallow.
  • Return to oven for 3-5 minutes, watching carefully, until the marshmallows are light brown and have puffed up. Alternatively, broil for 30 seconds.
  • Remove from oven. Carefully pat down each marshmallow to form a nice dome over the stack.
  • Let cool slightly before removing from pan.
  • Enjoy!
