This Italian-style side dish will delight lima bean lovers. Not only is it a colorful addition to the menu, the combination of flavors enhance the beans to a delightful taste. The lima beans have a bite yet are tender and perfect with the delicate flavor of the cherry tomatoes.

3 garlic cloves, minced
1 tablespoon olive oil
2 cups cherry tomatoes, halved
2 cups frozen lima beans, thawed
2 teaspoons balsamic vinegar
1/2 teaspoon brown sugar
2 teaspoons grated lemon zest
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 tablespoon minced fresh parsley, optional

Steps:

  • In a large skillet, cook garlic in oil for 1 minute. Add tomatoes and lima beans; cook for 3-5 minutes or until tomatoes soften and beans are tender. , Stir in the vinegar, brown sugar, lemon zest, oregano, salt and pepper flakes; cook 1 minute longer. Sprinkle with parsley if desired.

Steps:

  • Toast 3 sliced garlic cloves and a pinch of red pepper flakes in a large skillet with olive oil. Add salt, then stir in a 10-ounce box of thawed frozen lima beans; cook about 7 minutes. Remove from the heat; add halved cherry tomatoes, sliced basil and a splash of white wine vinegar. Drizzle with olive oil and top with shaved parmesan cheese.

from loyalty cookbook 1953 it calls for sugar in recipe i wouldn't use it but the option is there for you and i think you could use frozen beans and not need to cook them up but if you are cooking up a pot of beans this gives you a different meal to use .and i think this could be a frozen make ahead meal pretty easily

1 1/2 cups lima beans, dry
5 cups water
4 slices bacon, cut in 1 inch squares
1/3 cup celery, chopped
1/4 cup onion, chopped
1/4 cup bell pepper, chopped
1 garlic clove
2 tablespoons flour
1 1/2 cups tomatoes, canned
2 teaspoons salt
1 teaspoon pepper
2 tablespoons sugar (optional)

Steps:

  • put limas in cold water and boil until tender ,drain.
  • place in 1 1/2 quart casserole.
  • cook bacon in skillet.
  • add celery.
  • onions pepper and garlic.
  • cook until veggies tender add flour brown salt pepper and sugar if you wish cook until sauce is thick(may need a little water ) pour this sauce over beans( mix).
  • cover and bake 1 hour at 300 degrees.

1/2 pound Romano or green beans, cut into 1-inch lengths, blanched until tender and chilled
1/2 pound Yellow wax beans, prepared as above for green beans
1/2 pound fresh soybeans, blanched and chilled
2 pounds fresh fava beans, shelled and cooked until tender
1 can garbanzo beans, drained and rinsed
3 bunches green onion, cleaned and finely minced
1 large red onion, peeled and finely diced
4 stalks celery, finely diced
1 large yellow bell pepper, finely diced
1/4 cup finely chopped fresh tarragon
1 bottle dry white wine (Chardonnay, etc.)
Stems of 1 bunch tarragon (save leaves for the salad)
3 shallots, peeled and finely minced
2 lemons, zested and juiced, finely chop the zest and set the juice aside
2 tablespoons rice vinegar (unseasoned)
1 to 1/2 cups pure olive oil
Salt and pepper

Steps:

  • Combine the first 10 ingredients in a large mixing bowl. Set aside while you make the vinaigrette using the remaining ingredients.
  • Place the wine in a saucepan with the tarragon stems and reduce over medium-high heat to 1-cup liquid. Immediately pour the hot, reduced wine over the chopped shallots and lemon zest in a medium-sized bowl. Let sit together and cool to room temperature (or place in refrigerator to speed up process). Remove the tarragon stems and discard. Whisk in the lemon juice and rice vinegar. Continue whisking, drizzling in the olive oil, tasting as you go. Season with salt and pepper as needed, and add a bit more lemon juice or rice vinegar if more acidity is desired.

1 bay leaf
2 medium onions, chopped
2 tablespoons canola oil
1 can (14-1/2 ounces) diced tomatoes, undrained
1 teaspoon sugar
Dash pepper

Steps:

  • Sort beans and rinse with cold water. Place in a large saucepan; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1-4 hours or until beans are softened. , Drain and rinse beans, discarding liquid. Return beans to the pan; add bay leaf and water to cover by 2 in. Bring to a boil. Reduce heat; cover and simmer for 1-1/4 to 1-1/2 hours or until beans are tender. , Drain, discarding liquid and bay leaf. In a large skillet, saute onions in oil until tender. 1 cup sugar
6 sprigs tarragon, plus more for garnish
2 cups fresh-squeezed lemon juice, about 10-12 lemons
Ice
12 ounces gin, optional

Steps:

  • Combine the sugar with 1 cup water and 6 sprigs tarragon in a small saucepan. Bring to a boil, stirring until sugar is dissolved. Remove from heat and let cool to room temperature.
  • In a large pitcher, combine lemon juice, tarragon-sugar syrup, and 3 cups of cold water. Fill pitcher with ice until ready to serve.
  • To serve, fill glasses with ice. Pour a shot of gin over the ice, if using. Fill with lemonade and garnish with a tarragon sprig.

  • In a medium saucepan, heat 3 tablespoons of the olive oil. Add the onion and garlic and cook over moderately low heat until softened, about 8 minutes. Add the tomatoes, oregano and the reserved bean cooking liquid and simmer over low heat, stirring occasionally, until the sauce has reduced to 1 1/2 cups, about 1 hour. Season the tomato sauce with salt.
  • In a mini food processor, combine the olive oil with the oregano, parsley and garlic and pulse to a coarse puree. Season the oregano pesto with salt.
  • Preheat the oven to 425°. In a 9-by-13-inch baking dish, mix the limas with the tomato sauce and sprinkle the feta on top. Bake in the upper third of the oven for about 40 minutes, until the beans are bubbling and the cheese is browned. Remove the baking dish from the oven and let stand for 10 minutes.
