CHICKEN PAD THAI

Like a facsimile of your favorite takeout chicken pad Thai -- or perhaps, since there's no transit time, even better.

5 ounces flat rice stick noodles (linguini size)
3 tablespoons fish sauce
2 tablespoons brown sugar
2 tablespoons tamarind paste or tamarind concentrate (see Cook's Note)
1 to 3 tablespoons sriracha (depending on desired heat level)
1 tablespoon lime juice
3 tablespoons vegetable oil
1/4 cup cubed extra-firm tofu (1-by-1/2-inch cubes)
6 ounces chicken breast, cut into 1/2-inch cubes
1 shallot, thinly sliced
1 large egg, lightly beaten
1/2 red bell pepper, cut into thin strips
1 cup mung bean sprouts
3 thin scallions, cut diagonally into 1-inch pieces (see Cook's Note)
1/4 cup roasted peanuts, chopped
1/4 cup fresh cilantro leaves
Lime wedges, for serving

Steps:

  • For the noodles: Cook the noodles according to the package instructions.
  • For the sauce: Stir together the fish sauce, brown sugar, tamarind, sriracha and lime juice in a small bowl until well combined.
  • For the stir fry: Heat the oil in a large nonstick skillet over medium heat. Add the tofu and cook, stirring occasionally, until lightly browned, 4 to 5 minutes. Push the tofu to the side, allowing the excess oil to drip down into the middle of the skillet. Add the chicken and shallots and cook, stirring occasionally, until the chicken is opaque and cooked through, 4 to 5 minutes. Push to the side with the tofu, allowing the excess oil to drip down into the middle of the skillet. Add the beaten egg to the skillet and cook, stirring occasionally and chopping to break up, until cooked through, about 30 seconds. Push the egg to the side with the tofu and chicken. Add the peppers to the skillet and cook just to soften slightly, about 2 minutes. Add the noodles, bean sprouts, scallions and sauce to the skillet. Combine the tofu, chicken and egg into the ingredients and stir fry, coating the ingredients with the sauce, and simmer to thicken, 3 to 5 minutes.
  • Pile the stir fry onto a serving plate and top with chopped peanuts and cilantro leaves. Serve immediately with lime wedges.

3 tablespoons thai fish sauce
3 tablespoons tamarind paste
3 tablespoons light brown sugar
½ lime, juiced
4 tablespoons vegetable oil
2 eggs, beaten
2 chicken breasts, finely sliced
½ lb raw prawn, shelled and patted dry
2 spring onions, finely sliced
1 chilli, finely sliced
⅔ cup fresh coriander, finely chopped
1 teaspoon garlic, crushed
3 ½ cups flat rice noodle, cooked
1 cup bean sprout
1 handful roasted peanut, roughly chopped
lime wedge, to serve

Steps:

  • Combine the tamarind, fish sauce, sugar, and lime juice with 1 tbsp water and set aside.
  • Cook the eggs in 1 tablespoon of oil and set aside.
  • Add 1 tablespoon of oil to the frying pan. Sear the chicken until golden and cooked through.
  • Add the prawns to the pan, and cook for about 2 minutes or until they just turn red.
  • Tip in half of the spring onions, chili, half the coriander, and garlic. Cook for 1 minute until fragrant, then set aside
  • Heat 1 tablespoon of oil in the wok, then add the noodles and bean sprouts. Stir-fry for 2 minutes until the noodles have separated and everything is heated through.
  • Add the chicken, prawns, eggs and tamarind sauce. Toss with the noodles until well-coated.
  • To serve, scatter over the roasted peanuts, remaining spring onions, coriander leaves, and lime wedges.

MARINADE CHICKEN
4 SKINLESS, BONELESS CHICKEN THIGHS OR BREASTS - CHOPPED
1 TABLESPOON BASIL
2 TABLESPOONS GARLIC, CHOPPED (JARS WOULD WORK)
1/2 CUP OLIVE OIL
SAUCE
2 CANS LOW SALT CHICKEN BROTH
1 CUP ORANGE JUICE
1/2 CUP SUGAR
6 TABLESPOONS UNSALTED BUTTER
4 TEASPOONS FRESH GINGER PEELED AND GRATED
2 TABLESPOONS TAMARIND PASTE OR CHUTNEY
2 ONIONS, SLICED
SALT AND PEPPER TO TASTE

Steps:

  • 1. PLACE CHICKEN IN BOWL AND MARINADE WITH OLIVE OIL, GARLIC, BASIL AND SALT AND PEPPER. PLACE IN REFRIGERATOR FOR 30 MINUTES. 2. IN A LARGE SAUCEPAN, WHISK CHICKEN BROTH, ORANGE JUICE, SUGAR, 6 TABLESPOONS BUTTER, TAMARIND PASTE OR CHUTNEY, SEASON WITH SALT AND PEPPER. BOIL MIXTURE UNTIL REDUCED TO 1 1/2 CUPS AND THICKENS TO A GLAZE. APPROXIMATELY 25 MINUTES ON MEDIUM HIGH HEAT. 3. MEANWHILE, IN A LARGE POT, COOK PASTA UNTIL AL DENTE IN BOILING WATER. DRAIN PASTA AND SET ASIDE. 4. IN THE SAME POT AS YOU COOKED THE PASTA, GRILL SLICED ONIONS IN OLIVE OIL UNTIL TENDER. SEASON WITH SALT AND PEPPER ON HIGH HEAT. APPROX. 5 MINUTES. 5. ADD CHICKEN MIXTURE INTO GRILLED ONIONS AND COOK ON HIGH HEAT. GRADUALLY BASTE CHICKEN WITH GLAZE DURING COOKING AND COVER. STIR AND ADD BASTE THROUGHOUT. COOK CHICKEN UNTIL IT IS NO LONGER PINK. 20 skinless, boneless chicken thighs
juice 3 limes
2 tsp coarsely ground black pepper
2 tsp turmeric
6 tbsp vegetable oil , for frying
3 tbsp tamarind pulp
400ml coconut milk
1 x 160ml can coconut cream
2 tbsp coriander , chopped
4-6 tbsp vegetable oil
3 tsp mustard seed
3 tbsp fresh or dried curry leaf
4 onions , finely diced
8 garlic cloves , crushed
75g ginger , finely shredded
1 tbsp paprika
3 x 400g cans chopped tomatoes
450ml chicken stock
2 tbsp golden muscovado sugar

Steps:

  • Put the chicken in a big mixing bowl, add the lime juice, pepper and turmeric, and mix well. (It's best to use gloves for this as the turmeric stains fingers.) Set aside for 1 hr.
  • Make the sauce. Heat the oil in a big pan, toss in the mustard seeds followed by the fresh curry leaves (if you are using dried leaves, add them later with the tomatoes) and fry until it releases a warm, nutty aroma - about 30 secs.
  • Add the onions, put on the lid, and cook over a low heat for 10-15 mins until meltingly soft, stirring now and then. Take the lid off, turn up the heat, add the garlic and ginger, and fry for 1 min until it gives off a toasty aroma. Stir in the paprika and continue cooking for another 30 secs.
  • Add the tomatoes, stock and sugar (and dried curry leaves if using). Cook, uncovered, for 15-20 mins until the sauce has thickened and reduced by one-third.
  • Heat oven to 180C/160C fan/gas 4. Meanwhile, fry the chicken. Heat 6 tbsp oil in a frying pan and cook in batches until golden. You may need a little extra oil. Keep warm.
  • Pour any excess oil from the frying pan and add a ladleful of water - swirl it around and scrape up any juices with a spoon before adding to the tomato sauce.
  • Put the chicken in a deep roasting tin or ovenproof casserole and pour over the sauce. Cover with foil and oven cook for 15 mins until the chicken is tender. Skim off any oil from the top of the sauce.
  • Take the chicken pieces out of the tin and transfer to a serving dish. Pour the sauce into a pan and bring to a simmer. Stir in the tamarind pulp, coconut milk and half the coconut cream. Adjust the flavour by adding more sugar or tamarind. Ladle the sauce over the chicken, drizzle with the remaining coconut cream, and scatter with coriander before serving.

1kg potatoes , peeled and cubed
2 tsp turmeric
500g broccoli
4 tsp tamarind paste
2 tbsp mango chutney
4 boneless, skinless chicken breasts
100ml natural yogurt
1 tbsp korma paste
5 spring onions , trimmed and thinly sliced

Steps:

  • Heat the grill. Put the potatoes in a pan of cold water, stir in the turmeric, then bring to the boil. Simmer for 12-15 mins until tender. Steam the broccoli in a metal colander or sieve over the potato pan for 4-5 mins until tender.
  • Mix together the tamarind paste and mango chutney. Make a few slashes in each chicken breast and place on a baking tray. Brush with the tamarind mixture, then grill for 5 mins on each side or until cooked through and sticky.
  • Drain the potatoes. Mash with the yogurt, korma paste and seasoning, then keep warm. To serve, stir most of the spring onions into the mash, then spoon onto plates. Scatter with the remaining spring onions and serve alongside the sticky chicken and broccoli.

Preparing tamarind paste is quite simple, and homemade paste has the added advantage of keeping for several months in the refrigerator, the result of its high acid content. Tamarind fruit comes in two forms: as blocks of fruit pulp or as whole fruit pods. If working with tamarind fruit pods, make sure they're unripe, which ensures a stronger degree of sourness and less sweetness. And don't forget to remove and discard the outer shell to use the pulp. Blocks of tamarind can be obtained from Indian and Asian grocery stores or online.

9 ounces tamarind fruit pulp (from a compressed block or from 15 to 20 shelled pods)
1 1/2 cups boiling water

Steps:

  • Separate the tamarind into small chunks and place the fruit into a medium heatproof bowl. (If using whole tamarind pods, remove and discard the outer shell and use the soft fruit inside.)
  • Pour the boiling water over the tamarind, submerge completely, cover with plastic wrap, and let sit for 30 to 45 minutes. Stir the tamarind occasionally with a fork at first, then, as the water cools, rub the fruit between your fingers to separate it from the seeds. The mixture will turn thick and pulpy.
  • Set a fine mesh sieve over a medium bowl and pass the mixture through to remove any fibrous materials and seeds, pressing firmly with a large spoon to squeeze out as much liquid as possible and scraping the tamarind from the bottom of the strainer into the bowl. The final consistency should be thick, almost like ketchup. Transfer the tamarind paste to a clean jar or container. Store in the refrigerator for up to 2 months.
