A nutrient-packed, healthy tuna salad recipe with a spicy Asian kick.

10 oz. canned albacore tuna
1/2 cup shredded carrots
2 scallions (chopped)
1/4 cup craisins (chopped)
1 tbsp cilantro (chopped)
2 tbsp light mayonnaise
1 tbsp soy sauce
1/2 tsp chili powder
1/2 tsp toasted sesame oil
1/4 tsp cayenne pepper
1/4 tsp minced ginger

Steps:

  • Drain the tuna and flake with a fork in a medium-sized mixing bowl. Add the carrots, onion, craisins and cilantro and mix together.
  • In a small bowl, combine the mayonnaise, soy sauce, chili powder, sesame oil, cayenne pepper, and minced ginger.
  • Stir the mayonnaise mixture into the tuna mixture until well combined.

3 (5 oz) cans wild-caught tuna in olive oil
3 Tbsp homemade mayo (or store-bought mayo)
2″ piece of fresh ginger, minced
1 medium carrot, grated
2 scallions, sliced into thin rings
1 Tbsp gluten-free tamari
1/4 tsp chili powder
Pinch ground cayenne, add more to taste
1 tsp sesame oil
1 Tbsp sesame seeds
1/4 cup dried cranberries

Steps:

  • Combine the first 5 ingredients in a large mixing bowl and stir to combine.
  • Next add the tamari, chili powder, cayenne, and sesame oil to taste. Sometimes I like it spicier, sometimes I like more salt, etc.
  • Finally, add the cranberries and sesame seeds and serve.
  • I like to eat it on a bed of lettuce or in individual romaine leaves like a tuna salad burrito. My favorite way to serve it is on top of lettuce, but you can also serve it with your favorite gluten-free bread.

8-10 small radishes, cut into wedges
1 large carrot, shredded
1 clove garlic, smashed and minced
1 teaspoon minced ginger
1/2 to 1 serrano chile, seeded and minced (taste for heat and adjust, can also sub some chili pepper flakes)
2 tablespoons vegetable oil
1 teaspoon dark sesame oil
3 tablespoons seasoned rice vinegar (or plain rice vinegar with a teaspoon of sugar)
Salt and black pepper to taste
2 tablespoons chopped cilantro
1 whole green onion, chopped
Optional: 8 ounces (dry) soba noodles* or fresh lettuce
*If mixing in with soba noodles, cook soba noodles according to package directions, and rinse with cold water.

Steps:

  • Place the drained tuna, radishes, shredded carrot, garlic, ginger, chile, vegetable oil, dark sesame oil, and rice vinegar in a large bowl. Gently toss to combine. Add salt and pepper to taste. Refrigerate until ready to serve.

1 tablespoon soy sauce
1/2 lime, juiced
1 teaspoon grated ginger
1 teaspoon Chinese mustard
1 tablespoon chopped cilantro
1/2 cup canola oil
1 1/2 pounds Ahi tuna loin, cut in 4 strips
Salt and pepper
2 tablespoons dark sesame oil
1/3 cup sesame seeds
1 bunch mizuna greens
1 bunch arugula greens
3 cups torn red leaf lettuce
3 cups torn green leaf lettuce
2 green onions, chopped
1/2 cup fried rice noodles
1/4 cup slivered almonds, toasted
1 navel orange, peeled and sectioned

Steps:

  • In a small bowl, whisk together the vinegar, soy sauce, lime, ginger, mustard and cilantro. Pour in the oil and continue to whisk until emulsified.
  • Season the tuna fillets with salt and pepper; lightly coat with oil. Put sesame seeds on a plate. Coat top and bottom of each fillet with seeds. Heat a large, dry skillet over high heat. Add fillets; cook about 3 minutes. Turn; cook until desired doneness, about 3 to 4 minutes for rare. Slice the tuna into 1-inch thick strips.
  • Mix the greens together and spread out on a platter. Add the green onions, rice noodles almonds, and orange segments. Lay the tuna strips on top then drizzle with the vinaigrette. Season with salt and pepper and serve immediately.

1/8 teaspoon paprika

Steps:

  • Prepare macaroni according to package directions; drain and rinse in cold water. Place in a large bowl; add the oranges, tuna, apple and celery. Do yourself a favor and try this fabulous variation on traditional tuna salad. It's good for everyday use on top of a salad with an asian vinagrette and can also be served with crackers at a dinner party. If you like a little crunch in your tuna salad feel free to substitute red onion for the green onion or add some chopped up celery. I created this recipe on a whim for use in my sushi rolls and have it posted under "Spicy Tuna Salad Sushi Roll" with a lot of detailed instructions on how to prepare the rolls.

2 (6 ounce) cans albacore tuna
1/3 cup mayonnaise
1 tablespoon chili paste (sriracha is the same thing)
2 teaspoons chili oil
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder (if using fresh ginger use 1/4 tsp)
1/2 teaspoon sesame oil
4 green onions, chopped

Steps:

  • Drain your tuna well and mix all of the tuna salad ingredients together. Everyone's different in how spicy they like their food, so you may want to taste it and add a little more spice to make it to your liking. Refrigerate until ready to use.

1 1/2 ounces bean sprouts
1 tuna steak, cut into 1/2 inch pieces

Steps:

  • Marinate the tuna steak with balsamic vinegar, salt and pepper.
  • Place the fish, in a large skillet coated with nonstick cooking spray. Cook on both sides over medium-high heat until the fish is seared on the outside but still pink in the center. Cut seared tuna on the bias into 1/2-inch-thick slices.
  • Dressing: mix the vinegar, chili sauce and oil.
  • In a bowl, place the salad mix, bean sprouts and serve the tuna fillets on top. Sprinkle with the peanuts.
  • Add the dressing and serve.
