My Mexican grandmother would use leftover corn tortilla chips in our meatloaf and everyone loved it! They all wanted seconds along with the recipe. A delicious Mexican-American comfort food.

1 ½ pounds lean ground beef
1 cup crushed tortilla chips
¾ cup shredded pepper Jack cheese
1 small onion, chopped
1 (1 ounce) packet taco seasoning mix
2 eggs, beaten
½ cup milk
¼ cup mild red taco sauce, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
  • Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.
  • Press mixture into a 9x5-inch loaf pan and top with a strip of taco sauce down the center.
  • Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

1 pound ground beef
1 pound ground pork
2 cups shredded sharp Cheddar cheese
1 ½ cups crushed corn chips
1 cup salsa
1 egg
1 (1 ounce) packet taco seasoning mix
salt and ground black pepper to taste
¼ cup taco sauce, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine ground beef, ground pork, Cheddar cheese, corn chips, salsa, egg, taco seasoning mix, salt, and pepper in a large bowl; mix until well combined. Form mixture into 12 equally-sized balls and press into a 12-cup muffin tin. Baste each "muffin" with taco sauce to coat.
  • Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let cool 5 minutes before serving.

1 cup tomato sauce
2 teaspoons honey
1 tablespoon white vinegar
1 tablespoon Club House® Taco Seasoning
1 tablespoon olive oil
¼ cup yellow onion, minced
1 clove garlic, minced
2 lb lean ground beef
¼ cup bread crumbs
1 packet Club House® Taco Seasoning
2 large eggs, beaten
nonstick cooking spray, for greasing
12 small flour tortillas
guacamole
salsa
shredded cheese
sour cream

Steps:

  • Make the taco sauce: In a medium bowl, whisk together the tomato sauce, honey, vinegar, and Club House® Taco Seasoning until smooth. Set aside.
  • Make the meatloaf muffins: Preheat the oven to 180°C (350°F).
  • Heat olive oil in a medium pan over medium-high heat. Add the onion and sauté for 4-5 minutes, until softened and starting to brown. Add the garlic and sauté for another minute, until fragrant. Remove the pan from the heat.
  • Add the ground beef to a large bowl with the cooked onion and garlic, bread crumbs, Club House® Taco Seasoning, eggs, and ½ cup taco sauce. Mix until well combined.
  • Divide the beef mixture into 12 4-ounce balls.
  • Grease a muffin tin with nonstick spray. Gently press the tortillas into each muffin cup, making mini bowls. Place a meatloaf ball in each bowl and top each with 1 teaspoon taco sauce.
  • Bake the meatloaf muffins for 30 minutes, or until the internal temperature of the beef reaches 70°C (160°F). Let the muffins cool in the tin for 5 minutes.
  • Remove the muffins from the tin. Serve with guacamole, salsa, shredded cheese, and sour cream for topping.

1/2 cup dry bread crumbs
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1/4 cup barbecue sauce
1-1/2 pounds lean ground beef (90% lean)
3 tablespoons ketchup
Additional ketchup, optional

Steps:

  • Preheat oven to 375°. Mix the first 5 ingredients. Add beef; mix lightly but thoroughly. Press about 1/3 cupful into each of 12 ungreased muffin cups., Bake 15 minutes. Brush tops with 3 tablespoons ketchup; bake until a thermometer reads 160°, 5-7 minutes. If desired, serve with additional ketchup. , Freeze option: Bake meat loaves without ketchup; cover and freeze on a waxed paper-lined baking sheet until firm. Transfer meat loaves to an airtight freezer container; return to freezer. To use, partially thaw in refrigerator overnight. Place meat loaves on a greased shallow baking pan. Spread with ketchup. Another good one from Toronto Chef Michael Bonacini. Not your ordinary meat loaf, its great with his Macaroni & Cheese and a green vegetable for a "retro" dinner!!!!

1 1/2 lbs ground beef
1 1/4 cups finely chopped onions
1 cup breadcrumbs
2/3 cup ketchup
1 dash hot sauce
1 dash Worcestershire sauce
2/3 cup finely chopped fresh parsley
3 large eggs, lightly beaten
1/2 teaspoon thyme
1 teaspoon salt
1/2 teaspoon pepper
barbecue sauce, for glaze

Steps:

  • Combine all ingredients in a large bowl& mix until well blended- do not over mix.
  • Place a 2 inch wide parchment strip across each mould of the muffin tin, coming up from each side by about 2 inches.
  • This will be used for unmoulding after they are cooked.
  • Using an ice cream scoop or a large spoon, generously fill each section of the muffin tin with meat, rounding the top to obtain a muffin shape.
  • Brush with BBQ sauce& bake in a preheated 350F oven for 15- 20 mins (or until meat thermometer reaches 160F), brushing occasionally with more BBQ sauce.

2 large eggs, lightly beaten
1 cup cooked brown rice
1 medium onion, grated
1/2 cup shredded Monterey Jack cheese
1/4 cup dry bread crumbs
1/4 cup grated Romano cheese
1/4 cup tomato sauce
1 envelope taco seasoning
2 garlic cloves, minced
1/2 teaspoon pepper
3 pounds ground turkey
TOPPING:
1 cup tomato sauce
1/2 cup shredded Monterey Jack cheese
1/4 cup grated Romano cheese

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 10 ingredients. Add turkey; mix lightly but thoroughly. Shape into two 7-1/2 x 4-1/2-in. loaves. Place in a greased shallow baking pan., Bake 1 hour. Mix together topping ingredients; spread over loaves. Bake until a thermometer reads 165°, 10-15 minutes longer.
