SYLVIA'S EASY GREEK SALAD



Sylvia's Easy Greek Salad image

This is a quick and easy salad to prepare and it's a healthy meal when served with chicken or fruit.

¾ cup red bell pepper, chopped
¾ cup chopped green bell pepper
1 cup cucumber - peeled, seeded and chopped
1 tomato, chopped
½ cup diced red onion
4 large black olives, quartered
½ cup crumbled feta cheese
½ cup vegetable oil
2 teaspoons white wine vinegar
salt to taste

Steps:

  • In a large bowl, combine the red bell pepper, green bell pepper, cucumber, tomato, red onion, and olives.
  • Whisk together the oil and vinegar. Before serving add the oil and vinegar, feta cheese and salt. Toss together and serve.

1 1/2 cups cooked or canned black-eyed peas
3/4 cup chopped green bell pepper
1/2 cup chopped celery
1/2 cup chopped red onion
1/4 cup chopped onion
1/4 cup vegetable oil
1/4 cup sugar
2 tablespoons cider vinegar
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon hot sauce

Steps:

  • In a large bowl, combine the black-eyed peas, green pepper, celery, and both onions.
  • In a small bowl, combine the oil, sugar, vinegar, garlic, salt, black pepper, and hot sauce. Pour the dressing over the peas. Toss. Let stand refrigerated overnight for the flavors t

Ooey gooey good! Never a leftover. You can also add finely chopped onions, soy sauce, etc.

8 pounds pork spareribs
3 cups ketchup
1 cup barbeque sauce
1 cup brown sugar
2 ½ tablespoons lemon juice
2 teaspoons Worcestershire sauce
1 dash hot pepper sauce, or to taste
3 tablespoons steak sauce, (e.g. Heinz 57)
2 cloves garlic, minced

Steps:

  • Place the ribs in a large stock pot with enough water to cover. Bring the water to a boil and cook over medium-high heat for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In medium saucepan, combine ketchup, barbeque sauce, brown sugar, lemon juice, Worcestershire sauce, hot pepper sauce, steak sauce and garlic; blend well. Cook the sauce over medium heat for approximately 20 minutes. (Please note that the above ingredients are all to taste. Use more or less of anything you like. I never make the ribs the same way twice!)
  • Cut the ribs between the bones and place in a baking pan. Pour sauce over ribs, cover and cook for 30 minutes. Remove foil and continue cooking for an additional 30 minutes.

2 (12 ounce) packages tri-color spiral pasta or 2 (12 ounce) packages curly pasta
18 -24 ounces girard's italian romano cheese dressing or 18 -24 ounces champagne dressing
2 large chicken breasts, boned, cooked and cubed
1 (8 ounce) jar pimientos, diced
2 (12 ounce) cans large black olives (sliced)
1 (4 ounce) can hearts of palm (Sliced)
1 lb cooked baby shrimp
2 tablespoons capers (optional)
fresh parsley, chopped

Steps:

  • Cook, drain and cool pasta.
  • Mix all ingredients in a bowl, after the salad has been mixed for a couple of hours taste and add more salad dressing if you want more.
  • *** If you have someone who's allergic to shrimp leave out or serve the shrimp in a separate dish. Thaw shrimp and marinate in salad dressing and serve along side the pasta salad.

Found in a community Cookbook, and made variations to fit our tastes. It is a hit with all the family. This is the best salad to take on picnics. Best made the day before, as the flavors blend so nicely. This recipe easily multiplies for larger groups.

2 cups cooked macaroni
1 cup chopped ham (leftover ham or canned ham)
2 tablespoons chopped green onions
2 tablespoons chopped radishes
2 tablespoons chopped celery
2 tablespoons sweet gherkins
2 hard-boiled eggs, diced
2 tablespoons chopped cheddar cheese or 2 tablespoons colby cheese
1 -1 1/2 cup mayonnaise
1 teaspoon dried dill weed or 1 teaspoon fresh dill weed

Steps:

  • Cook macaroni.
  • Drain and rinse well, and then chill.
  • Combine rest of ingredients and mix well with macaroni.
  • Season to taste.
  • Note: I also have found that adding either packaged dry dill or ranch dressing really adds wonderful flavor, but has to be made early, so flavors meld.
  • Just add the dry dressing to the mayonnaise.

These are the real thing. People come from around the corner, around the city, and around the world to eat these ribs at Sylvia's. The secret? Tangy, not too sweet barbecue sauce and a special way of preparing the ribs that's described here.

3 1/2 lbs spareribs
1 1/2 teaspoons salt
1/2 teaspoon black pepper, freshly ground
1/2 teaspoon red pepper flakes, crushed
2 -3 cups white wine vinegar
16 ounces Red Devil Hot Sauce
2 1/2 teaspoons crushed red pepper flakes
1 small onion, sliced
1 stalk celery, sliced
3 cups tomato puree
1 1/2 cups water
1 1/2 cups sugar
1 lemon, sliced

Steps:

  • To make the ribs easier to handle, cut each slab between the middle bones into 2 equal pieces.
  • Rub the salt, black pepper, and red pepper into both sides of the ribs.
  • Place the ribs in a deep baking dish, cover them, and refrigerate overnight. Preheat the oven to 450F.
  • Pour the vinegar over the ribs and bake 1 1/2 hours.
  • Rotate the ribs two or three times during baking and spoon some of the pan juices over them.
  • Remove the ribs from the baking dish and place in a single layer on baking sheets.
  • (Line the baking sheets with aluminum foil for easy cleanup.) Bake at 450 F for 1 hour.
  • The ribs should be tender and well browned.
  • This much can be done up to a day in advance. Cool the ribs, cover tightly, and refrigerate. Bring to room temperature for about 1 hour before continuing.
  • To finish the ribs, preheat the oven to 400 F.
  • Cut the slabs between the bones into individual ribs.
  • Place the ribs in a baking dish large enough to hold them comfortably.
  • Spoon enough of the barbecue sauce over them to coat lightly.
  • Cover the pan with aluminum foil and bake until heated through, about 20 minutes. Serve with additional barbecue sauce on the side.
  • BARBECUE SAUCE Ruth developed this recipe because she found most barbecue sauces too vinegary or bitter, and it's the secret to our popular ribs.
  • Simple to prepare and absolutely delicious, once made and strained it keeps for quite a while, at least a month.
  • Combine all the ingredients in a heavy pot and heat just till hot. Don't bring to a boil or the sauce will turn dark and become thin.
  • Cool the sauce to room temperature, strain it, and store it in a tightly covered jar in the refrigerator.

This is an amazing salad and an old family recipe from my MIL. This one is special...I promise! Once you try it, you'll be hooked. I'm not too keen on mayonnaise but I LOVE this salad. In the summer, you can make it with garden vegetables. If you're like me, you'll be tempted to leave out the sugar - don't! It brings out the flavor and juices of the veggies and transforms the dressing. Note: Cooking time is chill time.

2 large tomatoes, ripe
1 large cucumber (I use English Cucumbers, Yum)
4 -5 green onions
4 tablespoons mayonnaise
3 teaspoons apple cider vinegar
1 teaspoon sugar
1 tablespoon dill weed
1/2 teaspoon salt
1 teaspoon pepper

Steps:

  • Peel and cut cucumbers in very thin slices.
  • Cut tomatoes into cubes.
  • Slice green onions in 1/4 inch sized pieces.
  • Put vegetables in salad bowl and add remaining ingredients, toss thoroughly.
  • Let salad sit in refrigerator for 20 minutes before serving to allow flavors to combine. The salad will have a nice juice to it and tastes especially good with rice.
