The Best Grilled Chicken For Tacos, Burritos, or Salads image

Charred and Tender grilled or chicken spiced with a special blend of homemade taco seasoning can be grilled or cooked in a skillet on the stove-top. It's delicious in tacos, burritos, on salads, or for meal-prep!

1 pound Boneless, Skinless chicken thighs or breasts (we prefer thighs )
2 cloves garlic (minced)
1 tablespoon lime juice (optional)
1 tablespoon olive oil
1 tablespoons chili powder
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon black pepper
1 teaspoon corn starch (optional)

Steps:

  • Add the chicken, garlic, olive oil, lime, spices, and cornstarch to a large bowl or zip-seal bag.
  • Place in fridge and let marinate for at least 15-30 minutes or up to 24 hours.
  • Remove chicken from marinade and discard marinade. Place chicken on a grill or pan heated to medium-high heat. Let chicken cook until it is no longer pink on the inside, about 6-7 minutes per side (or until it has reached an internal temperature of 165 degrees F).
  • Serve chicken in tacos, burritos, on salads or rice.

A melange of peppers, corn, black beans, and onions are stir-fried with fajita-style chicken strips in this warm salad served on a bed of romaine and topped with a sprinkling of cheese with Southwestern seasonings.

2 tablespoons canola oil
2 cups frozen pepper stir-fry blend (green, red, yellow pepper and onions)
½ cup whole-kernel corn, frozen
1 (9 ounce) package frozen fajita-style chicken strips, thawed
¼ cup black beans, drained
1 (10 ounce) bag romaine lettuce blend
½ cup prepared ranch dressing
1 cup Borden® Shred Medleys™ Southwestern Style Shredded Cheese, seasoned according to package directions

Steps:

  • HEAT oil in large skillet; add pepper blend, corn and chicken; stir-fry over medium-high heat until moisture has evaporated and mixture is heated, stirring often. Add beans and toss to blend; reserve.
  • ARRANGE lettuce blend on serving platter or 4 plates.
  • TOP with grilled chicken mixture, dressing and seasoned cheese.

  • Smash garlic under the flat side of a chef’s knife on your cutting board. Add anchovies, if using, chile, and a couple of pinches of salt and continue smashing with the side of your knife until a paste forms. (You can also do this with a mortar and pestle.) Transfer paste to a large bowl and stir in tomato paste, oregano, and 3 Tbsp. oil. Add chicken and toss to coat. Let sit at room temperature 1 hour.
  • Meanwhile, prepare a grill for medium heat. Clean and oil grate. Grill chicken, turning once, until lightly charred and cooked through, about 4 minutes per side.
  • While the chicken is cooking, grill lemons, cut side down, until lightly charred and starting to caramelize, about 4 minutes. Transfer to a platter.
