1 tablespoon cornstarch
1 tablespoon cold water
½ cup white sugar
½ cup soy sauce
¼ cup cider vinegar
1 clove garlic, minced
½ teaspoon ground ginger
¼ teaspoon ground black pepper
12 skinless chicken thighs

Steps:

  • In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Place chicken pieces in a lightly greased 9x13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.
  • Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 30 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.

3/4 cup soy sauce
1/4 cup canola oil
3 tablespoons brown sugar
2 tablespoons sherry, optional
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
12 chicken drumsticks

Steps:

  • In a large resealable plastic bag, combine the soy sauce, oil, brown sugar, sherry if desired, ginger and garlic powder;add drumsticks. Seal bag and turn to coat; refrigerate 4 hours or overnight, turning occasionally., Drain and discard marinade. Place chicken in a single layer on a foil-lined baking sheet. Bake, uncovered, at 375° for 35-45 minutes or until a thermometer reads 180° and juices run clear.

2 tablespoons vegetable oil
2 cups dry bread crumbs
1 cup ranch-style salad dressing (such as Hidden Valley® Original Ranch®)
4 skinless, boneless chicken breast halves - lightly pounded to an even thickness

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease baking sheet with vegetable oil.
  • Put bread crumbs and ranch dressing into separate bowls.
  • Dip chicken into ranch dressing and press into bread crumbs to coat. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Arrange onto prepared baking sheet.
  • Bake in preheated oven until no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

6 boneless skinless chicken breasts
1 1/2 cups teriyaki sauce (or teriyaki marinade)
3/4 cup ranch salad dressing
1 1/2 cups shredded Monterey Jack cheese
6 slices bacon (cooked and crumbled)
3 green onions (diced)

Steps:

  • Heat oven to 350 degrees F.
  • Brush each chicken breast on both sides with the teriyaki sauce.
  • Arrange them in a 9 x 13 inch baking dish.
  • Carefully spoon ranch dressing over each chicken breast. (About 1/8 cup on top of each piece of chicken.)
  • Bake for 25 - 30 minutes or until chicken is no longer pink and juices run clear.
  • Sprinkle cheese on each chicken breast. Add crumbled bacon and green onions on top.
  • Stick back in the oven for about 5-7 minutes to melt the cheese and heat the bacon all the way through.

2 Tbsp. lite soy sauce
1 tsp. cornstarch
1 clove garlic, minced
4 small boneless skinless chicken breasts (1 lb.)
2 Tbsp. lightly salted dry roasted peanuts, chopped
1 green onion, sliced

Steps:

  • Heat oven to 375°F.
  • Bring first 6 ingredients just to boil in small saucepan; simmer on medium-low heat 2 min. or until slightly thickened, stirring frequently. Remove from heat.
  • Cover rimmed baking sheet with foil; spray with cooking spray. Place chicken on prepared baking sheet. Reserve 2 Tbsp. Worcestershire sauce mixture for later use; brush remaining Worcestershire sauce mixture onto chicken.
  • Bake 10 to 12 min. or until done (165°F). Transfer to platter.
