If I Could Turn Back Lemon Thyme Bruschetta image

2 cups mixed color grape tomatoes, thinly sliced crosswise
3/4 cup finely chopped orange bell pepper
2 tablespoons olive oil
1 tablespoon fresh lemon thyme leaves
1/2 clove garlic, finely grated
1/4 teaspoon seafood seasoning, such as Old Bay
Kosher salt and freshly ground black pepper
Sliced toasted baguette, for serving

Steps:

  • Gently toss the tomatoes with the bell pepper, olive oil, lemon thyme, garlic, seafood seasoning, 1/4 teaspoon salt and a few grinds of black pepper. Serve with toasted baguette slices.

This bruschetta will turn out every time you make it. Use small slices of bread for a unique appetizer, or serve with Italian dishes.

2 large tomatoes, coarsely chopped
½ sweet onion, chopped
2 tablespoons olive oil
1 tablespoon chopped fresh oregano
1 teaspoon chopped fresh basil
2 teaspoons chopped fresh parsley
½ (1 pound) loaf Italian bread, cut into 1 inch slices
¼ cup freshly grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium bowl, combine tomatoes, onion, olive oil, oregano, basil and parsley. Place bread on a baking sheet, and top with tomato mixture. Sprinkle with Parmesan.
  • Bake in preheated oven for 8 to 10 minutes, or until bottom of bread is browned. Allow to cool 5 minutes before serving.

This is a great garlicky bruschetta recipe. Serve it on slices of French bread. It's a wonderful accompaniment to tomato pastas.

2 tomatoes, cubed
1 teaspoon dried basil
4 tablespoons grated Parmesan cheese
2 tablespoons olive oil
1 clove garlic, crushed
seasoning salt to taste
ground black pepper to taste

Steps:

  • In a medium bowl, mix tomatoes, dried basil, Parmesan cheese, olive oil, garlic, seasoning salt and ground black pepper. Cover and chill in the refrigerator 8 hours, or overnight, before serving.

1 garlic clove, cut in half
1/2 loaf of leftover bread, toasted or 1/2 loaf grilled bread
3/4 cup cranberry sauce
1/2 tablespoon grated onion juice
3/4 cup crumbled blue cheese

Steps:

  • Preheat oven to 375°F.
  • Slice the bread.
  • Rub the cut garlic and place in a heated dry cast iron grill pan on the stove top.
  • Cook until heated, about 2 minutes.
  • Flip and toast the other side, about 1 minute more.
  • Slather the bread with leftover cranberry sauce, top with crumbled blue cheese.
  • Place in the oven until cheese melts & serve.
