THAI DIPPING SAUCE FOR SPRING ROLLS (NAM JIM PO PIAH)



Thai Dipping Sauce for Spring Rolls (Nam Jim Po Piah) image

I always have this sauce in my fridge - it is the classic dipping sauce for Thai spring rolls (po piah), but it tastes great with any fried appetizer. It will last for a few weeks in the fridge.

1 cup white sugar
½ cup water
½ cup white vinegar
2 teaspoons salt
1 bird's eye chile, minced
1 clove garlic, minced

Steps:

  • Combine sugar, water, vinegar, salt, garlic, and chile in a saucepan and bring to a boil. Reduce heat and simmer for 10 minutes.

My Thai Style Rice Paper Rolls are a light and easy version of restaurant-style Summer Rolls! They come together so quickly that you even have time to make my creamy peanut sauce and cilantro dipping sauce to serve alongside your homemade Thai finger food!

1 pack rice paper (( any size, the ones used above are 8.5 inches in diameter))
1 cup sliced purple cabbage (or more)
1 cup sliced carrots
1/2 cup sliced scallions
1/2-2/3 cup cilantro leaves
2 avocados (pitted and sliced)
1 cup chopped kale leaves
1/2 cup mint leaves
1/2 cup smooth peanut butter
2 tablespoons hot water
1 tbsp lime juice
1 tablespoon brown sugar
1 1/2 tablespoon cilantro leaves
1 tablespoon mint leaves
1 tablespoon soy sauce
1/2 chilli flakes ((more or less to taste))
3 tablespoons soy sauce
1/4 cup rice vinegar
2 tablespoons sweet chilli sauce
1 garlic clove (minced)
2 tablespoons minced cilantro
1 tablespoon sesame oil

Steps:

  • Prepare your fillings. In a large shallow plate, add some hot water (boiling is ok) to fill up halfway up the plate.
  • Place the rice paper rolls one at a time in the hot water plate and let it soak for a few seconds until it softens and becomes malleable-but not fragile and slimy.
  • Place the sheet of rice paper roll on your counter, flattening it to its original circular shape.
  • Along the center of the rice paper roll (length-wise) start arranging your fillings-add more or less, swap any ingredient you prefer.
  • Start rolling your rice paper from the edge near you and then tuck the corners and continue until it forms a firm roll.
  • Repeat with the rest. Chill the rice paper rolls until ready to serve. When serving, slice each roll in half and serve on their own or with dipping sauce.
  • To make the Peanut butter dipping sauce, mix all ingredients together in a bowl using a whisk. Add in more hot water if needed to thin out the sauce. For the soy dipping sauce: mix all ingredients in a bowl and serve. Enjoy :)

  • Dipping sauces: Mix your dipping sauce together first, let set so the flavors can mingle. It will taste much different after a few minutes. Taste for flavor before serving.
  • Fill a large bowl with warm water. Depending on the size of your sheets you can use a shallow pie dish or large bowl or pot.
  • Dip the rice paper in the warm water for just 2 – 3 seconds, it should be stiff, and will soften as you begin to work.
  • On a non-porous work surface, lay the rice paper sheet and layer the ingredients on the edge closest to you at the 1/3 mark. Start with the leafy greens, carrots, cucumber, tofu, red pepper and herbs (really any way you want to layer is fine).

  • Combine all the ingredients in a bowl for the peanut sauce. If the peanut butter is refrigerated you'll need to microwave it for 15 seconds or so to get it softened. Add water 1 Tbsp at a time and keep whisking until desired consistency is reached. Set aside.
  • Get a large microwavable bowl filled with water. Microwave for a minute to a minute 30 seconds. The water should be hotter than body temperature, but not boiling.
