My Romanian family all make some version of this dense apple walnut cake every autumn. I think it's common to Germans, Austrians, and Hungarians too. I'm so pleased that I could almost replicate the taste and texture without wheat! Coconut flour can be substituted for almond flour. Makes a 9x13-inch pan. When cool, you can dust with confectioners' sugar if desired.

¾ cup sorghum flour
¾ cup almond flour
¼ cup rice flour
¼ cup tapioca flour
1 tablespoon xanthan gum
1 teaspoon ground cinnamon
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 ¾ cups white sugar
1 cup vegetable oil
3 eggs
4 small Golden Delicious apples - peeled, cored, and chopped
½ cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan; lightly flour with gluten-free flour.
  • Whisk sorghum flour, almond flour, rice flour, tapioca flour, xanthan gum, cinnamon, baking soda, baking powder, and salt together in a bowl.
  • Whisk sugar, vegetable oil, and eggs together in a separate bowl; stir into flour mixture until incorporated and batter is thoroughly combined. Fold in apples and walnuts. Pour and press batter into the prepared pan.
  • Bake in the preheated oven until a knife inserted into the middle of the cake comes out clean, about 1 hour.

1/3 cup packed brown sugar
1 cup pecans, coarsely chopped
3 tablespoons canola or vegetable oil
1 cup granulated sugar
1 container (6 oz) Greek Fat Free honey vanilla yogurt
2/3 cup canola oil
1 teaspoon vanilla
2 eggs
1 1/2 cups Gold Medal™ all-purpose flour
1 1/2 cups Gold Medal™ whole wheat flour
3 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
2 cups finely chopped, peeled apples (2 medium)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In small bowl, mix streusel ingredients with fork until crumbly; set aside.
  • In large bowl, beat sugar, yogurt, oil, vanilla and eggs with electric mixer on low speed about 30 seconds or until blended. Add all remaining ingredients except apples; beat on low speed about 1 minute or until blended. Stir in apples. Spread batter in pan. Sprinkle evenly with topping.
  • Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Serve with ice cream or whipped cream, if desired.

This is one of my favorite recipes during autumn. The aroma of this dessert baking on a cool, crisp day is absolutely wonderful.

1 cup cold butter, cubed
2 cups all-purpose flour
1 cup sour cream
1/4 teaspoon salt
FILLING:
2 cups dry bread crumbs
1/4 cup butter, melted
4 medium tart apples, peeled and chopped
2 cups sugar
1 cup golden raisins
1/2 cup chopped pecans
2 teaspoons ground cinnamon
Confectioners' sugar, optional

Steps:

  • In a large bowl, cut butter into flour until mixture resembles coarse crumbs. Stir in sour cream and salt. Shape the dough into a ball; cover and refrigerate overnight. , For filling, combine bread crumbs and butter. Add apples, sugar, raisins, pecans and cinnamon; set aside. , Preheat oven to 350°. Divide dough into thirds; turn onto a floured surface. Roll each into a 15x12-in. rectangle. Spoon filling evenly onto dough; spread to within 1 in. of edges. Roll up from a long side; pinch seams and ends to seal. , Carefully place each loaf seam side down on an ungreased baking sheet. Bake 55-60 minutes or until lightly browned. Cool completely on wire racks. Dust with confectioners' sugar if desired.

1/2 cup rice flour (white)
1/2 cup brown rice flour
1/3 cup tapioca starch
3/4 teaspoon guar gum (xanthan gum may be substituted ~ corn derived)
1 teaspoon baking soda
1 1/2 teaspoons gluten free baking powder
1 teaspoon cinnamon
2 teaspoons vanilla
1/2 cup canola oil
3/4 cup dark brown sugar
2 egg replacer eggs
4 tablespoons orange juice
1 1/2 cups chopped apples (about 2 apples)

Steps:

  • Preheat oven to 325°F.
  • Prepare a small deep pan by greasing and dusting with white rice flour.
  • Mix all strudel ingredients in a small bowl and set aside.
  • In a medium bowl, sieve together all the dry ingredients. (except strudel and apples).
  • Add the wet ingredients and mix with a wooden spoon.
  • Add the chopped apples and stir to combine.
  • Scoop half the batter into the prepared pan.
  • then layer half the strudel mixture on top of the batter.
  • Add remaining batter and then remaining topping.
  • Place in the oven and bake approximately 1 hour, or until a toothpick inserted in the center comes out clean.
  • Cool at least 10 minutes before serving. I like it better cooled down to room temperature even more.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a fluted tube pan (such as Bundt®).
  • Beat yogurt, white sugar, 1 cup brown sugar, eggs, and vanilla extract together in a bowl using an electric mixer until smooth.
  • Combine flour, flax seed, cinnamon, salt, cloves, and nutmeg together in a separate bowl. Stir yogurt mixture into flour mixture just until batter is combined; fold in apples. Pour batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 70 to 75 minutes. Turn cake onto a serving plate.
  • Melt butter, 1/2 cup brown sugar, and milk together in a saucepan over medium heat until sugar is dissolved, 2 to 3 minutes. Remove saucepan from heat and cool until sauce is thickened, about 10 minutes. Pour sauce over cake.
