CINNAMON PEANUT BRITTLE
I made this sweet, peanut-packed candy for Christmas and sent some with my husband to work. His co-workers liked it so much they asked for more. It has a lovely glossy look and the cinnamon is a delightful surprise. You've got to try this peanut butter brittle recipe. -Grace Miller, Mansfield, Ohio

Steps:
- In a 2-qt. microwave-safe bowl, combine sugar and corn syrup. Heat, uncovered, on high for 3 minutes; stir. Heat 2-1/4 minutes longer. Stir in peanuts, butter and cinnamon. , Microwave, uncovered, on high until mixture turns a light amber color (mixture will be very hot), 20-30 seconds. Quickly stir in baking soda and vanilla until light and foamy. , Immediately pour onto a greased baking sheet and spread with a metal spatula. Refrigerate until firm, about 20 minutes; break into small pieces. Store in an airtight container.

- Butter a cookie sheet. Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 4 minutes. Stir in peanuts and microwave on high 3 1/2 minutes more, then stir in butter and vanilla and microwave for 1 1/2 minutes.
- Stir in baking soda until light and foamy. Pour onto cookie sheet and spread thin. Cool completely and break into pieces and serve.

Steps:
- Spray a baking sheet and a wooden spoon with cooking spray.
- Mix sugar and corn syrup together in a microwaveable bowl safe for high temperatures.
- Heat sugar mixture in microwave on high for 5 minutes.
- Stir peanuts and butter into sugar mixture. Heat in microwave until mixture becomes a caramel color, 3 to 4 minutes.
- Mix baking soda and vanilla extract into syrup until smooth and foam has dissipated. Spread candy onto the prepared baking sheet using the sprayed wooden spoon. Work quickly; candy hardens fast. Let stand until cool. Break into pieces to serve.

Steps:
- This recipe is for 900 watt microwave. For variation use a guide of same ingredients and adjust cooking time to 45-50 seconds per 100 watts of your microwave.
- Grease or butter a cookie sheet (TIP) Spray measuring cup with pam to measure corn syrup and spray spatula also to spread on cookie sheet.).
- in 2 quart bowl or casserole dish add sugar, nuts, syrup and salt, mix until most of sugar is combined. Cook on high for 7 minutes. (should be bubbly and peanuts golden).
- Stir in butter, vanilla and cinnamon, cook on high 3 more minutes.
- Quickly, stir in baking soda until foamy (don't over stir, it needs to stay hot to spread).
- Pour onto greased cookie sheet and spread out. Sprinkle gently (or more to taste) with Kosher salt and let cool for 1 hour. Break apart into peices and store in airtight container. (freezes well in ziploc bag for several months).

SWEET PEANUT BRITTLE
To make HOT-sweet brittle, stir in 1 t. hot pepper sauce into candy along with vanilla. All this is done in the microwave. Wonderful, wonderful!!

Steps:
- Spray a large baking sheet or a 10x15 inch baking pan with cooking spray.
- Set aside.
- Mix sugar and corn syrup in large microwaveable bowl until moistened.
- Microwave on high 5 minutes (caution, candy mixture gets very HOT).
- Stir in butter and peanuts.
- Microwave an additional 3-4 minutes or until pale golden brown.
- Add baking soda and vanilla (mixture will foam).
- Immediately spread mixture as thinly as possible onto prepared baking sheet.
- Cool completely.
- Break into pieces.
- Microwave chocolate in 1 cup glass measuring cup on high 1-2 minutes.
- Stir until chocolate is completely melted.
- Stir in peanut butter until melted.
- dip half of peanut brittle pieces halfway into chocolate mixture, scraping back brittle against edge of cup to remove excess chocolate.
- Place on sheet of parchment paper.
- Refrigerate until chocolate is set, about 20 minutes.
