EASY TAMALE CASSEROLE



Easy Tamale Casserole image

My mom liked to make the Hamburger Helper® version of this recipe. When I moved to another state, I could not find it, so I came up with this. Memories of home. My hubby likes for me to spice this up sometimes, so I will use a 14-ounce can of tomatoes and green chiles in it or just use a Mexican-style cornbread mix sometimes.

1 pound ground beef
½ teaspoon salt
½ teaspoon ground black pepper
1 small onion, chopped
2 (15 ounce) cans pinto beans, rinsed and drained
2 (15 ounce) cans crushed tomatoes
1 (15 ounce) can cream-style corn
1 (6 ounce) box cornbread mix
1 egg, lightly beaten
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat a cast-iron skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Season beef with salt and pepper.
  • Stir onion into the ground beef; cook and stir for 1 minute and immediately remove skillet from heat.
  • Stir pinto beans and crushed tomatoes into the beef mixture.
  • Beat cream-style corn, cornbread mix, and egg together in a bowl until smooth; spread over the top of the ground beef mixture in the skillet. Sprinkle Cheddar cheese over the corn mixture.
  • Bake in preheated oven until the cheese is melted and the cornbread is set in the middle, about 25 minutes.

1 cup Old El Paso™ Thick 'n Chunky salsa (any variety)
1 can (4.5 oz) Old El Paso™ chopped green chiles
1/2 cup whole kernel corn
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 1/2 cups shredded Cheddar cheese (6 oz)
1 pouch (6.5 oz) Betty Crocker™ cornbread & muffin mix
Make it FRESH toppings, as desired (see below)

Steps:

  • Heat oven to 350°F. Spray 8-inch (2-quart) glass baking dish or pan with cooking spray.
  • In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Sprinkle with taco seasoning mix; stir. Stir in salsa, chiles, corn, beans and 1 cup of the cheese.
  • Meanwhile, make cornbread & muffin mix batter as directed on pouch. Stir in remaining cheese. Pour beef mixture into baking dish; spread batter on top.
  • Bake 30 to 35 minutes or until cornbread topping is golden brown. Cool 5 minutes. Cut into 3 rows by 3 rows; serve with Make it FRESH toppings.

1 package (8-1/2 ounces) cornbread/muffin mix
1 can (4 ounces) chopped green chiles
1/3 cup 2% milk
1/4 cup shredded Mexican cheese blend
TOPPING:
2 cups coarsely shredded cooked chicken
1 can (10 ounces) enchilada sauce
1 teaspoon ground cumin
1/2 teaspoon onion powder
1-3/4 cups shredded Mexican cheese blend
Optional: Chopped green onions, tomatoes and avocado

Steps:

  • Preheat oven to 400°. In a large bowl, combine the first 6 ingredients; stir just until dry ingredients are moistened. Transfer to a greased 13x9-in. baking dish. Bake until light golden brown and a toothpick inserted in center comes out clean, 15-18 minutes., In a large skillet, combine chicken, enchilada sauce, cumin and onion powder; bring to a boil, stirring occasionally. 1 (15 ounce) can tamales
2 tablespoons flour
1 teaspoon chili powder
1/4 teaspoon garlic salt
1/4 teaspoon salt
3 eggs, beaten
1 (17 ounce) can creamed corn
1/2 cup pitted ripe olives, sliced
1/2 cup sharp cheddar cheese, shredded

Steps:

  • Drain and unwrap tamales. Reserve the sauce.
  • Slice tamales crosswise. In mixing bowl combine the tamale sauce, flour, chili powder, garlic salt, and salt. Add eggs, corn, olives, and sliced tamales.
  • Turn into a 10 X 6 X 22 baking dish. Bake uncovered, in a 350º oven for 40 minutes or until set.
  • Sprinkle with cheese. Bake 3 minutes more or until the cheese is melted.
  • Cut into squares to serve.

2 bunches green onions, chopped
8 ounces shredded Cheddar cheese
3 cups crushed tortilla chips
2 (16 ounce) cans chili without beans
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Unwrap tamales and cut into thick chunks. Place a portion of the chopped tamales in the bottom of a 2 quart casserole dish. Then layer the onions, cheese, tortilla chips and chili without beans.
  • Repeat this until all ingredients are used, topping off with cheese and chips. Then sprinkle with the water.
  • Bake, uncovered, at 350 degrees F (175 degrees C) for 40 to 45 minutes.
