Number Of Ingredients 6

2 cups raw cashews
2 Tablespoons canola oil
1 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon dried chili flakes
1/2 teaspoon kaffir lime leaves (sliced finely)

Steps:

  • Heat oil over medium heat. Add the raw cashews and cook in the oil until they turn golden brown.
  • Pour the cashews onto a cooking sheet so that they can cool in a single layer for a minute or two.
  • Sprinkle the Thai-inspired spice mixture on the cashews and stir until they are well coated. Enjoy!

A spicy collection of creamy, crunchy cashews mixed with chilies, green onions & optionally crispy fish to keep your guests occupied as pre-dinner drinks snack. A great appetizer with Thai meals too.

8 Oz Cashew Nuts (Unsalted)
1 Stem Spring Onion (Sub with Chives)
1 Stem Mint (For Garnish)
½ Tsp Table Salt
1 Red Spur Chili
4 Kaffir Lime Leaves
¾ Cup Tiny Fried Fish ((Optional))
2 Cups Cooking Oil

Steps:

  • Add cashew nuts into a cold pan. Place on the stove top, add medium to high heat frying oil such as sustainable palm oil and heat.
  • Stir the cashew nuts as the oil heats up to stop them burning.
  • When the cashews are sizzling and a golden brown colour drain them out onto a kitchen paper towel to let them cool down. Pat the top surface to reduce any surface oil.
  • Chop the spring (green) onion tops and spur chili into small pieces.
  • Wash surfaces of the kaffir lime leaves, tear the spine out. Roll the leaves up and finely julienne.
  • Add back to the pan the mostly cooled down cashews, chopped chili, kaffir lime leaf and green onion tops. Sprinkle over a half teaspoon of table salt and mix together.
  • Serve out on a nice plate and garnish with mint leaves.

1 pound raw cashews
2 tablespoons organic virgin coconut oil
2 teaspoons coconut palm sugar
1 teaspoon sea salt
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon kaffir lime leaves (finely chopped)

Steps:

  • Finely chop kaffir lime leaves and combine in a small bowl with coconut palm sugar, salt and crushed red pepper.
  • Heat a large skillet (large enough to cook the cashews in a single layer) over medium heat. Once hot, add coconut oil. Add in cashews and cook 6 to 7 minutes, frequently stirring, until golden brown.[img src="http://www.everydaymaven.com/wp-content/uploads/2013/02/IMG_8681.jpg" width="550" /]
  • Toss in spices, quickly stir to coat and immediately remove from heat.
  • Pour cashews onto a baking sheet to cool in a single layer.

400 g cashew nuts (roasted or raw but not salted)
10 lime leaves (finely chopped or blended )
15 g red curry paste
2 g salt
10 g egg white
30 g powdered sugar
5 g lime juice
5 g soy sauce
10 g fish sauce

Steps:

  • Turn the oven to 150°C or 302°F and roast the cashews for 10 minutes. This step is mainly to dry them out a bit as sometimes cashews are quite moist. Alternatively, you could also use pre-roasted cashews with no salt or anything added. Just make sure to keep an even closer look at them when roasting to make sure they don't burn.
  • Blend the lime leaves in a spice grinder or chop very finely with a super sharp knife.
  • Mix together all the ingredients in a bowl and spread out onto a baking tray lined with good quality parchment paper or a silicone baking mat.
  • Turn the oven up to 165°C or 338°F and bake for about 25 minutes or until deep golden brown while giving the nuts a mix every 5 minutes or so. This is to make sure they brown evenly.
  • When you are happy with the colour, remove and let them cool down completely before storing in an airtight container in a cool dry place.
