Ready in 30 minutes, this stir-fried prawn, egg and noodle dish is perfect for a midweek meal

200g dried egg noodles
2 tsp vegetable oil
25g ginger , finely chopped or grated
3 garlic cloves , finely chopped
2 red chillies , finely chopped
200g frozen peas
300g peeled raw king prawns
2 eggs , lightly beaten
2 tbsp reduced-salt soy sauce
2 limes , 1 juiced, 1 cut into wedges
6 spring onions , sliced
handful chopped coriander , to serve

Steps:

  • Cook the noodles following pack instructions, drain, run under cold water and set aside.
  • Heat the oil in a wok or large pan. Add the ginger, garlic and chilli, and cook for 2-3 mins. Add the peas and prawns, and cook for 3 mins until the prawns are pink and cooked through. Pour in the eggs, stirring all the time to scrape the cooked egg from the bottom of the pan.
  • Add the noodles and cook until hot. Stir through the soy, lime juice and spring onions, sprinkle with coriander and serve with the lime wedges.

If you're looking to add to your summer salad repertoire, look no further. This one is full of juicy prawns, sweet pops of fresh pineapple, bouncy noodles and spicy hits of chilli. Ideal for your next barbecue, I reckon!

Number Of Ingredients 9

150g (5.2 oz) dried rice vermicelli noodles
20 cooked prawns, peeled and deveined
2 cups finely shredded cabbage
200g (7 oz) fresh pineapple pieces, cut into bite-sized chunks
½ cup fresh mint leaves
½ cup fresh coriander (cilantro) leaves
1 long red chilli, sliced
1 bottle Marion's Kitchen Thai Basil, Lime and Coconut Dressing
2 tbsp crispy fried shallots

Steps:

  • Step 1.Place the noodles in a heatproof bowl. Pour over enough hot water to cover. Set aside for 10 minutes or until softened. Drain and rinse under cold water. Use scissors to chop into more manageable lengths. Transfer to a large bowl.
  • Step 2.Add the prawns, cabbage, pineapple, mint, coriander, chili and 2/3 cup of the dressing to the noodles. Use tongs to toss until well combined.
  • Step 3.Transfer salad to a platter and drizzle with the remaining dressing. Sprinkle with shallots and serve.

400g Stir-Fry Pad Thai Noodles
3-4tbsp Thai green curry paste
1tbsp vegetable oil
2 x 300g (10½ oz) packets stir-fry vegetables
250g (9oz) raw peeled prawns
5tbsp coconut cream
2tbsp chopped coriander

Steps:

  • Cook the noodles according to packet instructions, drain, refresh under cold water, drain again and set aside.
  • In a large wok or pan, heat the green curry paste in the oil. Add the vegetables and stir-fry for 2-3 mins. Add the prawns and cook for another 2-3 mins until they turn pink.
  • Add the coconut cream and simmer for 3-4 mins. Add the noodles, mix well and stir in the chopped coriander before serving.

1 cup onion, chopped
1 tablespoon garlic, minced
2 teaspoons fresh ginger, minced
2 tablespoons coriander
1 teaspoon cumin
1/4 teaspoon cinnamon
1/4 teaspoon Thai peppers or 1/4 teaspoon sriracha sauce
1/2 teaspoon turmeric
1 (14 ounce) can tomatoes, petit cut
2 1/2 cups unsweetened coconut milk (from 2 15oz cans)
1/2 cup water or 1/2 cup chicken broth
1 teaspoon salt
1 1/2 lbs large shrimp, peeled and cleaned
2 teaspoons lemon juice
1/2 lemon zest
1/2 cup fresh cilantro
8 lime wedges

Steps:

  • Heat oil in large skillet or Wok on med-hi heat.
  • Add onions and stir, cook for 3 minutes.
  • Add garlic and ginger, cook 2 minutes.
  • Add next 5 spices, cook 1 minute.
  • Add tomatoes, cook 1 minute.
  • Add coconut milk, water, and salt, and bring to a simmer until thickened 5-10 minutes.
  • Add shrimp, simmer, stirring for 3-5 minutes.
  • Stir in cilantro, lemon juice and zest.
  • Serve over rice noodles with lime wedges.
  • Rice Noodle Cooking Directions:.
  • Place all your rice noodles in a deep mixing bowl, trying to snap as few of them as possible as you remove them from the package (always a challenge for us). Bring a good amount of water to boil. Pour the boiling water over the rice noodles until they are completely submerged.
  • Every minute or two, give the noodles a stir to loosen them up. When they are completely limp, give them a taste to see if they're cooked through. The thread-like vermicelli noodles used in spring rolls will cook through in just a few minutes. The flat rice noodles might take upwards of ten minutes depending on thickness. Pay attention and test the noodles frequently because they'll become mushy if they overcook.
  • Once the noodles are tender, drain them and run them under cool water to stop the cooking. Toss them with a bit of sesame oil to keep the noodles from sticking to each other if you're not going to use them right away.
  • Since these noodles will be used in the above dish, you definitely want to under-cook them a bit. They will absorb more moisture and cook the rest of the way through once in the stir fry. If your noodles are perfectly cooked to start, they will turn to mush in the stir fry.
  • Note: This whole recipe can be cut in half including the rice noodles.

1 tablespoon extra-virgin olive oil
1 teaspoon sesame oil
1 pound extra-large shrimp, thawed, peeled and deveined
Salt and pepper
3 cloves garlic, minced
1 tablespoon minced fresh ginger
1 yellow bell pepper, diced
One 13.5-ounce can coconut milk
2 cups fish stock (or seafood or chicken stock)
7 ounces pad Thai noodles (about half a box)
1 teaspoon fish sauce
2 teaspoons sriracha sauce
1 cup cilantro leaves, plus more for garnish
2 scallions, diced
1 lime (or more!)

Steps:

  • Heat the oils in a large straight-sided pan over medium-high. Add the shrimp, season with salt and pepper and sear on both sides until you get a nice sear, about 5 minutes total. Remove from the pan and set aside.
  • Back in the pan, add more oil if needed and toss in the garlic, ginger and bell pepper. Saute for one minute, then add the coconut milk, stock, noodles, fish sauce, sriracha sauce, cilantro and scallions. Bring to a boil, reduce the heat and let simmer until the noodles cook through, about 5 minutes.
  • Take off the heat and add a few big squeezes of lime juice. Now taste that. UGH. Need anything? Add a little salt if you want. More lime juice? Yes.
  • Stir the shrimp back in and toss to combine. Serve with more cilantro on top!

1 cup minced fresh basil
3 tablespoons lime juice
4 teaspoons Thai red chili paste
1 garlic clove, minced
1 teaspoon minced fresh gingerroot
1-1/2 pounds uncooked shrimp (26-30 per pound), peeled and deveined
12 ounces uncooked angel hair pasta
4 teaspoons olive oil, divided
1 can (14-1/2 ounces) chicken broth
1 can (13.66 ounces) coconut milk
1 teaspoon salt
1 tablespoon cornstarch
2 tablespoons cold water
2 tablespoons grated lime zest

Steps:

  • Place the first five ingredients in a blender; cover and process until blended. Remove 1 tablespoon mixture; toss with shrimp., Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, heat 2 teaspoons oil over medium-high heat. Add half of the shrimp mixture; stir-fry 2-4 minutes or until shrimp turn pink. Remove from pan; keep warm. Repeat with remaining oil and shrimp mixture., Add broth, coconut milk, salt and remaining basil mixture to same pan. In a small bowl, mix cornstarch and water until smooth. Stir into broth mixture. Bring to a boil; cook and stir 1-2 minutes or until slightly thickened. Stir in lime zest., Drain pasta; add pasta and shrimp to sauce, tossing to coat.

2 tsp oil
1 garlic clove , crushed
1 spring onion , finely chopped
2 tsp finely chopped fresh root ginger
1 green chilli , deseeded and finely chopped
juice from ½ lime
100g raw prawns , any size
165ml can coconut milk
100ml chicken or vegetable stock
100g dried egg noodles
chopped coriander , to serve

Steps:

  • Heat the oil in a large pan or wok. When hot, throw in the garlic, spring onion, ginger and green chilli. Cook on a medium heat for 3-4 mins, then squeeze in your lime juice.
  • Stir in the prawns, then add in the coconut milk and stock. Simmer gently for 5 mins on a low heat until the prawns are pink.
  • Meanwhile, cook your egg noodles in a pan of boiling water for 4 mins until soft. Drain, then tip into the laksa pan. Season to taste, then serve in a bowl, topped with coriander.
