CHICKEN & BROCCOLI SLAW WITH SPEEDY THAI PEANUT SAUCE



Chicken & Broccoli Slaw with Speedy Thai Peanut Sauce image

This salad is one of my favorite ways to stretch a little extra chicken into a light yet complete (and really easy) meal. If you like your salads with a liberal coating of dressing or add multiple extras, double the sauce recipe and drizzle a little extra over top when serving. Yields 4 servings (and approximately 1/3 cup sauce).

Number Of Ingredients 9

1 tablespoon creamy peanut butter
1 tablespoon sesame oil
2 tablespoons soy sauce (use a gluten-free or low-sodium option, if necessary)
1 tablespoon packed brown sugar*
Optional: 1/2 teaspoon sriracha sauce
1 (10-ounce) bag broccoli slaw
2 cooked chicken breasts, chopped (I love using leftover chicken cooked with this 3-ingredient marinade )
1/4 cup roasted sunflower seeds or 1/3 cup peanuts
Optional extras: 1 small red bell pepper, chopped; 5-6 sliced radishes; 2 thinly sliced scallions; 1/4 cup chopped cilantro or parsley

Steps:

  • In a small bowl, thoroughly combine all of the peanut sauce ingredients.** (If the peanut butter is cold, warming it slightly in the microwave or allowing it to sit at room temperature for a few minutes will allow it to mix more easily with the other ingredients.) To a large bowl, add the broccoli slaw, chicken, and optional extras. Pour the sauce over top and toss to thoroughly coat. At this point, you may cover the salad and refrigerate until ready to eat. Sprinkle with the sunflower seeds or peanuts just before serving.

1 teaspoon extra-virgin olive oil
¼ cup packed light brown sugar
4 tablespoons low-sodium soy sauce
1 tablespoon grated fresh ginger
1 tablespoon onion powder
2 teaspoons sesame oil
1 pinch red pepper flakes, or to taste
18 ounces boneless skinless chicken breast, sliced
1 tablespoon minced garlic
½ teaspoon sea salt
¼ tablespoon chopped fresh ginger
2 teaspoons reduced-sodium soy sauce
1 ½ teaspoons extra-virgin olive oil
1 teaspoon rice vinegar
1 teaspoon cider vinegar
1 teaspoon honey
½ lime, zested
1 ⅛ cups broccoli coleslaw mix

1 green onion, chopped
⅛ cup sour cream
⅛ cup mayonnaise
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon chile-garlic sauce (such as Sriracha®)

4 each low-carb flour tortillas (such as Mission® Carb Balance®)

Steps:

  • Set a slow cooker to High and add 1 teaspoon olive oil. Whisk brown sugar, soy sauce, ginger, onion powder, sesame oil, and red pepper flakes together in a small mixing bowl.
  • Place chicken and garlic into the slow cooker, sprinkle with sea salt, and stir. Pour in soy sauce mixture and combine. Turn the slow cooker to Low and cook until chicken is no longer pink, about 4 hours.
  • Whisk ginger, soy sauce, 1 1/2 teaspoons oil, rice vinegar, cider vinegar, honey, and lime zest for slaw in a large mixing bowl. Add broccoli slaw mix, cilantro, and green onion. Toss to combine and chill in the refrigerator until serving.
  • Place sour cream, mayonnaise, garlic powder, onion powder, Sriracha, and lime juice into a small mixing bowl and whisk together.
  • Preheat the oven to 300 degrees F (150 degrees C). Wrap tortillas in foil.
  • Cook in the preheated oven until warm, 3 to 5 minutes.
  • Place taco filling evenly on tortillas, top with broccoli slaw, and drizzle with sauce.

1/2 cup white wine vinegar
1/2 cup honey
2 tablespoons minced fresh gingerroot

8 boneless skinless chicken thighs (about 2 pounds)
SLAW:
6 cups coleslaw mix
1 cup frozen shelled edamame, thawed
1 medium sweet pepper, chopped

4 green onions, sliced

Steps:

  • In a small bowl, whisk the first 7 ingredients until blended. Pour 1 cup marinade into a bowl or shallow dish. Add chicken and turn to coat. Cover and refrigerate overnight. Cover and refrigerate remaining marinade., Preheat oven to 350°. Drain chicken, discarding marinade from the bowl. Place chicken in a 13x9-in. baking dish coated with cooking spray. Bake, uncovered, until a thermometer reads 170°, 30-40 minutes., Meanwhile, place coleslaw mix, edamame and pepper in a large bowl. peanut oil
4 cloves garlic, minced
6 Thai red chili peppers, stemmed and sliced thin (amount to taste)
1 stalk fresh lemongrass, chopped
3 cups broccoli florets
1 tablespoon sambal oelek or 1 tablespoon other hot chili sauce
3 tablespoons fish sauce
1 tablespoon peanut butter
1/2 teaspoon galanga powder or 1/4 teaspoon ground ginger
1/2 fresh lime
1/3 cup chopped fresh basil

Steps:

  • Heat 1 tbsp oil in wok over medium-high heat; add garlic, lemongrass, and chiles, heating until they become fragrant, then add chicken to wok.
  • Stir-fry chicken 3-4 minutes, or until chicken is cooked through; remove from pan and set aside.
  • Add another 1/2 tbsp oil to wok if needed; allow to heat and add broccoli florets, stir-frying for about 3-4 minutes or until broccoli is crisp-tender.
  • Return chicken to pan with broccoli and stir well.
  • Stir together peanut butter with chile sauce, galanga powder, and the juice of the half of lime until smooth; add to pan along with the fish sauce and blend well.
