Ground cumin adds a smoky Tex-Mex taste to this savory beef-and-corn pie.

Steps:
- Preheat oven to 400 degrees. Using a paring knife, trim tortillas to fit a 9-inch springform pan (use the removable bottom of the pan as a guide). Assemble pan with the bottom upside down; lightly oil bottom and sides. Set aside.
- In a large skillet, heat oil over medium. Add onion, cumin, and red-pepper flakes; season with salt and pepper. Cook until onion has softened, 3 to 5 minutes. Stir in tomato paste. Raise heat to medium-high; add beef and garlic. Cook, breaking up meat with a spoon until no longer pink, 4 to 6 minutes. Add corn and spinach; stir until spinach has wilted, about 2 minutes.
- Place one tortilla in the prepared pan. Spreading evenly, top with 1 1/2 packed cups beef mixture, then 1/2 cup cheese. Repeat with two more layers. Top with last tortilla, and sprinkle with remaining 1/2 cup cheese.
- Bake pie until top is lightly browned, 15 to 20 minutes. Run knife around edge of pan; remove sides. Using two wide metal spatulas, lift pie from bottom of pan, and transfer to a cutting board. Cut into wedges. If desired, serve with cilantro and sour cream.
TAMALE PIE
Steps:
- Preheat the oven to 400 degrees F.
- Heat the oil in a 10-inch cast-iron skillet over medium-high heat. Add the beef, onions, garlic and 1 teaspoon salt and cook, stirring and breaking up any clumps with a wooden spoon, until the meat is brown and the onions are softened, about 6 minutes. Add the tomato paste, chili powder and cumin and cook, stirring, about 1 minute. Stir in the enchilada sauce, beans, corn and cilantro and season with salt. Bring to a simmer. Remove from the heat and sprinkle with the cheese.
- Add the cornmeal to a mixing bowl. Mix in the buttermilk and oil. You want the mixture to be thick but pourable. Stir in the scallions. Pour on top of the meat mixture in the skillet and spread in an even layer. Bake until the meat is bubbling and the cornbread is golden brown, 20 to 25 minutes.

- Preheat oven to 400°. In a large skillet, cook and crumble beef with onion and garlic over medium heat until no longer pink, 4-6 minutes. Stir in spices and tomatoes. Bring to a boil; remove from heat. In a small bowl, mix ricotta cheese, mozzarella cheese and 2 tablespoons cilantro., Place 1 tortilla in a 9-in. round baking pan coated with cooking spray. Looks like a pie, cuts like a pie, and tastes like a little bit of Southwestern heaven. This casserole is made from pinto and black beans layered with tortillas and cheese. Picante sauce gives it just the right kick. You can replace the Cheddar cheese with Monterey Jack if you like.

- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, mash pinto beans. Stir in 3/4 cup salsa and garlic.
- In a separate bowl, mix together 1/4 cup salsa, cilantro, black beans and tomatoes.
- Place 1 tortilla in a pie plate or tart dish. Spread 3/4 cup pinto bean mixture over tortilla to within 1/2 inch of edge. Top with 1/4 cup cheese, and cover with another tortilla. Spread with 2/3 cup black bean mixture, and top with 1/4 cup cheese. Repeat layering twice. Cover with remaining tortilla, and spread with remaining pinto bean mixture and cheese.
- Cover with foil, and bake in preheated oven for about 40 minutes. Cut into wedges, and serve with salsa and sour cream.

- In a large skillet, cook beef and onion until meat is no longer pink; drain. Add the tomato sauce, garlic, chili powder, salt, pepper and, if desired, olives. Bring to a boil. Reduce heat; simmer for 5 minutes or until thickened. , Lightly butter tortillas on one side; place one tortilla, buttered side down, in a 2-qt. round casserole. Top with about 1/2 cup meat mixture and 1/3 cup cheese. Repeat layers, ending with cheese., Pour water around the sides of casserole (not over top). - In a nonstick skillet, cook beef with onion and garlic until meat is no longer pink; drain.
- Stir in tomatoes, chili powder and cumin.
- Bring to a boil; remove from heat.
- In a bowl, combine the ricotta, mozzarella and 2 tbsp cilantro (or parsley.
- Place 1 tortilla in a greased 9 inch round cake pan. Layer with half of the meat sauce, 1 tortilla, all of the ricotta mixture, another tortilla and the remaining meat sauce.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and bell pepper in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Stir tomatoes, tomato sauce, corn, olives, chili powder, garlic, cumin, salt, red pepper flakes, and black pepper into the skillet. Bring to a low boil, about 5 minutes. TANYA'S YOU "CAN" DO IT CHICKEN TORTILLA SOUP
This is an easy recipe and a "cheater". Throw it all in the crock pot for dinner when you get home or in a stock pot to simmer. Works great either way and my family loves this.

- Cut chicken into cubes and cook in 2 Tbsp of oil in a frying pan, when almost done, add garlic. Saute with garlic until chicken is completely done.
- Pour all cans of ingredients into crock pot or stock pot with chicken/garlic mixture. Drain olives before putting in with other ingredients.
- Add the two cups chicken broth or water.
- Stir soup until all ingredients are combined.
- Cook for 2 hours on med-low in stock pot on the stove or 7 hours on low in a crock pot.
- Add more water or chicken broth for desired consistency.
- When ready to serve, crush tortilla chips and sprinkle with shredded cheese over individual servings of soup.
- Add sour cream if desired.
- This recipe can easily be increased or decreased as desired. All measurements are estimates as I usually just "throw it all in", but this is the closest to my normal routine.

A pie stuffed with Mexican goodness! When I made this I got one piece and my boyfriend ate the rest... it's just as easy to make two pies and then you have some for lunch the next day!

Steps:
- Fry the ground beef in a medium-sized skillet.
- Add the onion, green pepper and jalapeno once the ground beef is light gray.
- Shred the cheese and mix the two cheeses together.
- Make sure the beef is cooked thoroughly and then turn off the heat and stir in 1 cup enchilada sauce.
- Put one tortilla on the bottom of a non-stick 8" cake pan.
- Spread half of the refried beans evenly on the tortilla.
- Sprinkle 1/4 of the cheese on top and then cover it with a tortilla.
- Spread the beef mixture on top and then cover it with a 1/4 of the cheese.
- Add another tortilla, cover it with the rest of the refried beans and 1/4 of the cheese.
- Add the last tortilla.
- Spread 1/4 cup enchilada sauce evenly on top.
- Add the rest of the cheese.
- Cook at 350 degrees for 20-25 minutes or until your pie is hot and bubbly.
- Cut into quarters.
- Let diners add their own combination of sour cream, salsa, and guacamole on top.
