- 1. Preheat oven to 375°F (190°C). 2. With sharp knife, score top of Brie in criss-cross pattern cutting just through the rind. Do not cut through the edge. Place in glass pie plate. Spread jelly over top all the way to edge. Sprinkle with pecans, then brown sugar. 3. Bake in centre of oven for 20 minutes. Cool for 5 to 10 minutes before serving in pie plate with sliced baguette or crackers. SWEET BRIE
This is a very elegant appetizer. Make sure to 'gently' pat down the brown sugar (perhaps sprinkling would be better). The first time I made it I was not gentle and the crust was much to hard (but still delicious). Some reviewers have suggested using less sugar which sounds like a good option. You be the judge. Either way, it's sure to be a hit at your next get together.

Steps:
- Preheat broiler.
- Place Brie in 10-inch quiche dish or other oven-proof dish or pie plate and sprinkle with nuts.
- Cover top and sides with sugar, patting gently with fingertips (do not be concerned if sides are not fully covered).
- Broil on lowest rack until sugar bubbles and melts, about 3 minutes (cheese should retain its shape).
- Serve immediately with crackers.

Steps:
- Preheat oven to 350°F.
- Cut brie cheese in half across the middle horizontally and set top half aside.
- Spread out the puff pastry sheet and roll it to an 1/8 of an inch thick.
- Place the bottom half of the brie onto the puff pastry.
- Smear the jelly on top.
- Sprinkle the almonds all over jelly.
- Place the top half of the brie back on the wheel.
- Wrap dough up and over the top of the brie, beginning with the corners.
- Carefully turn over the pastry covered wheel, smooth side up and place on baking sheet.
- Sealed, wrapped edges should all be down on the baking tray.
- Bake for 15 minutes or until golden brown.
- Serve with assorted crackers.
- Looks great garnished with a dollop of jelly, a pepper or champagne grapes when using a wine jelly in place of the pepper jelly!

This habanero honey sweet corn cake is spicy, sweet, savory, dense, moist, and very addictive! I also had no idea what to call this, as it's not really a cake, but it's also not a pie, or a pudding, or a custard, so I ended up with "cake" since it's inspired by sweet Mexican corn cake. No matter what you call this, it's phenomenal! Garnish with fresh fruit and top with crème fraiche, sour cream, Mexican crema, or whipped cream and freshly grated lime zest.

- Preheat the oven to 350 degrees F (175 degrees C). Generously butter a 9-inch pie dish.
- Combine fresh corn kernels, habanero pepper, eggs, water, and honey in a bowl. Puree with an immersion blender until almost smooth. Add flour, melted butter, cornmeal, salt, and baking powder; whisk until combined.
- Transfer mixture into the greased pie dish. Shake gently to settle mixture into the dish.
- Bake in the center of the preheated oven until golden brown and a wooden skewer inserted into the center of the cake comes out clean, 45 to 55 minutes. Let cool until warm or room temperature before serving.
