- Preheat a grill to high heat.
- Place rib-eye steaks on a large platter and season with rub on all sides. Transfer seasoned steaks to the hot grill, and cook for 4 to 6 minutes on each side for medium-rare, longer if desired. Remove steaks and let rest for 5 to 10 minutes before serving.
- In a small bowl, combine all ingredients, to taste. Adjust the ratio of spices to your preference.

TEXAS-STYLE BEEF RIBS
From Taste of the South magazine. I really like the combination of spices and herbs in this beef rib rub. Cumin, mustard, and dark brown sugar, with smokey paprika for lots of Texas-style flavor. Cumin is included in the Mopping Sauce too.

- In a small bowl, combine salt, brown sugar, onion powder, paprika, mustard, thyme, basil, and cumin.
- Rinse ribs and pat dry. Remove thin membrane from back of ribs by piercing it with a sharp knife and pulling it off. Rub salt mixture evenly over ribs. Let stand at room temperature for 30 minutes.
- Preheat one side of grill to medium-low (250 - 300 degrees).
- Grill ribs, meaty side down, over indirect heat, with grill lid closed, for 2 hours, brushing ribs every 30 minutes with Mopping Sauce. Turn ribs over, and cook for 3-4 hours, brushing every 30 minutes with Mopping Sauce. Cook until meat is very tender. Serve immediately.
- Mopping Sauce:.
- In a small bowl, combine ketchup, vinegar, Worcestershire, onion powder, garlic powder, and cumin. Store in the refrigerator for up to 1 week.

- To make the rub: using a spice grinder or mortar and pestle, crush the peppercorns; place in a small bowl and thoroughly mix with the rest of the rub ingredients.
- To make the sauce: in a small saucepan, whisk together all the sauce ingredients with ¼ water; simmer over low heat for about 10 minutes, stirring occasionally, to allow the sugar to fully dissolve and all of the flavors to blend; set aside while you grill the steaks.
- Allow steaks to stand a room temperature for 20-30 minutes before grilling.
- Press the rub into both sides of the steaks; lightly brush or spray both sides of the steaks with the olive oil.
- Grill over direct high heat until the internal temperature reaches 145° for medium rare, 8-10 minutes, turning once halfway through grilling time.
- Remove from the grill and allow to rest for about 5 minutes.
- Serve warm with the sauce on the side.

- Obtain a medium-sized bowl, a pair of scissors, an empty spice jar with a shaker top and a plastic bag with a zip-seal top.
- Measure 3 tablespoons of garlic powder, 3 tablespoons of dry mustard and 3 tablespoons of onion powder. Pour each seasoning into the mixing bowl.
- Add 1 tablespoon of salt, black pepper and paprika to the bowl. Opt for fresh ground medium-sized pepper if possible.
- Add 2 teaspoons of Cayenne pepper and MSG to the bowl. Individuals who are sensitive to MSG can leave off this ingredient, but should substitute an additional 2 teaspoons of salt or salt alternative.
- Stir seasonings gently with a spoon.
- Pour all seasonings from the bowl into a zip-top plastic bag, then seal.
- Shake the bag vigorously until the seasonings are well blended. The final mix should feature an orange hue.
- Cut a diagonal hole on a bottom corner of the bag.
- Place the bag inside the seasoning jar and allow the seasoning rub to move from the plastic bag to the jar.
- Seal the jar and the seasoning mix is ready to place on ribs.

TEXAS PORK RIBS
This is a multiple prize-winning master recipe. It has several steps that can be used on pork spareribs, country-style ribs, or pretty much any other type of pork rib; simply adjust oven time up for meatier cuts. Use some soaked wood chips on the barbecue. The smokier the grill, the better the ribs will taste!

- Clean the ribs, and trim away any excess fat. In a medium bowl, stir together the sugar, 1/4 cup salt, ground black pepper, paprika, 1 teaspoon cayenne pepper, and garlic powder. Coat ribs liberally with spice mix. Place the ribs in two 10x15 inch roasting pans, piling two racks of ribs per pan. Cover, and refrigerate for at least 8 hours.
- Preheat oven to 275 degrees F (135 degrees C). Bake uncovered for 3 to 4 hours, or until the ribs are tender and nearly fall apart.
- Remove 5 tablespoons of drippings from the bottom of the roasting pans, and place in a skillet over medium heat. Cook onion in pan drippings until lightly browned and tender. Stir in ketchup, and heat for 3 to 4 more minutes, stirring constantly. Next, mix in water and brown sugar, and season to taste with cayenne pepper, salt, and pepper. Reduce heat to low, cover, and simmer for 1 hour, adding water as necessary to achieve desired thickness.
- Preheat grill for medium-low heat.
- When ready to grill, add soaked wood chips to the coals or to the smoker box of a gas grill. Lightly oil grill grate. Place ribs on the grill two racks at a time so they are not crowded. Cook for 20 minutes, turning occasionally. Baste ribs with sauce during the last 10 minutes of grilling, so the sauce does not burn.

- Light a grill and heat, covered, until hot. Brush the steaks with oil and season with salt and with pepper. Grill the steaks over high heat for 1 1/2 minutes on each side. Transfer the steaks to a carving board and let rest for 10 or up to 30 minutes.
- Return the steaks to the hot grill, cover and cook for 4 to 6 minutes, turning once; the steaks are done when an instant-read thermometer inserted in the center of the meat registers 130° for rare or 135° for medium-rare. Return the steaks to the carving board and let rest for 10 minutes. Thinly slice the steaks across the grain and serve.
