SWEET POTATO AND BACON GRATIN
This savory spin on sweet potatoes with bacon and herbs is baked to cheesy perfection for an indulgent side that's anything but ordinary.

Steps:
- Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
- In 12-inch skillet, cook bacon over medium heat 18 to 22 minutes, stirring occasionally, until crisp. Drain on paper towels. Reserve 1/4 cup bacon for garnish. Reserve 1 tablespoon drippings in skillet.
- Add onion to skillet with drippings; cook over medium heat 5 to 7 minutes or until softened.
- In 5-quart Dutch oven, add whipping cream, broth, cooked onions, thyme, garlic, salt and pepper. Heat to boiling over medium heat. Add sweet potatoes; cook 5 minutes, stirring occasionally.
- In baking dish, layer half of the sweet potato mixture, half of the bacon and 1/2 cup of the Parmesan cheese. Repeat with remaining sweet potato mixture, bacon and Parmesan cheese. Spoon any remaining cream mixture over top. Cover with foil; bake 10 minutes.
- Meanwhile, in small bowl, mix bread crumbs and melted butter. Stir to coat.
- Remove foil; sprinkle bread crumb mixture over top. Bake uncovered 20 to 25 minutes or until potatoes are tender, top is browned and edges are bubbly. Remove from oven; let stand 15 minutes before serving. Garnish with reserved bacon and, if desired, a light sprinkling of chopped fresh thyme.

SWEET POTATO GRATIN INCLUDES CANADIAN BACON/ONIONS
The gratin can be made with either sweet potatoes or yams, which are sliced, cooked and tossed with melted butter and brown sugar. Half of potatoes are arranged in baking dish and topped with caramelized onions and canadian bacon. The remaining potatoes cover the onions, and a coating of fresh bread crumbs, shredded white Cheddar and herbs is the final addition. These can be made a day in advance and are absolutely delicious!

- To prepare Filling, cook sweet potatoes either by steaming them 10 minutes or blanching them in boiling salted water to cover 4 to 5 minutes. (Potatoes should be tender but not mushy.) Remove, pat dry and place in large bowl.
- Melt 2 Tablespoons butter and add to potatoes along with brown sugar. Toss well. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside.
- Melt remaining 2 Tablespoons butter in large heavy skillet over medium heat. When hot, add onions and granulated sugar and cook, stirring often, until until onions are rich brown in color, 20-30 minutes. Season to taste with salt and pepper.
- Coat 9x13 dish with nonstick cooking spray. Place half the potatoes evenly in bottom baking dish. Spread all onions over potatoes. Sprinkle with Canadian bacon. Spread top with remaining potatoes. Pour chicken stock over mixture.
- To prepare Topping, combine bread crumbs, cheese, thyme and sage in bowl. Sprinkle over top. Dot with butter. (Gratin can be prepared 1 day ahead to this point. Cover and refrigerate. Bring to room temperature 30 minutes before baking.)
- Bake, uncovered, at 375F degrees until potatoes are hot and topping is browned, about 30 minutes. Serve warm. Makes 6 to 8 servings.
- NOTE: Sweet potatoes have tan skin and pale yellow, almost golden, flesh, while yams have copper-colored skin and deep orange flesh. Either works well in this recipe

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Grease a baking dish with cooking spray.
- Combine cream, butter, and garlic in a saucepan. Bring to a simmer; remove from heat and mix in parsley, thyme, sage, rosemary, salt, and pepper.
- Arrange 1/2 of the sweet potato slices in the prepared baking dish; cover with 1/2 of the Gruyere cheese. Pour cream mixture on top. Arrange remaining sweet potato slices over the cream. Sprinkle remaining cheese on top.
- Bake in the preheated oven until golden brown and bubbly, about 30 minutes.
