GRILLED MACKEREL WITH SOY, LIME & GINGER



Grilled mackerel with soy, lime & ginger image

A nutritious and lean fish supper with fragrant Thai flavours, ready in minutes and packed with vitamins and minerals

300g mackerel
100g jasmine rice
4 spring onions , sliced
1 red pepper , deseeded and diced
1 tbsp low-sodium soy sauce
juice 1 lime
small piece fresh ginger , grated
1 garlic clove , crushed
2 tbsp honey

Steps:

  • To make the marinade, mix all the ingredients together and pour over the mackerel. Cover and chill for 30 mins.
  • Heat grill and put the mackerel, skin-side up, on a baking sheet lined with foil. Grill for 5 mins, then turn and baste with remaining marinade. Grill for 5 mins more.
  • Cook the rice following pack instructions, then drain and toss with the spring onions and pepper. Serve with the mackerel.

2 green onions, chopped
1 lemon grass, cut into 1 inch pieces
1 cup chopped fresh cilantro
1 cup chopped fresh mint leaves
1 cup lime juice
⅓ cup fish sauce
1 tablespoon sweet chili sauce
½ cup white sugar
1 ½ pounds (1 inch thick) steak fillet
1 head leaf lettuce - rinsed, dried and torn into bite-size pieces
½ English cucumber, diced
1 pint cherry tomatoes

Steps:

  • In a large bowl, stir together the green onions, lemon grass, cilantro, mint leaves, lime juice, fish sauce, chili sauce and sugar until well combined and the sugar is dissolved. Adjust the flavor, if desired, by adding more sugar and/or fish sauce. Set aside.
  • Cook the steak over high heat on a preheated grill for approximately 4-6 minutes on each side, until it is cooked medium. Do not overcook the meat! Remove from heat and slice into thin strips. Add the meat and its juices to the sauce and refrigerate, tightly covered, for at least 3 hours.
  • Tear the lettuce into bite size pieces and place in a salad bowl. Arrange the cucumber on top of the lettuce, and then pour the meat and sauce over. Top with the cherry tomatoes and garnish with fresh cilantro leaves.

5 shallots (slice)
1/2 cup bean sprouts
coriander leaves
2 stalks long beans (1/2 cm thick slice)
1 stalk lemongrass (chopped)
1 stalk spring onion (1 cm cut)
1 teaspoon chili powder (paprika for substitute)
4 tablespoons fish sauce
1 teaspoon sugar
3 teaspoons lime juice (lemon juice)
birds eye chile (chopped , personally i prefer it to be more spicy.) (optional)

Steps:

  • Steamed Spanish Mackerel till cook.
  • Remove flesh (break into bite size& ensure no bones).
  • Put into a bowl add the rest of the ingredients.
  • Toss until well mixed.

2 red chillies , deseeded and roughly chopped, plus extra sliced chillies to serve
4 shallots , roughly chopped
2 garlic cloves
1 thumb-sized piece ginger , peeled and chopped
1 lemongrass stalk
1 tbsp hot smoked paprika
2 limes , zested and juiced, plus wedges to serve
200g sweet potato , peeled and cut into 1cm cubes
1 tbsp rapeseed oil
2 red peppers , deseeded and sliced
3 lime leaves
4 raw mackerel fillets
4 spring onions , trimmed and sliced
small bunch coriander , chopped
320g broccoli , steamed, to serve

Steps:

  • Put the chillies, shallots, garlic cloves, ginger, lemongrass, paprika, lime zest and juice and 1 tbsp water into a small food processor and blitz to a smooth paste.
  • Heat oven to 200C/180C fan/gas 6. Put the sweet potato in a large roasting tin and toss with the oil. Add the curry paste, peppers and lime leaves and roast for 35-40 mins until the potato is tender. Heat the grill to high.
  • Slash the mackerel skin a few times with a sharp knife. Arrange the fish over the veg, skin-side up, then grill for 4-5 mins until the skin is blistered and the flesh is cooked through.
  • Scatter over the spring onions, coriander and extra chillies, then squeeze over the lime wedges. Serve with the steamed broccoli.

  • If using canned fish then drain any canning oil or brine - fish canned in tomato sauce will burm so avoid. Retain oil for frying. Skip the instructions for deboning as canned fish bones are soft enough to be eaten (and full of nutrients)
  • Add cooking or olive oil to a pan under high heat - you can use the canning oil to fry too just be sure the heat is not so high to smoke it.
  • Chop all of the 'sides' ingredients separately into small bite sized pieces. These will be made into little individual piles when serving so don't go mix them all up!
