TEXAS TRASH SALSA
My husband and I lived on a small island in the Azores for two years. Fresh foods were hard to come by at times, so our group of friends all found many recipes using canned foods. This recipe is from a friend named Bobbie and I still make it today, even though I can now find a multitude of fresh ingredients. This is also good when used as a topping for hamburgers. If you want to make it spicier, you can add chopped jalapenos or hot sauce to taste. Cook time is chilling time.

Steps:
- Drain tomatoes well, reserving juice.
- Put peeled and quartered onion in a blender, then top with remaining ingredients.
- Pulse blender until ingredients are chopped as finely as you wish.
- By putting onion in the blender first, it will chop more finely than remaining ingredients.
- If salsa seems too thick, you can thin it by adding some of the reserved tomato juice.
- This can be eaten immediately, but tastes best if allowed to chill for 2 hours.
TEX-MEX SALSA
I created this recipe to taste like my favorite Mexican restaurant that I went to when I was a child - Casa Hernandez. Jalapeno, cilantro, onion, salt, and garlic can be adjusted to taste. Chili powder may give this a nice touch, also. It just depends on your taste. This is a no-cook recipe. I am unsure of the amount of servings this makes.

TANGY TEXAS SALSA
I'm a "transplant" from Wisconsin currently living in Texas. Even after 20 years, I can't get enough of our wonderful local citrus. This is one way to work it into a main dish. The combination of tangy fruit, spicy jalapeno and distinctive cilantro is perfect over any meat, poultry or fish. We also dip into it with chips. -Lois Kildahl, McAllen, Texas

- Drain the canned tomatoes in a colander placed over a large bowl, allowing the juice to collect in the bowl below. Set aside.
- Add the quartered onion, the smashed clove of garlic, the jalapeño, the cilantro (1/2 cup), the lime juice and zest, the kosher salt (1/2 teaspoon), and the sugar, if using (1/4 teaspoon) to a food processor. Press on for about 10 seconds, or until all the ingredients are very finely chopped.
- Pulse until 5-10 times, until your desired consistency (I like a few chunks, but not too many!). If it's thick, you can a little bit of the reserved tomato juice until the desired thickness (use any remainder for another purpose or discard).
