2 -3 tilapia fillets (about 3/4 pound)
salt
fresh ground black pepper
1 jalapeno pepper
3 garlic cloves
1 tablespoon grated ginger
2 tablespoons soy sauce
1/4 cup white wine
1 teaspoon spicy sesame oil
1/3 cup chopped cilantro
green onion, chopped for garnish
extra cilantro, to garnish
jasmine rice or brown rice

Steps:

  • Heat the oven to 475 degrees.
  • Pat the fish dry and season lightly with salt and pepper. Place in a glass baking dish.
  • Place in a small food processor the jalapeno, garlic and ginger along with the soy sauce, white wine, sesame oil and cilantro. Process until blended.
  • Pour the sauce over the fish, spreading and slightly pressing the solid ingredients down into the fish. Bake for about 8 minutes or until the fish flakes easily and is cooked through.
  • Remove the tilapia with a spatula and divide between two plates. Drizzle the fish with the marinade juices left in the pan. Serve with jasmine or brown rice.

Four 6-ounce pieces tilapia fillet
1/4 teaspoon kosher salt, plus more for seasoning
1/2 cup light reduced-fat coconut milk
1/2 cup cilantro leaves, plus more for garnish
1 teaspoon peeled chopped fresh ginger
1/2 teaspoon garam masala
2 garlic cloves
1/2 jalapeno pepper, seeded and chopped
3 cups cooked brown rice, for serving

Steps:

  • Preheat the oven to 425 degrees F. Spray a 9-by-13-inch baking pan with canola oil spray. Sprinkle the fish with the salt and place it in the pan.
  • Combine the coconut milk, cilantro, ginger, garam masala, garlic and jalapeno in a blender and pulse until fairly smooth. Pour the mixture over the fish. Bake until the fish is just opaque in the center, about 15 minutes. Garnish with more cilantro and serve with the rice.

1/3 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground cumin, divided
4 tilapia fillets (6 ounces each)
1 tablespoon olive oil
1/2 cup reduced-sodium chicken broth
2 tablespoons minced fresh cilantro
1 teaspoon grated lime zest
2 tablespoons lime juice

Steps:

  • In a shallow bowl, mix flour, salt, pepper and 1/4 teaspoon cumin. Dip fillets in flour mixture to coat both sides; shake off excess., In a large nonstick skillet, heat oil over medium heat. Add fillets; cook, uncovered, 3-4 minutes on each side or until fish flakes easily with a fork. Remove and keep warm., To the same pan, add broth, cilantro, lime zest, lime juice and remaining cumin; bring to a boil. Reduce heat; simmer, uncovered, 2-3 minutes or until slightly thickened. Serve with tilapia.

3 tablespoons olive oil
4 (4 ounce) tilapia fillets, fresh
2 tablespoons garlic salt
2 tablespoons cajun seasoning
black pepper, to taste
1 bunch cilantro

Steps:

  • Preheat oven to 375.
  • Coat the bottom of a baking dish with olive oil.
  • Place the tilapia fillets in the pan.
  • Sprinkle desired amount of garlic salt, cajun seasoning, and pepper over tilapia pieces.
  • Press several sprigs of cilantro on top of each piece.
  • Bake tilapia for 8 to 12 minutes.
  • Enjoy alone or with lemon!

  • Place the jalapenos, garlic, ginger, soy sauce, wine or stock, sesame oil and cilantro in a blender or food processor. Pulse or process until blended. I prefer this finely processed but you can really leave it as coarsely or finely chopped as you like. Pour the sauce over the fish. Rub the sauce into the fish lightly.
  • Bake for 8-10 minutes until the fish flakes easily and is cooked through (it's ok if it is slightly gelatinous still). Using a spatula, scoop the fish out of the pan and place on a plate or platter. Drizzle some of the sauce over the top and serve immediately.
