Taco Stuffed Shells made with jumbo pasta shells, salsa, cheese and taco meat are the perfect EASY meal that you can prepare ahead of time!

12 ounces jumbo pasta shells
1 pound ground beef
1 packet taco seasoning
2/3 cup water
1 1/2 cups jarred salsa (, divided)
1 cup shredded cheddar cheese (, divided)

Steps:

  • Preheat the oven to 350 degrees.
  • Cook the pasta shells in a pot according to the directions on the box and drain.
  • Add the ground beef to the pot and brown well.
  • Drain the fat.
  • Add the taco seasoning and water, stir and cook until water is gone.
  • Stir in 1 cup salsa and 3/4 cup cheese.
  • Scoop into the jumbo pasta shells and top with the remaining salsa and cheese.
  • Bake in a covered pan for 15 minutes.

12 ounces jumbo pasta shells ((about 44 shells))
2 pounds lean ground beef ((at least 85% lean))
1 poblano pepper ((diced))
1/2 cup onion ((white or red))
15 ounces black beans (1 can) ((rinsed and drained))
20 ounces Rotel Mexican tomatoes
2 packages taco seasoning ((about 4 tablespoons))
15.5 ounces salsa ((or picante sauce) (divided))
4 cups shredded cheddar cheese ((divided))

Steps:

  • Preheat the oven to 350º Fahrenheit. Spray a 9x13 pan with cooking spray. Spread 1/2 cup of the salsa in the bottom of the pan.
  • Set a pot of water to boil. Cook the shells as the box suggests.
  • While the shells are cooking, heat a skillet over medium heat. Brown the ground beef, poblano pepper and onion together until the meat is totally cooked and the onion is translucent.
  • Drain off any fat.
  • Add the rinsed and drained beans, Rotel (with juice), taco seasoning and 2 cups of cheddar cheese. Mix well.
  • Drain the stuffed shells and rinse them with cool water so you can handle them.
  • Stuff each shell with the ground beef mixture. The beef mixture filled about 44 shells, which was a whole 12 ounce box.
  • As you fill the shells, place them in the prepared pan.
  • Top the shells with the remaining salsa, then sprinkle with the remaining 2 cups of cheese.
  • Cover the baking pan with foil. Bake for 20 minutes covered, then 10 minutes uncovered or until the shells are heated through.

Traditional stuffed shells meets the taco and the result is this Mexican Stuffed Shells casserole! Beef filled, taco seasoned, creamy, cheesy casserole that is bound to be a favorite with all!

1 lb ground beef (or turkey)
2 tbsp taco seasoning (see recipe below)
4 oz cream cheese
8 oz jumbo pasta shells
10 oz red enchilada sauce
1 cup salsa
1 cup cheddar cheese, shredded
1/2 cup mozzarella cheese, shredded
sour cream, avocado, tomato, lettuce (optional as toppings)

Steps:

  • In a large pot, boil water and cook pasta shells according to directions on box. Drain and rinse with cold water. Set aside.
  • Preheat oven to 350 degrees.
  • In a medium skillet, cook beef over medium high heat until no longer pink. Drain fat.
  • Add in the taco seasoning and mix well.
  • Stir in the cream cheese until combined.
  • In a medium bowl, combine the salsa and enchilada sauce.
  • To prepare casserole, pour half the enchilada/salsa mixture into the bottom of a 9 x 13 baking pan.
  • Stuff each cooked pasta shell with about 1 tbsp of beef mixture and place stuffed shell in baking pan.
  • Continue until all shells have been stuffed and pan is lined with shells.
  • Pour remaining sauce on top of stuffed shells evenly.
  • Cover pan with alumium foil and place pan in oven to cook for 30 minutes.
  • Remove foil and sprinkle both cheeses on top.
  • Return pan to oven for an additional 10 minutes, or until cheese is melted.
  • Serve with toppings of choice or as is! Enjoy!

1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
1 cup water
1 (16 ounce) can refried beans
¾ cup shredded Cheddar cheese
1 (16 ounce) jar salsa, divided
¼ cup sliced green onion
¼ cup shredded Cheddar cheese
½ cup sour cream

Steps:

  • Bring a large pot of water to a boil over high heat. Stir in the shell pasta, and return to a boil. Cook the pasta uncovered, until just slightly firm to the bite, about 13 minutes. Drain well.
  • Brown the ground beef in a large skillet; drain fat. Stir in the taco seasoning and water; cook over low heat until thickened, about 5 minutes. Stir the refried beans and 3/4 cup Cheddar cheese into the taco meat. Spoon meat mixture into prepared pasta shells.
  • Spoon 1/4 cup salsa over the bottom of a 9x13 inch baking dish. Arrange filled shells over salsa. Spoon remaining salsa over shells.
  • Bake in preheated oven for 40 minutes. Remove from oven; sprinkle with sliced green onion and 1/4 cup shredded Cheddar cheese. Serve with sour cream.

36 jumbo pasta shells
1 pound lean ground beef
1 cup water
1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 cup shredded Cheddar cheese
1 (4 ounce) can chopped green chiles
1 (8 ounce) can tomato sauce
¾ cup picante sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, 8 to 10 minutes. Drain well.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add water and taco seasoning mix and simmer until thickened, about 5 minutes.
  • Stir refried beans, Cheddar cheese, and green chiles into ground beef; cook and stir until cheese is melted and mixture is smooth, about 5 minutes. Fill shells with beef mixture.
  • Combine tomato sauce and picante sauce in a saucepan over medium-low heat; cook and stir until heated through, 5 to 7 minutes. Spread 1/2 cup sauce in the bottom of a 9x13-inch baking dish.
  • Arrange stuffed shells side-by-side in the baking dish and top with remaining sauce. Cover dish with aluminum foil.

15 taco shells, broken up, or more to taste
2 cups shredded Cheddar cheese

The frozen shells are so convenient, because you can take out only the number you need for a single-serving lunch or family dinner. 2 pounds ground beef
2 envelopes taco seasoning
1-1/2 cups water
1 package (8 ounces) cream cheese, cubed
24 uncooked jumbo pasta shells
1/4 cup butter, melted
ADDITIONAL INGREDIENTS (for each casserole):
1 cup salsa
1 cup taco sauce
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1-1/2 cups crushed tortilla chips
1 cup sour cream
3 green onions, chopped

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in cream cheese until melted. Transfer to a bowl; cool. Chill for 1 hour., Cook pasta according to package directions; drain. Gently toss with butter. Fill each shell with about 3 tablespoons of meat mixture. Place 12 half of shells in a freezer container. Cover and freeze for up to 3 months. , To prepare remaining shells, spoon 1 cup salsa into a greased 9-in. square baking dish. Top with remaining stuffed shells and 1 cup taco sauce. Cover and bake at 350° for 30 minutes. Uncover; sprinkle with 1 cup each of cheeses and 1-1/2 cups chips. Bake 15 minutes longer or until heated through. Serve with sour cream and onions. , Freeze option: To use frozen shells, thaw in the refrigerator for 24 hours (shells will be partially frozen). 1 (1 1/4 ounce) package taco seasoning (can use low-sodium)
1 (4 ounce) package cream cheese
14 -16 large pasta shells
1 cup salsa
1 cup taco sauce (NOT enchilada sauce)
1 cup cheddar cheese, shredded
1 cup monterey jack cheese, shredded
1 1/2 cups tortilla chips, crushed (optional)
3 green onions, chopped
1 cup sour cream

Steps:

  • Preheat oven to 350°.
  • In a frying pan cook ground beef; add taco seasoning and prepare according to package directions. Add cream cheese, cover and simmer until cheese is melted. Blend well. Set aside and cool completely.
  • While the ground beef is cooking, cook the pasta shells according to directions; drain. Set shells out individually on baking sheet so that they don't stick together.
  • Pour salsa on bottom of a 9×13 inch baking dish. Stuff each shell with the meat mixture placing shells in dish open side up. Cover shells with taco sauce. Cover with foil and bake for 30 minutes.
  • After 30 minutes, add shredded cheese and crushed tortilla chips; bake for 10-15 more minutes, with the foil removed. Top with green onions and serve with sour cream and/or more salsa.

20 baked tortilla chip scoops, coarsely crushed

  • Preheat oven to 350°. Cook pasta according to package directions. Drain and rinse in cold water; drain again., Meanwhile, in a large skillet, cook and crumble beef over medium-high heat until no longer pink, 6-8 minutes.
