TURKEY FRITTATA



Turkey Frittata image

Number Of Ingredients 10

1 tablespoon olive oil
1/2 onion, chopped
1/2 red or green bell pepper, chopped
1 cup boiled potatoes, chopped
1/2 cup leftover cooked chopped turkey
6 eggs, lightly beaten
1/4 cup cream
Salt and pepper
2 tablespoons chopped parsley, basil or cilantro
1/2 cup grated cheddar, Monterey jack or mozzarella

Steps:

  • Preheat the broiler.
  • Heat oil in a large non-stick skillet over medium high heat. Add onion and bell pepper and cook for 3 minutes. Stir in potatoes and cook until golden brown. Add cooked leftover meat and toss to coat.
  • In a mixing bowl beat together the eggs and cream and season with salt and pepper. Pour egg mixture into skillet and stir in chopped herbs. Top with grated cheese and brown under broiler for about 2 to 3 minutes until the frittata puffs

1 cup leftover prepared stuffing
1 cup leftover cooked green beans, cut into 1-inch pieces
6 eggs, beaten
1/2 cup KRAFT Shredded Mild Cheddar Cheese

Steps:

  • Heat oven to 350°F.
  • Cook turkey, stuffing and beans in a small ovenproof skillet on medium-high heat 2 to 4 min. or until heated through, stirring frequently.
  • Stir in eggs; top with cheese. Cover.
  • Bake 20 to 25 min. or until knife inserted in center comes out clean.

Leftover Stuffing Frittata image

I got this recipe online from another source when looking for a way to use up an abundance of Christmas stuffing. Since the stuffing I make has sausage in it, I tweaked the original recipe somewhat, removing the additional turkey it called for and using sharp cheddar cheese. This was really tasty for dinner and I'm sure it will be great for breakfast as well. The eggs were really light and fluffy.

2 -3 cups leftover prepared stuffing
1 cup shredded cheddar cheese
8 large eggs
3/4 cup milk
1/4 teaspoon ground nutmeg
2 tablespoons grated parmesan cheese
1 pinch red pepper flakes
salt and pepper, to taste
2 tablespoons chopped fresh parsley leaves

Steps:

  • Preheat oven to 400. Coat an ovenproof skillet with cooking spray. Pat leftover stuffing into a crust on the bottom of the skillet and place over medium heat on stovetop to warm through. Sprinkle cheddar cheese over top of stuffing.
  • In a medium bowl, whisk together eggs, milk, parsley, red pepper flakes, and nutmeg. Add salt and pepper to taste, keeping in mind how much seasoning was used in your stuffing.
  • Pour egg mixture over stuffing and cheese, covering evenly. Sprinkle Parmesan over top.
  • Carefully transfer to preheated oven and bake until the eggs are set, the cheese is golden, and the sides have puffed up slightly, about 15-20 minutes.
  • Cool slightly before cutting.
  • If desired, sprinkle with additional fresh parsley.

A great breakfast or brunch idea using leftover turkey, or something different for dinner. We like to serve this with rashers of good bacon and hash browns.

2 tablespoons olive oil
½ cup diced green bell pepper
½ cup diced scallions
½ cup sliced fresh mushrooms
2 cloves garlic, minced
½ teaspoon salt, divided
1 cup cubed leftover cooked turkey
6 large eggs
¼ teaspoon freshly ground black pepper
1 dash Worcestershire sauce
1 pinch cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat oil in a 10-inch cast iron skillet over medium heat; stir in bell pepper, scallions, mushrooms, and garlic. Saute until scallions are translucent, about 5 minutes. Add a pinch of the salt to extract moisture. Stir in turkey and cook until heated through, 5 to 10 minutes.
  • Whisk eggs, remaining salt, pepper, Worcestershire sauce, and cayenne in a small bowl; pour over turkey mixture. Cook until eggs start to set, about 5 minutes.
  • Place the skillet on the middle rack of the preheated oven and bake until eggs are set to desired level, 10 to 15 minutes.
