Ground cumin adds a smoky Tex-Mex taste to this savory beef-and-corn pie.

4 flour tortillas (10-inch)
1 tablespoon olive oil, plus more for pan
1 medium onion, chopped
1 1/2 teaspoons ground cumin
1/4 teaspoon red-pepper flakes
Coarse salt and ground pepper
2 tablespoons tomato paste
1 pound ground beef sirloin
3 garlic cloves, minced
1 package (10 ounces) frozen corn kernels
3 packed cups loose baby spinach (about 5 ounces), torn into pieces
2 cups (8 ounces) shredded Monterey Jack cheese
Fresh cilantro sprigs, for garnish (optional)
Sour cream (optional)

Steps:

  • Preheat oven to 400 degrees. Using a paring knife, trim tortillas to fit a 9-inch springform pan (use the removable bottom of the pan as a guide). Assemble pan with the bottom upside down; lightly oil bottom and sides. Set aside.
  • In a large skillet, heat oil over medium. Add onion, cumin, and red-pepper flakes; season with salt and pepper. Cook until onion has softened, 3 to 5 minutes. Stir in tomato paste. Raise heat to medium-high; add beef and garlic. Cook, breaking up meat with a spoon until no longer pink, 4 to 6 minutes. Add corn and spinach; stir until spinach has wilted, about 2 minutes.
  • Place one tortilla in the prepared pan. Spreading evenly, top with 1 1/2 packed cups beef mixture, then 1/2 cup cheese. Repeat with two more layers. Top with last tortilla, and sprinkle with remaining 1/2 cup cheese.
  • Bake pie until top is lightly browned, 15 to 20 minutes. Run knife around edge of pan; remove sides. Using two wide metal spatulas, lift pie from bottom of pan, and transfer to a cutting board. Cut into wedges. If desired, serve with cilantro and sour cream.

1 1/2 pounds ground beef (85 percent lean)
1 medium onion, finely chopped
1 clove garlic, minced
Kosher salt
2 tablespoons tomato paste
1 1/2 tablespoons chili powder
1/2 teaspoon ground cumin
1 1/2 cups green or red enchilada sauce
1 cup canned black beans, rinsed and drained
1 cup frozen corn kernels, thawed
1/4 cup chopped fresh cilantro
1 1/2 cups shredded Monterey Jack cheese
3 cups self-rising cornmeal
2 1/2 to 3 cups buttermilk
2 tablespoons corn oil
4 scallions, chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a 10-inch cast-iron skillet over medium-high heat. Add the beef, onions, garlic and 1 teaspoon salt and cook, stirring and breaking up any clumps with a wooden spoon, until the meat is brown and the onions are softened, about 6 minutes. Add the tomato paste, chili powder and cumin and cook, stirring, about 1 minute. Stir in the enchilada sauce, beans, corn and cilantro and season with salt. Bring to a simmer. Remove from the heat and sprinkle with the cheese.
  • Add the cornmeal to a mixing bowl. Mix in the buttermilk and oil. You want the mixture to be thick but pourable. Stir in the scallions. Pour on top of the meat mixture in the skillet and spread in an even layer. Bake until the meat is bubbling and the cornbread is golden brown, 20 to 25 minutes.

1 cup salsa, divided
2 cloves garlic, minced

2 cups shredded reduced-fat Cheddar cheese
1 cup salsa

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large bowl, mash pinto beans. Stir in 3/4 cup salsa and garlic.
  • In a separate bowl, mix together 1/4 cup salsa, cilantro, black beans and tomatoes.
  • Place 1 tortilla in a pie plate or tart dish. Spread 3/4 cup pinto bean mixture over tortilla to within 1/2 inch of edge. Top with 1/4 cup cheese, and cover with another tortilla. 1 medium onion, chopped
1 can (8 ounces) tomato sauce
1 garlic clove, minced
1 tablespoon chili powder

1 tablespoon butter
6 corn tortillas (6 inches)
2 cups shredded cheddar cheese
1/4 cup water

Steps:

  • In a large skillet, cook beef and onion until meat is no longer pink; drain. Add the tomato sauce, garlic, chili powder, salt, pepper and, if desired, olives. Bring to a boil. Reduce heat; simmer for 5 minutes or until thickened. , Lightly butter tortillas on one side; place one tortilla, buttered side down, in a 2-qt. round casserole. Top with about 1/2 cup meat mixture and 1/3 cup cheese. Repeat layers, ending with cheese., Pour water around the sides of casserole (not over top). 1 (14 1/2 ounce) can Mexican-style tomatoes, drained or 1 (14 1/2 ounce) can Italian-style diced tomatoes

3/4 cup part-skim ricotta cheese
1/4 cup shredded part-skim mozzarella cheese
3 tablespoons minced fresh cilantro, divided or 3 tablespoons minced fresh parsley

This is an easy recipe and a "cheater". Throw it all in the crock pot for dinner when you get home or in a stock pot to simmer. Works great either way and my family loves this.

2 (15 ounce) cans pinto beans, rinsed (you can use an equal amount of cooked dry beans)
2 (10 1/2 ounce) cans cream of chicken soup
2 (10 ounce) cans old el paso red enchilada sauce
4 boneless skinless chicken breasts
2 tablespoons oil
1 (7 ounce) can sliced black olives
2 garlic cloves, crushed
2 cups chicken broth or 2 cups water
shredded cheddar cheese
sour cream (optional)
tortilla chips (Juanita's Tortilla chips have the best texture for this)

Steps:

  • Cut chicken into cubes and cook in 2 Tbsp of oil in a frying pan, when almost done, add garlic. Saute with garlic until chicken is completely done.
  • Pour all cans of ingredients into crock pot or stock pot with chicken/garlic mixture. Drain olives before putting in with other ingredients.
  • Add the two cups chicken broth or water.
  • Stir soup until all ingredients are combined.
  • Cook for 2 hours on med-low in stock pot on the stove or 7 hours on low in a crock pot.
  • Add more water or chicken broth for desired consistency.
  • When ready to serve, crush tortilla chips and sprinkle with shredded cheese over individual servings of soup.
  • Add sour cream if desired.
  • This recipe can easily be increased or decreased as desired. All measurements are estimates as I usually just "throw it all in", but this is the closest to my normal routine.

Number Of Ingredients 12

1/2 lb lean ground beef or 1 (330 g) package vegetarian ground beef
1/2 cup chopped white onion
1/2 cup chopped green pepper
1 -2 jalapeno pepper (sliced)
1 1/4 cups enchilada sauce
1 (8 ounce) can refried beans (I use the one with chiles)
4 8-inch flour tortillas
2 cups cheddar cheese
1 cup mozzarella cheese
1 cup salsa (mild, medium or hot)
1 cup guacamole
1 cup sour cream

Steps:

  • Fry the ground beef in a medium-sized skillet.
  • Add the onion, green pepper and jalapeno once the ground beef is light gray.
  • Shred the cheese and mix the two cheeses together.
  • Make sure the beef is cooked thoroughly and then turn off the heat and stir in 1 cup enchilada sauce.
  • Put one tortilla on the bottom of a non-stick 8" cake pan.
  • Spread half of the refried beans evenly on the tortilla.
  • Sprinkle 1/4 of the cheese on top and then cover it with a tortilla.
  • Spread the beef mixture on top and then cover it with a 1/4 of the cheese.
  • Add another tortilla, cover it with the rest of the refried beans and 1/4 of the cheese.
  • Add the last tortilla.
  • Spread 1/4 cup enchilada sauce evenly on top.
  • Add the rest of the cheese.
  • Cook at 350 degrees for 20-25 minutes or until your pie is hot and bubbly.
  • Cut into quarters.
  • Let diners add their own combination of sour cream, salsa, and guacamole on top.
