CHRISSY TEIGEN'S SWEET CHILI AND MUSTARD GLAZED SALMON FILLETS

Steps:
- Position rack 4-6 inches from the heating element and preheat the broiler.
- Season salmon all over with salt and pepper. In a small bowl stir together the Thai sweet chili sauce, sambal oelek, and mustard.
- Pour the mixture into a large cast-iron skillet. Set skillet over medium-high heat until the mixture boils.
- Lay the salmon skin side up, in the sauce. Cook the salmon until it turns pale pink about 2 minutes, then move the skillet to the oven and broil
- until the skin gets crispy about 3-4 minutes.
- Remove the salmon from the oven and place on a serving platter pour the sauce from the skillet over the salmon.
- Add 1/4 cup of water to the skillet and cook over high heat, stirring and scraping until the sauce thickens. Pour the sauce from the skillet onto the salmon. Note***( I skipped this step and just spooned the sauce from the skillet but it's in Chrissy's recipe so it's optional) Serve immediately.

- Sprinkle one side of salmon fillets with Creole seasoning. In a large skillet, cook salmon, seasoned side down, in oil over medium-high heat for 2 minutes. Turn salmon; reduce heat to medium and cook until fish just begins to flake easily with a fork, 8-10 minutes. , Meanwhile, in a small bowl, combine salsa and preserves. Serve with salmon.

- Heat 1/4 teaspoon olive oil in a small skillet over medium-high heat. Saute garlic in hot oil until just beginning to brown.
- Mix sauteed garlic, soy sauce, lemon juice, honey, 1/2 teaspoon olive oil, brown sugar, sea salt, black pepper, and red pepper flakes together in a bowl; pour into a large resealable plastic bag. Add salmon fillets, turning to coat with the marinade, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
- Remove salmon from the marinade and shake to remove excess liquid. Reserve 3 tablespoons marinade and discard remainder.
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Arrange salmon fillets in the hot skillet, pour reserved marinade over the salmon, and place a lid on the skillet; cook until salmon is browned on each side and flakes easily with a fork, occasionally spooning liquid from the pan over the fillets, 2 to 3 minutes per side. Garnish salmon with additional sea salt and black pepper.

SWEET AND SOUR SALMON

- Preheat the oven to broil and position the oven rack to the top rack. Line a baking sheet with foil and spray with non stick cooking spray. Place the salmon filets skin side down on the prepared baking sheet, set aside.
- In a small saucepan combine soy sauce, vinegar, sugar, thai chili sauce, garlic and cornstarch. Bring to a simmer and whisk constantly until the sauce has thickened.
- Brush half of the sauce on top the salmon filets. Place in the oven and broil for 8-10 minutes or until the salmon is fully cooked, brushing the remaining sauce on top halfway through cooking. If the salmon starts to get too brown move the rack down some.
- Once the salmon has cooled a bit remove the skin and serve immediately with green onions and sesame seeds for garnish, if desired.

- Place salmon in a shallow dish or zip-lock bag. Mix marinade and pour over salmon.
- Marinade for 30 minutes to 2 hours in the fridge. Heat broil to high.
- Cover a cookie sheet pan with foil and coat with a non stick spray.
- Place fillet on foil with marinade drizzle over them. Place in oven on top rack.
- Broil for 3-4 minutes flip and broil 3-4 more minutes brushing glaze once flipped.
- Plate fillets and drizzle honey on top.

- Whisk or blend together vinegar, soy sauce, sugar, garlic powder, sambal oelek, and cayenne (if using).Marinate salmon flesh-side down in sauce for at least 30 minutes, or overnight. (Refrigerate while marinating.)
