1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 boneless skinless chicken breast halves (6 ounces each)
3 tablespoons canola oil
1/2 cup chopped onion
1/2 cup sliced mushrooms
1/2 cup chopped green pepper
1/2 cup ketchup
1/4 cup water
1/4 cup sherry or chicken broth
Hot cooked rice

Steps:

  • Place the flour, salt and pepper in a large resealable plastic bag; add chicken and shake to coat. In a large skillet, brown chicken in oil over medium heat for 3-1/2 to 4 minutes on each side. Remove and keep warm. , In the same skillet, saute the onion, mushrooms and green pepper until crisp-tender. Stir in the ketchup, water and sherry or broth. Add chicken; cook, uncovered, over medium heat for 14-16 minutes or until juices run clear and sauce is thickened. Serve with rice.

2 tablespoons all-purpose flour
1/4 teaspoon dried thyme
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper (approx)
2 teaspoons vegetable oil
1 onion, chopped
2 cups chicken stock
1 potato, peeled and cubed
2 cups frozen mixed vegetables
1/4 cup chopped fresh parsley

Steps:

  • Cut chicken into 2 inch cubes. In shallow dish, combine flour, thyme, paprika, salt and pepper; dredge chicken in flour mixture.
  • In deep nonstick skillet, heat oil over medium high heat; cook chicken for about 5 minutes or until browned. Remove chicken and set aside.
  • Add onion to pan; cook, stirring often, for about 4 minutes or until softened. Stir in stock; cook, stirring, for 5 minutes or until slightly thickened.
  • Return chicken to pan. Add potato; cover and cook over medium heat for 6 minutes. Add frozen vegetables; cook, covered, for 4 to 5 minutes or until vegetables are tender and chicken is no longer pink inside. Stir in parsley; cook for 1 minutes. Season with salt and pepper to taste. Makes 2 servings.

With tongs, dip the food you want to dredge into the flour mixture in dish, turning to coat all sides. Or, add food, one or two pieces at a time, to bag and shake. 2 portions chicken legs with thigh
salt
fresh ground black pepper
2 tablespoons olive oil
2 garlic cloves, minced
2 tablespoons brandy
1/2 cup chicken broth
1 tablespoon prepared mustard
2 sprigs fresh thyme
2 sprigs fresh rosemary

Steps:

  • Place potatoes in small pan.
  • Cover with water; bring to a boil.
  • Cook 10 minutes or until partially cooked.
  • Drain.
  • Meanwhile, season chicken with salt and pepper to taste.
  • Heat oil in large skillet.
  • Add chicken and garlic; brown chicken 5 minutes per side.
  • Pour off fat.
  • Add brandy, and scrape up browned bits from bottom of skillet.
  • Add broth, mustard, thyme and rosemary; stir.
  • Add potatoes.
  • Cover skillet; simmer 15 minutes or until chicken is glazed and tender.
  • Season to taste with salt and pepper.
