½ cup olive oil, divided
1 cup sliced green onions
1 cup shredded carrots
4 eggs, lightly beaten
¼ cup ginger paste
2 tablespoons minced garlic
½ teaspoon salt
4 cups day-old cooked white rice
¼ cup soy sauce
1 tablespoon oyster sauce
2 teaspoons Sriracha sauce
½ teaspoon sesame oil

Steps:

  • Heat 1/4 cup olive oil in large skillet over medium heat. Add green onions, shredded carrots, eggs, ginger paste, minced garlic, and salt. Stir gently until eggs are cooked through, 4 to 5 minutes. Transfer to a bowl.
  • Pour remaining 1/4 cup into the same skillet and add rice. Fry for 2 minutes. Add soy sauce, oyster sauce, Sriracha sauce, and sesame oil; stir to combine. Add egg mixture back into the skillet and stir gently to combine. Cook for 2 minutes more.

This easy Thai Fried Rice recipe is one of my favorite go-to meals on a busy weeknight. Use leftover rice and your favorite protein and veggie additions to make it like you like it.

4 cups cooked rice (recommend cold, leftover rice, and jasmine works best)
2 eggs (beaten)
2 green onions (chopped)
2 tsp. fish sauce
2 tsp. reduced sodium soy sauce
1/2 tsp. fresh minced ginger (or use 1/8 tsp. ground ginger)
1 clove garlic (minced)
1 Tbsp. sesame oil
4 Tbsp. fresh cilantro (chopped)

Steps:

  • Add your oil to a wok or large frying pan and heat over medium-high. When the oil is hot, add your garlic and fresh ginger (if using ground, wait to add it until you add the rice). Saute for 60 seconds.
  • Add your rice and stir it around to coat it in oil. You may feel like you want to add more oil, but don't. You need the rice to get some good color and texture on it, and too much oil will just make it...well, oily.
  • Fry the rice for 30 seconds and then stir it around to expose the un-fried side to the heat. Cook for another 30 seconds, and stir. Add your soy sauce and fish sauce and stir it in.
  • Move your rice mixture out of the center of the pan, making a little well for your eggs. Pour your beaten eggs into the center and let them cook for a few seconds undisturbed. Now, break up the eggs and stir into your rice, making sure to mix everything together well.
  • Add your green onions and cilantro and stir well. Taste a bite of it with a spoon to make sure everything is seasoned well and heated through. If it needs more flavor, add a bit more soy sauce, or even some red pepper flakes for some heat.
  • Serve garnished with a bit more cilantro for color. Enjoy!

A "fried-rice" impostor good enough to win over the critics. Pungent stir-fried ginger and garlic are added, along with a healthy does of stir fry vegetables. Add more eggs, chicken, or shrimp to increase the protein to make this a complete meal.

1 medium head of cauliflower
1 cup carrots
1 cup snap peas
1 cup baby corn
1 cup fresh or canned pineapple ((chunks))
2 eggs
1/4 cup fresh ginger root
1/4 cup fresh garlic
2-3 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon rice wine vinegar
Sriracha Chili Sauce ((to taste, optional))
cashews ((garnish, optional))
cilantro ((garnish, optional))

Steps:

  • Chop up the head of cauliflower into florets, then add to the food processor with the chopping blade. Process until cauliflower is broken up into rice-sized pieces. Only fill the food processor ½ full, and process in batches.
  • Prepare the vegetables and pineapple by chopping them into bite-sized pieces.
  • In a large frying pan, lightly scramble the eggs, cooking them about half way. Set them aside in a dish.
  • Mince or finely slice the garlic and ginger. Add ½ tablespoon of sesame oil to the frying pan, and saute over medium low heat for 5-10 minutes, until soft.
  • Turn the heat up to medium-high, and add the remaining ½ tablespoon of sesame oil, and the chopped stir-fry vegetables and pineapple to the pan. Continue to cook until vegetables are tender. Then, add the "riced" cauliflower, and mix well. Continue to stir and cook until cauliflower is soft. Stir in the eggs, and allow to fully cook into the mixture.
  • Add soy sauce, rice wine vinegar, and Sriracha. Adjust the soy sauce and Sriracha to taste.
  • Garnish with fresh chopped cilantro and toasted cashews-- optional, but highly recommended!

2 1/2 cups bell peppers, cut into short strips or 2 1/2 cups bean sprouts, blanched for 5 seconds, cooled and drained
1/4 cup vegetable oil
1/2 tablespoon fresh gingerroot, minced
2 tablespoons garlic cloves, minced
6 cups cooked rice (short grain)
2 eggs, lightly beaten
1 cup fresh tomato, chopped
2 tablespoons thai sriraja chili sauce (or other hot chili paste)
2 tablespoons light soy sauce
1/2 lime, juice of
1/2 lime, cut into thin wedges
scallion, cut on diagonal

Steps:

  • Choose and prepare vegetables. Select a combination with a variety of colors.
  • In a wok, heat the oil and stir fry the ginger and garlic until golden.
  • Remove them with a slotted spoon and save for later.
  • In the same oil, stir-fry the vegetables until just cooked. Add the harder ones (like carrots) first, and the tender ones (like sprouts) last.
  • Remove the vegetables from the wok and set aside.
  • Add the rice to the wok and heat thoroughly.
  • With your stirring spoon, make a hole in the center of the rice, down to the wok and put in the eggs.
  • Stir until they are pretty well set before you mix them into the rice. The more you cook the eggs before stirring them into the rice, the drier the dish will be.
  • Add the tomatoes, the reserved ginger and garlic and the stir-fried vegetables.
  • Finally, mix in the chili sauce, soy sauce and lime juice.
  • For serving, top each serving with thin slices of scallions. Put thin slices of lime on the side.

My husband says it's just like the restaurant...maybe even better? Please note that some people like to eat the ginger, while others don't but like the flavor it gives off. You can easily double this recipe to serve a larger group...plus it makes great leftovers.

1 ½ cups uncooked jasmine rice
3 ½ cups water
2 tablespoons vegetable oil
3 cloves garlic, minced
1 pound skinless, boneless chicken breast halves - cut into thin strips
1 tablespoon Asian fish sauce
1 tablespoon oyster sauce
1 tablespoon white sugar
½ cup fresh ginger, cut into matchsticks
1 large red bell pepper, cut into strips
¾ cup sliced fresh mushrooms
4 green onions cut into 2-inch pieces
½ teaspoon Thai red chile paste, or to taste
2 tablespoons chicken broth
salt and ground black pepper to taste
2 tablespoons fresh cilantro leaves

Steps:

  • Bring the rice and water to a boil in a saucepan. Reduce heat to medium-low; cover and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Meanwhile, heat a wok or large skillet over medium-high heat. Stir in the garlic and chicken; cook for 2 minutes. Add the fish sauce, oyster sauce, sugar, ginger, red pepper, mushrooms, and onions. Cook and stir until the chicken is no longer pink and the vegetables are nearly tender, about 3 minutes. Dissolve the chile paste in the chicken broth, then add to the chicken mixture. Season to taste with salt and pepper; sprinkle with cilantro leaves to garnish. Serve with the hot rice.

Steps:

  • Grate fresh ginger and garlic and place in a saucepan with 3 tablespoons of sunflower oil.
  • Let the mixture grill for a minute and add the raw rice.
  • Add the chicken stock mixed with water and let the rice cook.

This looked awfully good, simple, almost perfect! I made this last night and my BF and I were very pleased with the outcome. If possible, use leftover rice as fresh rice will be too moist. Leftover rice from Chinese takeout works well too. After making the dish the amount of garlic didn't seem excessive to me, but use your judgment. 2 tablespoons peanut oil
2 tablespoons garlic, minced
2 tablespoons ginger, minced

2 cups leeks, thinly sliced white and light green parts only, rinsed and dried (about 2 medium)
4 cups day-old cooked rice, preferably jasmine, at room temperature
4 large eggs (optional)
2 teaspoons sesame oil
4 teaspoons soy sauce

Steps:

  • In a large non-stick skillet, heat 1 tablespoon oil over medium heat. Add garlic and ginger and cook, stirring occasionally, until crisp and brown but not burnt. (This took me over 10 minutes.) With a slotted spoon, transfer to paper towels and salt lightly.
  • Reduce heat to medium-low and add remaining tablespoon oil and leeks. Cook about 10 minutes, stirring occasionally, until very tender but not browned. Season lightly with salt.
  • Raise heat to medium and add rice. Cook, stirring well, until heated through. Season to taste with salt.
  • Fry eggs in remaining oil, sunny-side up, until edges are set but yoke is still runny. (It's up to you how you prefer your eggs - I like mine thoroughly cooked).
  • Divide rice among four dishes and top each with an egg and drizzle with 1/2 teaspoon sesame oil and 1 teaspoon soy sauce. Evenly sprinkle leeks and crisped garlic and ginger over everything and serve.

1 fresh green chile, sliced, or chili paste or crushed red pepper flakes
3 tablespoons fish sauce
2 tablespoons peanut oil or other vegetable oil (not olive oil)
2 garlic cloves, minced (1 tablespoon)
1 tablespoon minced peeled fresh ginger
2 scallions (both white and green parts), minced (about 3 tablespoons)
3 ounces boneless pork, such as shoulder or loin, cut into 2 x 1/2-inch strips
1 cup shredded bok choy or other similar green vegetable
1 1/2 cups cooked jasmine or basmati rice
Sprigs of fresh cilantro, for garnish
1/2 cucumber, peeled and cubed
1 or 2 fresh lime wedges for garnish

Steps:

  • Combine the chile and 2 tablespoons of the fish sauce in a small dipping bowl. Set aside. Heat a well-seasoned wok or frying pan over high heat. Add the oil and almost immediately add the garlic, ginger, and 2 tablespoons of scallions. Stir constantly for about 40 seconds. Be careful not to burn the mixture. Add the pork and continue to stir for 3 minutes, or until the pork is no longer pink.
  • Stir in the bok choy and cook until it is just tender, a couple of minutes. Stir in the cooked rice. Add the remaining tablespoon of fish sauce and heat through, about 2 minutes.
  • Serve immediately, garnish with cilantro, cucumber, the remaining tablespoon of scallion, and the lime. Serve the dipping sauce on the side.
