¾ pound sweet potato, peeled and diced
1 (9 inch) refrigerated pie crust
¾ cup evaporated skim milk
2 egg whites
¼ cup white sugar
2 tablespoons brown sugar
¾ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
⅛ teaspoon ground cloves
¼ cup halved cranberries

Steps:

  • Place the sweet potato in a saucepan with just enough water to cover. Bring to a boil, and cook until fork tender, about 5 minutes. Drain and mash with a fork or potato masher.
  • Preheat the oven to 425 degrees F (220 degrees C). Divide the pie crust into 24 small balls. Press them into the cups of two 12 cup mini muffin pans to make tartlet shells. Set aside.
  • Spoon the sweet potato into a blender or food processor, and add the evaporated milk, egg whites, white sugar, brown sugar, cinnamon, nutmeg, and cloves. Puree until smooth. Spoon about 1 tablespoon of this mixture into each tart shell.
  • Bake for 10 minutes in the preheated oven, or until a toothpick inserted into one of the tarts comes out clean. Cool in the pans over a wire rack. Garnish each tart with a cranberry half before serving.

1 (12-ounce) can yams or sweet potatoes
2 tablespoons cream cheese, softened (reserved from Whipped Cinnamon Cream Cheese)
2 eggs
1 tablespoon vanilla extract
1/2 teaspoon ground cinnamon
1 teaspoon ground allspice
1/4 cup brown sugar
1/4 cup caramel sauce
1 (8-ounce) block cream cheese (reserve 2 tablespoons for pies), softened
1/4 cup heavy cream
1/2 cup powdered sugar
1 tablespoon ground cinnamon

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the pre-made mini shells inside a greased 24-count mini muffin pan.
  • In a large bowl add the yams, cream cheese, eggs, vanilla, cinnamon, allspice, brown sugar and caramel sauce. Beat with a hand-held electric mixer until well combined. Dollop 2 to 3 tablespoons of the pie mixture into each shell. Bake until the custard sets, about 25 minutes. Remove from the oven and set aside to cool.
  • For the Whipped Cinnamon Cream Cheese:
  • Add the cream cheese, cream, sugar and cinnamon to a large bowl. Using a hand-held electric mixer, beat the cream cheese mixture until you reach a frosting consistency. Transfer the mixture to a disposable pastry bag with a star tip. Pipe a small amount of whipped cream cheese on each mini sweet potato pie. Arrange on a serving platter and serve.

This portable recipe was created by Kathy Patalsky, of Los Angeles. Ms. Patalsky came up with the recipe in college to bring to a family feast. "Since I love Thanksgiving, I didn't want to miss out on any of my favorite dishes," she said. "So instead of bringing multiple dishes and crowding the already crowded dinner table, I made these little gems. I wanted my entire vegan Thanksgiving meal stuffed inside a puffy pita pocket."

1 medium sweet potato, peeled, cooked and mashed
1/4 cup garlic hummus
1 tangerine, peeled and chopped
2 teaspoons maple syrup
1/8 teaspoon black pepper
pinch of salt
1/2 cup onion, chopped
1/2 cup carrot, peeled and chopped
1/2 cup flat leaf parsley, finely chopped
2 pita pockets
Extra virgin olive oil, to brush pitas
1-2 sprigs fresh thyme
1 cup garlic hummus
2 cups Sweet Potato Mash
1/2 cup cranberry sauce
1 cup baby spinach, chopped

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Combine the sweet potato, 1/4 cup hummus, tangerine, maple syrup, black pepper and salt. Mash until completely incorporated, and then fold in the onion, carrot and parsley. Set aside.
  • Brush the pitas with olive oil, sprinkle with a pinch of fresh thyme and slice into four triangular quarters. Arrange pita bread on a baking sheet and bake for 10 minutes. You want the edges to brown and the pitas to lightly toast, yet still stay soft on the inside. Do this right before you are ready to fill your pockets.
  • Open pita and add the following to each pocket - 1 teaspoon garlic hummus, 2 tablespoons sweet potato mash, 1 tablespoon cranberry sauce, a tablespoon of spinach. Close the pitas and return to baking sheet. Continue until all the pita triangles are assembled.
  • Warm stuffed pitas in oven for another 5 to 10 minutes before serving to lock in the flavors. Serve warm.

1 tablespoon cinnamon

Steps:

  • In a medium-sized bowl, combine all filling ingredients until smooth. Set aside.

  • Using a cup or a cookie cutter, cut 4-inch (10 cm) circles from the pie crust.
  • Scoop about 2 tablespoons of the potato mixture into half of the cut-out crusts.
  • Using the other half of the circles, place them on top of the circles that have potatoes on them. Press the edges down with a fork to seal. Brush with egg wash.
  • Bake 400°F (200°C) for 20 minutes or until golden brown.
  • Sprinkle with powdered sugar.

This recipe is taken from "the ultimate GULLAH cookbook", a book about the African American Gullah people, a taste of Food, History and Culture from the Gullah people of southeastern USA. I have slightly embellished the original recipe to put the sweet potatoe into a pastry to be a finger food vegetable. These pocket pies will be served at the Northside Farmers Market JuneteenthFest. A great tasting food combining USA's low country cooking and Australia Pocket Pies. Options are to combine sweet potatoes with a can of sliced small white potatoes. Pies are less sweet and more like a side vegetable. Or put any other vegetables you'd like to combine with sweet potatoes-bell peppers, hot chili's, leeks, etc.

3 large sweet potatoes
1/4 lb butter, softened
1/2 cup light brown sugar
1/2 cup granulated sugar

Steps:

  • Wash potatoes and leave peelings on.
  • Place in pot, cover with water, bring to a boil, boil until slightly tender, about 10-15 minutes.
  • Remove from heat and water, let cool 30 minutes.
  • Start to preheat oven to 375°F.
  • Remove peelings with edge of spoon, either thinly slice or mash potatoes with backside of a large spoon.
  • Spray a regular cupcake pan with non stick spray for baking.
  • Line each cupcake hole with pie crust (use a round cookie cutter or upside down glass to cut the dough in circle).
  • Fill pasty to 1/4 inch of top with slices or mashed potato.
  • Combine sugar, spices, evaporated milk and water in a jar with a lid. Shake to blend well and cover sweet potatoes with the blend. Place a "dollop" of butter (about 2 teaspoons) on top of each pie.
  • Bake for 40 minutes at 375°F.

1/2 cup heavy cream
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin

1 sheet frozen puff pastry, thawed
Reserved cooked chicken from Six-Ingredient Chicken Noodle Soup, cut into bite-size pieces (2 cups)
1 large egg, lightly beaten
1 pound green beans, trimmed

Steps:

  • Preheat oven to 400 degrees. In a medium bowl, mash sweet potatoes with a fork or potato masher. Add cream, coriander, and cumin; stir to combine. Season with salt and pepper.
  • On a floured work surface, roll out puff pastry to a 12-inch square and cut into 4 squares. Divide sweet-potato mixture among bottom halves of squares, leaving a 1/2-inch border. Top each with 1/2 cup chicken and brush edges of squares with some egg. Fold top halves of squares over filling to make a triangle, then crimp edges with a fork. 2 teaspoons salt
2 cups shortening
2/3 cup water
2 large eggs, room temperature

1-1/2 teaspoons lemon juice
1/2 teaspoon salt

  • In a large bowl, combine flour and salt; cut in shortening until mixture resembles coarse crumbs. Combine water, eggs and vinegar; gradually add to dry ingredients, tossing with a fork until a ball forms. Cover and chill until easy to handle, 1 to 1-1/2 hours., Meanwhile, place sweet potato in a small saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook just until tender, 10-15 minutes. Drain. , In a large skillet, combine the sugar, butter and potatoes; cook and stir until syrup is golden brown, 15-20 minutes. Cooked, shredded turkey (optional)
Prepared mashed potatoes (optional)

Steps:

  • Preheat oven to 375 degrees. Line a baking sheet with parchment paper and set aside.
  • Working with one disk of dough at a time, roll out dough on a lightly floured work surface. Using an overturned bowl about 5 inches in diameter as a guide, cut out three circles; set aside. Gather dough scraps, reroll, and repeat cutting process. Repeat process with remaining disk of dough.
  • For each pocket pie, mix together a 1/4 cup of filling using turkey, mashed or sweet potatoes, stuffing, and/or cranberry sauce as desired. Place each 1/4 cup filling on one side of each dough circle. Moisten edges lightly with water and fold dough over filling to form a half circle. 1/2 cup/100 grams granulated sugar

1/2 cup/120 milliliters unsweetened full-fat coconut milk, well shaken
1 teaspoon dark rum or vanilla extract
