- Rub four 8-ounce filets mignons with Pepper-Ancho Rub on one side; drizzle with vegetable oil. Grill rub-side down over high heat, about 4 minutes; flip, reduce the heat to medium or move the steaks to a cooler spot and grill 4 more minutes (for medium-rare), brushing often with Mint Glaze (recipe below). Top with more glaze.
- Whisk all of the ingredients in a bowl.
- Whisk the mustard, honey, horseradish and mint in a bowl; season with salt and pepper. Set aside a few tablespoons for the finished steaks.

- Heat sesame oil in a large skillet over medium-high heat; cook and stir steak in hot oil until browned, about 5 minutes. Transfer meat to a plate and return skillet to stovetop. Cook and stir broccoli, snap peas, carrots, and bell pepper in the same skillet used to cook beef until vegetables start to become tender, 5 to 7 minutes. Transfer vegetables to the plate with the meat; return skillet to stovetop.
- Stir wine, honey, dark soy sauce, and red pepper flakes into skillet, scraping up any browned bits from the bottom of the skillet. Stir beef and vegetables into wine mixture; simmer and stir until wine sauce is reduced, about 10 minutes.

- Preheat the oven to 400 degrees F. Put the sweet potatoes in a microwave-safe bowl with 2 tablespoons water. Cover loosely with plastic wrap and microwave until fork-tender, 10 minutes. Combine the sugar and 1 teaspoon each paprika and salt; rub on the steak. Let sit 5 minutes.
- Heat 1 tablespoon olive oil in a large cast-iron skillet over medium-high heat. Add the steak and sear until browned, about 3 minutes per side. Transfer the skillet to the oven; cook 7 more minutes for medium rare. Transfer the steak to a cutting board and let rest 5 minutes before slicing. Return the skillet to medium-high heat. Add the jalapeno brine and scrape up any browned bits. Stir in the butter; set aside.
- Meanwhile, heat a separate large skillet over medium-high heat. Add the remaining 2 tablespoons olive oil, the sweet potatoes, bell pepper, the remaining 1 teaspoon smoked paprika and 1/2 teaspoon salt. Cook, stirring, until the sweet potatoes are browned, about 5 minutes. Add the jalapenos, scallions and parsley and cook 2 more minutes. Serve with the steak and reserved pan sauce.

SWEET AND SPICY GRILLED FLANK STEAK
There are some steaks that need nothing more than a little salt and pepper to bring out their beefy goodness. Flank steak is not one of them. This bold marinade is just the sort of seasoning the brawny cut begs for: lime juice and zest add brightness, brown sugar sweetness, and jalapeño and sriracha a complex heat. This sauce is sweet and spicy, and can be thick or thin depending on how long you cook. **I discovered that you can substitute half ketchup for half the Worcestershire to cut the heat. Thats the way my DH prefers it, but I still love it spicy.

SWEET AND SALTY GRILLED STEAK WITH CUCUMBER SALAD
The marinade on this steak is inspired by a classic Vietnamese dipping sauce called nuoc cham. Since it consists mostly of pantry staples - Asian fish sauce, brown sugar and garlic - all you need to pick up on the way home are some fresh limes and jalapeño. Nuoc cham works as a salad dressing, too. Here we drizzle it on crisp cucumbers and radishes, but sliced ripe tomatoes work just as well. You could serve it as it is with the salad on the side, or put everything on top of a bed of rice noodles or rice for a more substantial meal.

- In a small bowl, combine the fish sauce, lime zest, lime juice, brown sugar, garlic and jalapeño. Pour 1/2 of the mixture over the flank steak and let marinate at room temperature for at least 30 minutes (or refrigerate for up to 24 hours). Let meat come to room temperature before cooking if necessary.
- Combine the cucumber, radishes and scallions. Pour in just enough of the marinade sauce to coat.
- Light the grill or heat the broiler to high. Pat steak dry with paper towels.
- If grilling, cook until done to taste, about 3 minutes per side for rare. If broiling, heat a 10-inch skillet over high heat for 5 minutes. Add oil to pan and sear the meat for 2 minutes. Flip meat and immediately transfer pan directly to top shelf of oven and broil for 2 to 3 minutes for rare, or longer for more well-done meat. Transfer steak to a cutting board and let rest for 10 minutes covered in foil.
- Thinly slice steak and serve over cooked rice noodles or rice if desired, and top with the cucumber salad. Garnish with sesame seeds and plenty of herbs if using and serve with remaining marinade as a sauce.

- Simply mix all ingredients together in the pan you plan to marinade your steaks in. Swirl your finger in the marinade before you add your steaks to determine if you'd like to add more of anything.
- Poke your thawed steaks with a fork 5 times on each side, this will help it soak up the marinade. Then add your steaks to the sweet marinade.
- I let my steaks marinade on each side for 4 hours, for a total of 8 hours. My boyfriend let's his steaks sit on one sided over night and then the other side while he's at work the next day. So depending on your time and preference of flavour you can marinade for 4-48 hours.
- Cook you're steaks on the barbie or in the oven how you usually would. For extra flavor you can sprinkle some of your favourite steak seasoning before cooking or eat it with bbq sauce after cooked!
STEAK WITH ROASTED SWEET ONIONS IN BALSAMIC VINEGAR
This is one of my favorite flavor combinations. Perfect for a romatic meal (with leftovers) or for a fancy barbeque with your favorite friends! Prep time includes marinating the steaks overnight.

- Prepare steak: Marinate the steak overnight in the refrigerator with the garlic, rosemary, olive oil and soy sauce.
- Season with salt and pepper.
- Prepare onions: Peel the onions and slice them 3/4-inch thick.
- In heavy saute pan, heat olive oil over medium heat.
- Arrange onion disks in pan in a single layer so they all touch the bottom.
- Cook for 6 to 8 minutes without turning, until brown on one side.
- Add sugar, salt and pepper.
- Turn the onion disks over without separating them.
- Cook on the other side for 6 to 8 minutes.
- When brown, add half the vinegar and reduce until nearly evaporated.
- Stir the onions, separating them into rings.
- Add remaining vinegar to the pan and cook until almost evaporated.
- Remove onions from pan and allow to cool.
- Season the steaks with salt and pepper, and grill on both sides to desired doneness (about 8 minutes total for medium rare).
- Slice steak and arrange on plate, garnished with the onions.
