Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix the turkey, egg, onion, and bread crumbs. Adjust the amount of bread crumbs as needed to make a stiff mixture. Season with salt and pepper. Transfer the mixture to a 9x5 inch loaf pan, and sprinkle with poultry seasoning.
- Bake 1 1/2 hour in the preheated oven, or until meat is cooked through and the internal temperature is at least 170 degrees F (70 degrees C) when taken with a meat thermometer.

- Preheat oven to 375°. In a large bowl, combine all ingredients except turkey. Add turkey; mix lightly but thoroughly. Pat into a loaf in an 11x7-in. baking dish coated with cooking spray., Bake, uncovered, until a thermometer reads 165°, 50-60 minutes.

TERRIFIC TURKEY MEATLOAF
A juicy homestyle meatloaf made with lean ground turkey

Steps:
- You will need a large bowl to mix your ingredients in and a small loaf pan to cook it in. I use the disposable aluminum pans for easy portion control and a quick clean up afterwards.
- Strat by placing the ground turkey, onions and peppers in the bowl.
- I add my spices which include paprika, cayenne pepper, garlic powder, onion powder, a dash of salt and ground black pepper.
- Add the worcestershire sauce and one egg and work the spices through the meat mixture with your hands or a large spoon or fork. Add your grated parmesan cheese. This adds flavor and removes the excess moisture from your meat. The amount of parmesan you add depends on how moist or dry your meat mixture looks and feels. You should be able to form a patty or loaf without the mixture coming apart. If the the mixture is still too wet add more grated parmesan.
- Then add the meat to the loaf pan and pat down into a loaf. Place your loaf pan on a baking sheet and place in a 350 degree oven for approximately 35-45 minutes.
- You will able to tell the meatloaf is done by the color and you will see the clear juices bubbling around the edges of the meatloaf.
- During the last 5 minutes of cooking you can glaze the top of your meatloaf with the ketchup if desired.

- Preheat oven to 325 degrees F.
- In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
- Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.
TURKEY MEATLOAF
This is a recipe that helps explain the Twitter-era term "humblebrag." I made it for the celebrated writer and filmmaker Nora Ephron after a different recipe resulted in a disaster and I had to discard the result with only a few hours before my dinner with -- did I mention? -- Nora Ephron. It derives from a meatball dish once cooked by the chef Mark Ladner at the restaurant Lupa in Manhattan, and published as a recipe in Details magazine in the early years of the century. I scaled it up over the years, increasing some spices here and there, lessening others, until I had what I thought to be a pretty terrific meatloaf. But don't take my word for it. "This is remarkable," Ms. Ephron told me. I'm bragging about it still.

- Preheat the oven to 450 degrees. Combine 2/3 of the garlic, the rosemary, pepper flakes, bread crumbs, salt and pepper. Add the milk and mix. Add the turkey and sausage and mix once more to combine; don't overmix. Transfer onto a board and shape into a fine meatloaf, about 9 inches long and 4 inches wide.
- Place in a baking pan with high sides (a 9 x12 pan with 2-inch sides works well), drizzle with about 2 tablespoons of olive oil and bake for 25 minutes, turning halfway through to brown evenly. Remove from the oven and reduce the heat to 325 degrees.
- Meanwhile, in a medium saucepan over medium heat, fry the bacon in the remaining 2 tablespoons of oil until it starts to curl and its fat is rendered. Add the onions and remaining garlic, cooking until the onions are translucent, about 4 minutes. Add the tomatoes and wine and bring to a boil.
- Pour the sauce over the meatloaf, cover tightly with foil and bake until a meat thermometer inserted at the center reads 150 degrees, 20 to 30 minutes.
- Transfer the meatloaf to a platter and let stand, tented with foil, for 10 to 20 minutes; its internal temperature will rise to 160 to 165. Cut into thick slices, spoon tomato sauce over the top and scatter with torn mint leaves.

TERRIFIC TURKEY LOAF
This recipe is from the Jane Brody Good Food cookbook. This meatloaf is so moist and flavorful and healthy! My family loves it. Serve hot or cold in a sandwich. You can make this ahead and refrigerate it overnight. I mince the mushrooms up really fine so that my kids don't even know they're in there. I serve this with mashed potatoes and any kind of gravy. Be aware that you will need to bake the loaf in a pan of hot water.

- In a large skillet, heat the oil and saute the garlic, celery, leeks and red pepper, stirring until slightly softened (about 4 mintues).
- Meanwhile, boil a kettle of water, and preheat the oven to 375º.
- Stir the mushrooms into the sauted mixture, cover the pan for a few minutes until the mushrooms start to give up their liquid. Remove the cover and saute longer until all the liquid has evaporated. Remove from the heat and set aside.
- In a large bowl, combine the turkey, egg, salt, pepper, nutmeg, bread crumbs, and parsley. Add the sauteed vegetables and combine the ingredients well. Transfer the turkey mixture to a lightly greased loaf pan (4"x8") and set the pan in a large, shallow baking dish.
- Place the pans in the preheated oven, pour the boiling water into the OUTER pan to a depth of about 1" and bake the loaf for 1 hr and 15 minutes.
- When cooked, remove the loaf pan from the outer pan and from the oven. Let rest for 15 minutes and then serve.

- Put bread in a bowl with milk and, using hands, mix together. Add turkey. In a small pan, melt butter and add celery, onion and garlic, and saute until cooked but still crunchy. Cool briefly, then add to turkey. Add curry, coriander, nutmeg, egg, salt and pepper and mix well.
- Preheat oven to 400 degrees. Put the mixture into a 6-cup loaf pan, packing it tightly with a spoon. Top with bay leaf and cover loosely with foil. Put pan into a larger pan half filled with water, place in oven and cook 1 hour. Let loaf rest about 15 minutes before slicing.

- Heat oil in a skillet over medium high heat. Add onion and celery; saute about 3 minutes. Stir in thyme and sage. Cool slightly.
- Combine ground turkey, onion mixture, bread crumbs and next 6 ingredients in a bowl; mix well. Shape into a loaf; place in a greased baking pan.
- Bake, uncovered at 350 degrees for one hour. Drain drippings from pan; brush glaze over top of meat. Return to oven; bake about 10 to 15 minutes more until top is golden or until a meat thermometer inserted into thickest portion registers 160 degrees.
