Yukon Gold & Sweet Potato Mash image

Classic mashed potatoes get a nutrient boost with the addition of sweet potatoes. This healthy mashed potato recipe can easily be doubled, just be sure to cook the potatoes in a Dutch oven rather than a large saucepan.

1 pound Yukon Gold potatoes, peeled and cut into 1 1/2-inch chunks
1 pound sweet potatoes, peeled and cut into 1 1/2-inch chunks
½ cup low-fat milk
2 tablespoons butter
1 teaspoon brown sugar
¾ teaspoon salt
¼ teaspoon freshly ground pepper

Steps:

  • Place potatoes and sweet potatoes in a large saucepan and add enough water to cover. Bring to a boil over high heat and cook until very tender when pierced with a fork, 20 to 25 minutes.
  • Drain the potatoes, then mash them in the pot to the desired consistency. Place milk and butter in a small bowl and microwave on High until the butter is mostly melted and the milk is warm, 30 to 40 seconds. (Alternatively, place in a small saucepan and heat over medium until the milk is warm.) Stir the milk mixture, sugar, salt and pepper into the mashed potatoes until combined.

4 large red potatoes, peeled, diced (about 2 pounds)
2 medium sweet potatoes, peeled, diced (about 1 1/2 pounds)
1/4 cup butter or 1/4 cup margarine
1/2 cup milk
1/4 cup sour cream
1/4 cup parmesan cheese, freshly grated
1 tablespoon prepared horseradish
1/4 teaspoon salt, to taste (plus more to season the cooking water)
1/4 teaspoon pepper (to taste)
1/4 teaspoon cinnamon (to taste)
1/8 teaspoon nutmeg, freshly grated

Steps:

  • Bring a large pot of water to a boil, salt to taste, add potatoes and cook until tender, covered, 15-20 minutes or until very tender, lowering heat as needed to keep water from spilling over sides of pot.
  • Drain and place in large bowl.
  • Add butter, milk, sour cream, cheese, horseradish, and all seasonings (to taste), and mash together well.

6 sweet potatoes, peeled and cubed
¾ cup milk
½ cup butter
¾ cup maple syrup

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
  • With an electric mixer on low, blend potatoes, slowly adding milk, about 1/2 a cup at a time. Use more or less to achieve desired texture. Add butter and maple syrup to taste. Blend until smooth. Serve warm.
