2 tablespoons small-diced pickles or cornichons
1 tablespoon Champagne or white wine vinegar
1 tablespoon capers

Pinch kosher salt
Pinch freshly ground black pepper

Steps:

  • Place all the ingredients in a food processor or mini chopper fitted with a steel blade and pulse several times until the pickles are finely chopped and all the ingredients are well mixed but not pureed.

3 large Egg, yolk, raw, fresh
½ cup extra-virgin olive oil
2 tablespoons Dijon mustard
2 tablespoons sour cream
1 teaspoon lemon juice, or to taste

  • Press hard-boiled egg yolks through a fine mesh sieve into a porcelain bowl. Add raw egg yolks and whisk until fluffy and creamy. Add oil, 1 tablespoon at a time, whisking constantly until consistency is like mayonnaise. Whisk in mustard, sour cream, and lemon juice.
