Pork & Holy Basil Stir-fry (Pad Kra Pao) image

This pad kra pao (pork & holy basil-stir-fry) features a key ingredient: holy basil! With jasmine rice, it's perfection. And it only takes minutes to make.

3 tablespoons vegetable oil
2 shallots ((thinly sliced))
7 cloves garlic ((sliced))
3 Thai bird or holland chilies ((de-seeded, if desired, and thinly sliced))
1 pound ground pork ((450g))
1 teaspoon sugar
1 tablespoon fish sauce
1 tablespoon thin/light soy sauce
2 teaspoons dark soy sauce
2 teaspoons oyster sauce
⅓ cup low sodium chicken broth or water
holy basil leaves ((about 1 1/2 cups packed))

Steps:

  • In a wok over medium high heat, add the oil, shallots and garlic, and fry for 3 minutes. Add the chilies and cook for another minute. Crank up the heat to high, and add the ground pork, breaking it up into small bits and allowing it to crisp up.
  • Add the sugar, fish sauce, soy sauce, dark soy sauce, and oyster sauce. Stir-fry for another minute and deglaze the pan with the broth or water. Because your pan is over high heat, the liquid should cook off very quickly. Add the basil, and stir-fry until wilted. Serve over rice.

  • In a wok, heat oil over high heat. Cook garlic until fragrant about 15 to 30 seconds, stirring constantly. Add shallots and cilantro roots (or stems) and cook about 1 minute. Add pork and cook about 4-5 minutes (depending on size of cubes), stirring frequently.
  • Add the rice, stirring and tossing until it separates and mixes with pork. Add the fish sauce and sugar and continue stirring. Push the rice mixture up the sides of the wok, creating an area in the middle. Add the beaten egg, let it set for a minute and then start to scramble the egg. Once it has set, stir the eggs into the rice mixture. Add the chiles to the work and continue to stir fry until it’s well mixed.
  • Serve garnished with cucumbers, scallions, clilantro leaves, peanuts, and any additional red chiles.

  • In a large sauté pan, heat 1 tablespoon of the oil over medium-high heat. Season the beaten eggs with a generous pinch of salt, add them to the pan and cook, stirring frequently, until scrambled. Transfer the eggs to a plate and set aside.
  • In the same pan (no need to wash it), heat the remaining tablespoon oil over medium-high heat. Add the light green scallions, garlic, and ginger and cook, stirring frequently, for about 1 minute. Add the pork and continue cooking, breaking the meat apart with a wooden spoon, until no longer pink, about 3 minutes. Add the cooked rice, peas, broccoli, fish sauce, oyster sauce, sugar, and red pepper flakes. Cook, stirring to evenly combine, until the rice and vegetables are hot. Stir in the dark scallion greens, cilantro and scrambled eggs. Taste and adjust seasoning, if necessary. Serve with Sriracha, if desired.
  • Note: Defrosted frozen broccoli florets will work in a pinch, but they tend to get a bit mushy so fresh-cooked (or leftover fresh-cooked) broccoli is preferable. You can also substitute any other leftover cooked vegetables you have in your fridge.
