HERB SWIRL BREAD
This pretty and palate-pleasing bread is a nice alternative to garlic bread. I make it whenever we have lasagna or spaghetti, which is quite often! -Laura Dix, Sylacauga, Alabama

- In a large bowl, combine 1-1/2 cups flour, sugar, yeast and salt. In a saucepan, heat the water and oil to 120°-130°. Add to dry ingredients; beat until well blended. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., In a small bowl, combine the butter, parsley, chives, garlic powder and seasoned salt. Punch dough down; turn onto a lightly floured surface. Roll into a 15x12-in. rectangle. Spread filling to within 1 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seam to seal., Grease a baking sheet and sprinkle with cornmeal. Place loaf seam side down on prepared pan. With a sharp knife, make several shallow diagonal slashes across top of loaf. Cover and let rise in a warm place until doubled, about 1 hour. , Bake at 375° for 30-35 minutes or until golden brown. Remove from pan to a wire rack to cool.

Stir in enough remaining flour to form a soft dough (dough will be sticky). , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. Meanwhile, in a small bowl, combine filling ingredients; set aside., Punch down dough; divide in half. Turn onto a lightly floured surface. Roll each portion into a 12x8-in. rectangle. Spread filling over each to within 1/2 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seams to seal and tuck ends under. , Place seam side down in two greased 8x4-in. loaf pans. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 375° for 35-40 minutes or until browned. Cool for 10 minutes before removing from pans to wire racks.

GARLIC AND HERB PULL APART BREAD

Steps:
- In a small bowl, mix the warm water, yeast and 1 teaspoon of the sugar. Set aside for about 5 minutes until the mixture starts to thicken and bubble slightly. (If the mixture does not start to thicken and bubble slightly, the yeast is not working. Check the expiration date on the yeast and start over.)
- In the bowl of a stand mixer fitted with the paddle attachment, stir together the egg, oil, salt and remaining 1/2 cup sugar until well combined. Mix in the cold water followed by the boiling water. Add the yeast mixture to the mixing bowl and stir until well blended. Add the flour and stir until it comes together into a shaggy dough, about 1 minute. Replace the paddle attachment with the dough hook and continue to knead until mostly smooth, about 3 minutes.
- Add the garlic, 2 tablespoons of the parsley and 1 tablespoon of the chives to the dough. Continue to knead until the dough is smooth and elastic, another 3 minutes, adding in the extra 1/2 cup flour or more as needed so the dough isn't too sticky. Transfer the dough to a large, oiled bowl. Cover with plastic wrap and let it rise in a warm spot until doubled in size, about 3 hours.
- Line an 8-inch round cake pan or baking dish with a sheet of parchment, allowing the excess paper to hang over the edges of the pan. Place a 2-to-3-inch biscuit cutter, sharp side down, in the center of the pan or dish and set aside.
- Mix the melted butter with the remaining 2 tablespoons parsley and 1 tablespoon chives in a large bowl. Cut the dough into strips and then cut each strip into 1-inch pieces. Roll a piece into a ball and transfer it to the bowl with the butter, turning to coat completely. Transfer it to the cake pan. Repeat with the remaining dough and butter mixture, surrounding the biscuit cutter completely with the balls. Drizzle any remaining butter from the bowl over the top. Cover and let rise for 1 1/2 hours at room temperature.
- Preheat the oven to 350 degrees F. Sprinkle the balls with the Parmesan. Place the pan of dough onto a baking sheet and bake until the top is golden brown and crisp, 35 to 40 minutes. Remove from the oven and let rest for 5 minutes.
- While the bread is resting, in a small saucepan, heat the marinara and half-and-half until it is warm. Transfer to a bowl for dipping. Transfer the bread to a serving platter with the side sprinkled with Parmesan facing up. Remove the biscuit cutter. Serve immediately with the creamy tomato dipping sauce.
FRENCH HERB SWIRL BREAD
I've had this recipe since I was a pre-teen. It's on a yellowed sheet of paper that is worn thin. The heading reads "Old World Breads Made Easy" - (Pillsbury, Around the World with Easy Recipes). I remember making it when I was a young teen (12 or 13) and though I hadn't mastered breads by any means, I remember it being very good. It was one of the first breads I made from scratch all by myself. I've been searching for this recipe for so, so many years and I just found it. I'm soooo happy! I plan to make it again!

- In a larg mixer bowl, combine 1 1/2 cups flour, yeast, sugar, and salt.
- To a saucepan, add the buttermilk, water and butter. Warm over low heat until warm (120-130 degrees F). (Butter does not need to melt).
- Add warm liquid over flour mixture. Blend at low speed until moistened; beat for 3 minutes at medium speed. By hand, stir in 1 - 1 1/2 cups of the remaining flour to form a sticky dough.
- Remove dough from mixer bowl to a floured surface. Knead adding 1/2 - 1 cup of flour until dough is smooth, pliable and no longer sticky (about 5 minutes).
- Place dough in a lightly greased bowl; cover. Let rise in a warm place (such as a bowl over warm water) until light and doubled in size; about 1 hour.
- FILLING: Combine ingredients in a small saucepan over low heat; stirring constantly until butter is melted. Set aside.
- Once dough has doubled in size, punch it down.
- Knead several times to remove air bubbles.
- For one large loaf: roll or pat dough into a 16 x 18-inch rectangle. Spread filling (at room temperature) evenly over dough, leaving a 1-inch edge on all sides.
- Roll up tightly starting at long edge, jelly-roll style. Pinch edges and sides of dough to seal.
- For 2 small loaves: cut dough in half and follow remaining directions (except for the size of rectangle) as for the large loaf.
- Place loaves (or single loaf) seam side down on greased cookie sheet(s). Cover and let rise in a warm place until doubled in size.
- Bake in a preheated 350 degree F. for 40 - 50 minutes or until golden brown. Immediately remove from oven.
- If desired brush loaves with melted butter after baking; sprinkle with parsley. Serve warm.

- In the bowl of a stand mixer, combine the milk, yeast, honey, eggs, 3 1/2 cups flour and salt. Using the dough hook, mix until the flour is completely incorporated, about 4-5 minutes. Add 2 tablespoons room temperature butter and mix until combined, about 2-3 minutes more. If the dough is still sticky, add the additional 1/2 cup flour, adding more as needed until the dough is smooth to touch.
- Cover the bowl with plastic wrap and let sit at room temperature for 1 hour or until doubled in size.
- Meanwhile, combine the remaining 4 tablespoons butter, garlic, Parmesan, basil, sage and thyme in a small bowl.
- Punch the dough down and roll out onto a lightly floured surface, creating a large rectangle about 12 x 18 inches. Spread the garlic herb butter evenly over the dough. Starting with the long edge closest to you, roll the dough into a log, keeping it fairly tight as you go. When you reach the edge, pinch along the edge to seal.

- Add ingredients to mixing bowl or bowl you will use to mix if you are doing the process by hand. Start with only 2 1/2 cups of the all purpose flour though. You will want to add any extra gradually after mixing for a few minutes. This is a straight dough method, which means you add everything in at once to mix. It is so simple to do!! Also, I am using instant yeast on this one, so you don't need to activate the yeast, just throw it in with other ingredients. Now, mix for at least 1-2 minutes before you decide about adding more flour. You will want the dough to be tacky (slightly sticky), but not overly sticky. It is a partial wheat loaf, so it will absorb more moisture than an all white bread. Continue to mix, adding flour as needed fro about 6-8 minutes. I like to mix on a medium speed on my mixer. If you are mixing by hand, it is the same concept. I always mix for 8-10 minutes when I mix by hand. Cover dough and allow to rise in a warm place until the dough is doubled. Mine took abou
- Mix all ingredients. I did mine in the food processor, then I didn't have to cut up any of the herbs. If you would prefer to mix by hand, that is great. Just make sure and finely chop the herbs first. Same thing if you are mixing with a hand mixer.
