Old Fashioned Potato Cakes image

These potato cakes are great with any meal or as a snack. Simple and quick to make with only a few ingredients. Kids of ALL ages love 'em.

2 cups mashed potatoes
1 cup all-purpose flour
1 onion, diced
1 egg
½ teaspoon ground black pepper
½ teaspoon salt
½ cup vegetable oil, or as needed

Steps:

  • Mix mashed potatoes, flour, onion, egg, black pepper, and salt together in a bowl until batter consistency.
  • Heat vegetable oil in a skillet over medium heat. Drop 4-inch circles of batter into hot oil. Cook until golden brown, about 5 minutes per side. Remove with a slotted spoon and drain on paper towels. Repeat with remaining batter.

1 pound boneless fish fillets, cubed
½ cup all-purpose flour
2 tablespoons oyster sauce
2 tablespoons sweet chili sauce
1 teaspoon fish sauce
1 teaspoon brown sugar
¼ cup chopped fresh cilantro
4 green onions, sliced
1 egg
all-purpose flour
oil for frying

Steps:

  • Combine fish, 1/2 cup flour, oyster sauce, sweet chili sauce, fish sauce, brown sugar, cilantro, green onions, and egg in a food processor. Process until well combined. Refrigerate for 30 minutes.
  • Shape mixture into patties, and dust with flour.
  • Pour enough oil into a heavy skillet to fill the pan with 1/2 inch of oil. Heat over medium-high heat until hot. Fry fish cakes for 8 minutes, turning once, or until golden brown.

This sweet-and-sour dish with tender vegetables are simply stir-fried with spices and coconut milk, and flavored with lime. Yum.

2 lbs waxy potatoes
2 tablespoons vegetable oil
1 yellow bell pepper, seeded and diced
1 red bell pepper, seeded and diced
1 carrot, cut into thin strips
1 zucchini, cut into thin strips
2 garlic cloves, minced
1 red chili pepper, sliced
1 bunch scallion, halved lengthwise
1/2 cup coconut milk
1 teaspoon chopped lemongrass
2 teaspoons lime juice
1 lime, zest of
1 tablespoon chopped fresh cilantro

Steps:

  • Using a sharp knife, cut the potatoes into small cubes.
  • Bring a large pan of water to a boil and cook the diced potatoes for 5 minutes; drain thoroughly.
  • Heat the vegetable oil in a wok or large skillet, swirling the oil around the bottom of the wok until it is really hot.
  • Add the potatoes, diced bell peppers, strips of carrot and zucchini, and the garlic and chile to the wok, and stir-fry for 2-3 minutes.
  • Stir in the scallions, coconut milk, chopped lemongrass, and the lime juice, and stir-fry the mixture for another 5 minutes.
  • Add the lime zest and cilantro and stir-fry for 1 minute.
  • Serve hot.
