- Preheat oven to 350°. Place the first 5 ingredients in a large bowl. Combine the remaining ingredients; drizzle over chicken mixture. Toss to coat. Transfer to a 15x10x1-in. baking pan., Bake, uncovered, until chicken juices run clear, 55-60 minutes.

TARA'S SWEET AND CHUNKY CHICKEN SALAD
A sweet, but healthy chicken salad. The sweet secret is dried cranberries. Awesome on homemade bread or on crackers. I spread cream cheese on the bread or crackers, and top with chicken salad.

- Without breaking up large chicken pieces, empty canned chicken into medium bowl. Stir in mayonnaise, pickle, onion, sunflower seeds, and cranberries; mix until well blended and very large chicken chunks are broken up.

- In a large bowl, combine the first 6 ingredients. Add chicken; toss to coat., Arrange olives, apricots and plums on the bottom of a 4- or 5-quart slow cooker. Add 1/4 cup water; top with chicken. Cook, covered, on low until chicken is tender, 5-6 hours. If desired, serve with rice.

TARA'S CHICKEN LITTLE FINGERS
These have to marinate overnight to let the flavors meld. They are so worth the time. This is another recipe I learned when I was knee-high to the microwave. Most of the ingredients you already have in the cupboard ('cept buttermilk)Please try it and let me know your thoughts!

Steps:
- Preheat oven to 350 degrees.
- Cut chicken into 1/2" strips.
- Combine next 9 ingredients; add chicken and mix well.
- Cover and chill overnight.
- Drain chicken.
- Combine breadcrumbs and sesame seeds.
- Toss chicken to coat.
- Place chicken in baking dish; pour melted butter over top.
- Bake at 350 degrees for 35 to 40 minutes (or till juices run clear).

Steps:
- In a bowl add chicken pieces, a few squirts of lemon juice, salt, pepper, cumin and oregano (to taste). In a cuisinart, chop up onion and garlic until semi-fine and add to chicken. Cover and let marinate for atleast 1/2 hour. Once marination is complete, place items in bowl in a pan with a little oil and saute until browned. Add soy sauce and cooking wine to pan and cook down for about 10-15 minutes. Chicken is done and then can be made into TAPAS (see recipe)

Chicken breasts with a quick and great sauce over rice.

Steps:
- In a large pot over medium-low heat, mix the pasta sauce, picante sauce, tomatoes, tomato paste, and Parmesan cheese. Season with oregano, thyme, parsley, cayenne pepper, salt, and black pepper.
- Place the chicken in a separate pot with enough water to cover. Bring to a boil, reduce heat to low, and simmer 25 minutes, until chicken juices run clear.
- Transfer chicken to the pot with the sauce mixture. Cover, and cook on low 1 hour.
- In a separate pot, bring the rice and water to a boil. Reduce heat to low, cover, and simmer for 20 minutes. Serve the chicken and sauce over the cooked rice.
