HEALTHY DUCK SOUP (PED TOON)



Healthy Duck Soup (Ped Toon) image

Inspired by Thai celebration favourite, ped toon, this healthy bowl of noodles in an aromatic broth is topped with slices of tender duck.

Steps:

  • Put all the broth ingredients into a medium-sized saucepan over a medium-high heat and add the duck breast. Cover with a lid and bring to the boil, then simmer over a medium heat for 20 minutes. Then remove the cooked duck and strain the broth through a fine sieve into a separate saucepan. Set the strained broth and the cooked duck aside. Half-fill a small saucepan with boiling water and place over a medium heat. Add the noodles and boil for 2-3 minutes, depending on the thickness of the noodle. To assemble the dish, divide the noodles between two large bowls and top with the bean sprouts or lettuce. Slice the duck and place in the bowls. Reheat the broth, bringing it back to the boil, then pour it all over the noodles. Finally, scatter over the toppings and get stuck in immediately.

9 oz skinless duck breast
4 oz rice noodles
handful of bean sprouts or shredded lettuce
2 scallions white and light green parts only
2 Tbsp fresh cilantro chopped
FOR THE BROTH
2 star anise
1/2 Tbsp ground cinnamon
1 inch piece of ginger grated or 1 tsp ginger paste
4 clove garlic minced or 1 tbsp garlic paste
2 Tbsp each dark soy sauce & light or thin soy sauce
1/2 Tbsp fish sauce
2 Tbsp honey
1/2 tsp birds eye chilis ground
3 c hot water or chicken stock

Steps:

  • 1. Put all the broth ingredients in a large pot. Bring to a boil. Add the duck breast and simmer for 20 minutes. Remove the duck and cut into pieces or shred it and set it aside. Strain the broth discarding any solids. set aside.
  • 2. Cook the noodles according to package directions.
  • 3. Place noodles in a bowl. Add broth, bean sprouts or lettuce, and scallions. Place the duck on top and add the cilantro. Serve immediately

Most of the ingredients for this Thai-inspired soup can be found in the supermarket. The red curry paste is spicy, but by controlling the amount of paste you add, you can tailor this to your own threshold of pain.

3 lemongrass stalks, bottom two-thirds of tender inner bulbs only, thinly sliced
4 cloves garlic, chopped
1 (4 inch) piece fresh ginger root, chopped
4 cups chicken broth
1 tablespoon vegetable oil
2 ½ pounds skinless, boneless chicken thighs, cut into chunks
12 ounces fresh white mushrooms, quartered
2 teaspoons red curry paste
3 tablespoons fish sauce
1 lime, juiced
2 (14 ounce) cans coconut milk
1 red onion, sliced
½ bunch cilantro, roughly chopped
1 lime, cut into wedges, for serving
1 fresh jalapeno pepper, sliced into rings

Steps:

  • Stir lemon grass, garlic, and ginger together in a large stock pot over medium-high heat. Stir in chicken broth and bring to a boil. Reduce heat to low and simmer for 30 minutes.
  • Strain chicken broth and set aside. Discard lemon grass, garlic, and ginger.
  • Heat vegetable oil in a large soup pot over medium heat; Stir in chicken; cook and stir for 5 minutes.
  • Stir in mushrooms and cook for 5 more minutes.
  • Stir in red curry paste, fish sauce, and lime juice until combined. Stir in chicken broth and coconut milk; return to a simmer and cook on low for 15 to 20 minutes.
  • Skim off any excess oil and fat that rises to the top and discard.
  • Stir red onion into the chicken mixture; cook and stir until onion softens, about 5 minutes.
  • Remove from heat and add about 1/2 the cilantro.
  • Serve with plates of cilantro, lime wedges, and fresh sliced jalapenos.

Once the noodles are done place them in a bowl and mix them with some fried garlic oil to prevent them sticking. Then add some beansprouts to the bowl, along with the sliced duck, then spoon in some of the soup so that the noodles are covered, and garnish with celery leaf, spring onion, and coriander, along with anything else you like!
